QUICK POACHED SALMON WITH DILL MUSTARD SAUCE

Quick Poached Salmon with Dill Mustard Sauce image

This is an easy, elegant, wonderful salmon dish with a no-cook sauce. It really doesn't get much easier. I love it best on swelteringly hot summer days. Fresh steamed asparagus goes very well with this, and the sauce tastes good on it as well.

Categories     Seafood     Fish     Salmon

Time 30m

Yield 4

Number Of Ingredients 9

½ cup plain yogurt
¼ cup Dijon mustard
1 tablespoon honey
¼ cup fresh lemon juice
3 tablespoons chopped fresh dill
1 pound salmon
1 cup white wine
½ cup water
¼ cup chopped shallots

Steps:

  • In a small bowl, blend the plain yogurt, Dijon mustard, honey, lemon juice, and dill. Cover, and refrigerate until serving.
  • In a medium saucepan over medium heat, place the salmon in the white wine and water. Adjust the amount of water as necessary to just cover the fish. Sprinkle with shallots. EASY POACHED SALMON RECIPE

easy poached salmon recipe image

A moist, flaky poached salmon recipe that's on the table in 20 minutes or less? Yes please! With fresh dill and Italian parsley-it's healthy and delicious!

Provided by Cheryl Najafi

Time 20m

Number Of Ingredients 9

2 lbs salmon
4 cups water
1 Tbsp kosher salt
1/2 cup dry white wine (or dry vermouth)
1/2 yellow onion (sliced)
4 tsp fresh dill (fronds, or ½ tsp dried)
4 tsp fresh parsley (Italian, sprigs, or 1/2 tsp dried)
1 bay leaf
cracked black pepper (to taste)

Steps:

  • Ensure all bones are removed from the salmon. The salmon can be poached with the skin on or with the skin removed, but keep in mind-the salmon will hold together much better if the skin remains intact.
  • In a large sauté pan, bring water, salt, wine, onion, dill and parsley to a boil then reduce heat to medium low and simmer for 15 minutes.
  • Once the liquid has simmered for 15 minutes, reduce heat to low setting and wait for all of the bubbles to subside. At this point, you can remove the onions and herbs with a slotted spoon if desired.
  • Gently lay the salmon, skin side down, in the pan. Keep the poaching liquid just below a simmer and poach the fish for 8-10 minutes.
  • Test for desired doneness. Remove the fish from liquid with a slotted spatula then blot the bottom lightly with a paper towel. Serve the fish hot, warm or cold in a salad. Enjoy!

POACHED SALMON RECIPE - A SIMPLE, HEALTHY WAY TO COOK SALMON
To poach salmon, we only add around 1 cup of water to a pot, bring it to a boil, and add the salmon fillets in. Unlike with boiling, we don’t submerge the fillets, as we want to avoid the risk of taking out all the natural moisture of the fish. It’s also more convenient than steaming, as it doesn’t require a steaming basket.
