Mediterranean pizza is the ultimate fresh family dinner, ready in 30 minutes and everyone loves it. This is a delicious homemade pizza recipe with tasty Mediterranean toppings that will knock your socks off!

- Preheat the oven to 450°F. IF you're using a pizza stone, place it in the oven.
- On a baking sheet or a pizza peel, roll out the pizza dough to 12 inches.
- Spread olive oil on the dough and sprinkle salt, thyme, black pepper and dried basil on the pizza dough.
- Top the pizza dough with artichoke hearts, sun-dried tomatoes, olives, red onion and fresh mozzarella.
- Transfer the pizza onto the pizza stone (if using) and bake in the oven for about 12 to 15 minutes until cheese is melted and bubbly and the dough is crispy on the edges.
- Top with fresh tomatoes and chopped parsley.
- Serve immediately.

- Heat oven to 400°F. Spray 12-inch pizza pan with cooking spray. In medium bowl, stir Crust ingredients until soft dough forms. Press dough in bottom of pizza pan, forming a crust at edge of pan. With fork, prick to prevent crust from puffing.
- Bake 12 to 16 minutes or until crust is golden. Cool 10 minutes. Meanwhile, in medium bowl, beat Greek Vinaigrette Dressing ingredients with whisk until well blended. Set aside.
- In medium bowl, mix cream cheese and sun-dried tomatoes. Spread mixture on pizza crust. Top with tomato, cucumber, onion, olives and spinach. In small bowl, mix together 1/4 cup of the dressing and the feta cheese; spoon over pizza. (Cover and refrigerate remaining dressing for another use.)

EASY MEDITERRANEAN PIZZA
This is a great recipe for a different kind of pizza. It's heavy on the flavors, but you don't feel stuffed after eating it. The recipe was actually born of an experiment performed by myself and a friend on a Sunday night. Be creative, though... last time I made it, I spread pine nuts over the surface and it was terrific!

- Drain artichokes, reserving marinade. Chop artichokes; set aside. On a floured surface, roll bread dough into a 15-in. circle. Transfer to a greased 14-in. pizza pan; build up edges slightly. - Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Place flatbreads on a broiling pan.
- Broil in the preheated oven for 3 to 5 minutes. Turn the oven to 425 degrees F (220 degrees C).
- Top pre-baked flatbreads with a thin layer of hummus; make sure it's a thin layer or else pizzas will be soggy. Evenly sprinkle feta cheese on top. Place bell peppers and onion on the flatbreads, evenly spaced. Top with Colby-Jack cheese. Sprinkle with garlic salt, pepper, and dill.

Love to entertain and recently was given Martha Stewart's Hor D'Oeuvres Handbook. Most people eat first with their eyes and Martha's fantabulous dishes offer a visual feast. This original recipe was modeled on her approach to food both in look and flavor. You can simplify the making of these Greek inspired treats by simply quartering the pita bread or using the small ones. Either way, its a treat.

- Pre-heat oven to 350 degrees. Wash and halve grape tomatoes and mix in shallow baking dish with coarse salt and olive oil. Bake 35 minutes until roasted. You can do this the day before if you like.
- Using a 2 inch round cookie cutter, cut mini pizza crusts out of the pita bread. You should get about 4 mini pizzas per pita. Place pitas on cookie sheet. Top with tomato halves, olives and a leaf or two of oregano. Crumble feta cheese on top. Bake in oven for 8-10 minutes until cheese is melted. The pitas will be crisp. Serve from the oven or at room temperature.
- Variation:.
- If you like garlic, wrap a whole unpeeled head of garlic in aluminum foil and roast with the tomatoes. When done the garlic will be very tender and easily squeeze out of the skin. Mash the roasted garlic and mix with a tablespoon of yogurt cheese or cream cheese. Spread a very thin layer on the bread before assembling pizza.
