1 tablespoon canola oil
3 tablespoons chopped onion
3 tablespoons chopped green pepper
1 can (15 ounces) black beans, rinsed and drained
4 flour tortillas (8 inches), warmed
1 cup shredded Mexican cheese blend
1 medium tomato, chopped
1 cup shredded lettuce
Optional toppings: Salsa, sour cream, minced fresh cilantro and cubed avocado

Steps:

  • In a nonstick skillet, heat oil over medium heat; saute onion and green pepper until tender. Stir in beans; heat through. , Spoon about 1/2 cup of vegetable mixture off center on each tortilla. Sprinkle with the cheese, tomato and lettuce. Fold sides and ends over filling and roll up. Serve with optional toppings as desired.

Quick and Easy Vegetarian Black Bean Burritos image

1 can black beans (rinsed and drained, 16 oz.)
2 cups frozen corn
1 cup basmati rice
1/2 cup red onion (finely chopped)
1/2 cup Black olives (chopped)
1 small can diced green chili peppers
1/2 cup Roasted Garlic Rice Vinegar
1 tablespoons olive oil
2 cloves garlic (minced with a garlic press)
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon hot pepper sauce
1/4 cup chopped cilantro
8 burrito-sized whole wheat tortillas
salsa
ranch dressing (or sour cream or Greek yogurt)
guacamole
2 cups Cheddar cheese (shredded cheddar or Mexican blend)
2 cups Feta cheese (optional (you have to try this in your burritos at least once; it's an amazing addition))

Steps:

  • Mash the black beans slightly with a fork.
  • Add them to a microwave-safe bowl along with the corn, rice, onions, peppers, and black olives.
  • In a separate bowl, combine rice vinegar, oil, chiles, garlic, chili powder, cumin, and hot pepper sauce; whisk together until well blended.
  • Add to bean mixture; stir to coat and microwave for 3-5 minutes or until hot throughout.
  • Add cilantro to the hot bean mixture; toss gently.
  • Place a tablespoon or so of salsa in the middle of a tortilla and top with ranch dressing or sour cream. Use a spoon to spread them out a bit.
  • To make burritos you can pick up and eat, spoon about 1/3 cup of bean mixture into the center of a tortilla. To make burritos that you eat with a fork, spoon about 1/2 cup of bean mixture into the tortilla.
  • Sprinkle generously with shredded cheese and feta, roll up, and serve.

2 (10 inch) flour tortillas
2 tablespoons vegetable oil
1 small onion, chopped
½ red bell pepper, chopped
1 teaspoon minced garlic
1 (15 ounce) can black beans, rinsed and drained
1 teaspoon minced jalapeno peppers
3 ounces cream cheese
½ teaspoon salt
2 tablespoons chopped fresh cilantro

Steps:

  • Wrap tortillas in foil and place in oven heated to 350 degrees F (175 degrees C). Bake for 15 minutes or until heated through.
  • Heat oil in a 10-inch skillet over medium heat. Place onion, bell pepper, garlic and jalapenos in skillet, cook for 2 minutes stirring occasionally. Pour beans into skillet, cook 3 minutes stirring.
  • Cut cream cheese into cubes and add to skillet with salt. Cook for 2 minutes stirring occasionally. Stir cilantro into mixture.

1 can (15 ounces) black beans, rinsed and drained

½ sweet yellow onion, chopped

1 (16 ounce) can refried beans
1 1/2 cups Mexican blend cheese, shredded
6 (6 inch) flour tortillas (fajita size, about 6-inch)

Steps:

  • Preheat oven to 350 degrees.
  • Heat a tablespoon or so of Olive Oil in skillet and add garlic and onion. Saute for a minute or two.
  • Add ground beef and cook until browned; Drain.

1 teaspoon ground cumin, divided
1/2 teaspoon cayenne pepper, divided
8 ounces sliced button mushrooms
1/2 medium red onion, thinly sliced
1 (16-ounce) can black beans, rinsed, drained
5 ounces baby spinach
1 lime, halved
4 (12") flour tortillas
1/3 cup sour cream
3/4 cup grated Monterey Jack cheese (about 2 1/2 ounces)
1 avocado, diced

Steps:

  • Cook rice according to package directions. Fluff with a fork and stir in 1/3 cup salsa and 2 Tbsp. cilantro.
  • Meanwhile, heat 1 Tbsp. oil over medium-high in a large nonstick skillet. Add sweet potato and cook, stirring occasionally, until softened, 3 minutes. Stir in 1/2 tsp. salt, 1/2 tsp. cumin, and 1/4 tsp. cayenne, then transfer to a large bowl.

1 onion, chopped fine
4 cloves garlic, minced
2 (14 ounce) cans black beans or 2 (14 ounce) cans pinto beans, rinsed and drained (or mix if you like)
1 cup tomato sauce
2 teaspoons ground cumin
1 dash chili powder (optional)
1 (4 ounce) can chopped green chilies
12 7-inch flour tortillas or 12 8-inch flour tortillas, warmed
1 1/2 cups grated reduced-fat cheddar cheese or 1 1/2 cups reduced-fat monterey jack cheese
low-fat sour cream (to garnish)
green onion, choppped (to garnish)
salsa (to garnish)

Steps:

  • To make the filling:.
  • In a large heavy skillet cook the onion and the garlic in the oil over moderately low heat, stirring, until the onion is softened, add the beans, and mash about half of them coarse with a potato masher.
  • Add the tomato sauce, the cumin, the chilies, chili powder, and salt and black pepper to taste, simmer the mixture, stirring, for 5-7 minutes, or until it is slightly thickened.
  • Working with 1 warmed tortilla at a time (keep the others covered while working with each) spread about 3 tablespoons of the filling down the center of each tortilla.
  • Working from the sides fold in the ends and then roll the tortillas enclosing the filling.
  • Arrange the burritos, seam sides down, in one layer in a baking dish, sprinkle them with the Monterey Jack, and bake them, covered with foil, in the middle of a preheated 350°F oven for 10-12 minutes.
  • Sprinkle with green onions and serve with sour cream and salsa.
