Steps:
- Bring a pot of lightly salted water to a boil. Cook ramen in boiling water, stirring occasionally, until noodles have cooked through but are still firm to the bite, 2 to 3 minutes. Drain.
- Heat olive oil in a large skillet over high heat. Place tofu on one side of the skillet and pepper and onion on the other side of the skillet. Cook and stir tofu until browned on all sides, 1 to 3 minutes. At the same time, cook and stir onion and pepper until caramelized, 1 to 3 minutes.
- Stir ramen noodles into skillet; stir to combine noodles, tofu, onion, and pepper. Pour plum sauce and sweet and sour sauce over ramen mixture; cook and stir until well-combined and heated through, 2 to 5 minutes.

- In a large pot of boiling water, cook ramen noodles until tender, about 3-4 minutes; rinse with cold water and drain well.
- In a medium bowl, whisk together beef stock, oyster sauce, rice wine vinegar and Sriracha.
- Heat sesame oil in a large skillet over medium heat. Add ground beef and onion, and cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat.
- Stir in garlic and ginger until fragrant, about 1 minute.
- Stir in beef stock mixture, scraping any browned bits from the bottom of the skillet.
- Stir in ramen noodles until heated through and evenly coated in sauce, about 1-2 minutes.
- Serve immediately, garnished with green onions and sesame seeds, if desired.

- Bring water to a boil in a saucepan. Add salt and black pepper. Add ramen, discarding the flavor packet. Cook for 2 minutes. Add 1/4 teaspoon soy sauce. Cook 3 minutes more and drain ramen.

- Fry the cabbage in a wok with about 1 tbsp hot sunflower oil for a few seconds. Add the bacon and fry for 30 seconds. Tip in the pinenuts, garlic cloves and ginger. Stir fry until lightly browned.

QUICK CHICKEN STIR-FRY

- While assembling the other ingredients, soak the noodles in hot water to soften, 10 to 15 minutes. Drain and set aside.
- To make the sauce, in a bowl, whisk together the chicken broth with the cornstarch. Add the soy, hoisin, sugar, and sherry, if using, whisk, and set aside.
- Heat a wok over high heat. Add the oil and when hot and nearly smoking, add the green onions, garlic, ginger, and red pepper flakes and cook, stirring, for 10 to 15 seconds. Add the chicken and stir-fry until turning opaque and nearly cooked through, 3 to 4 minutes. Add the vegetables and stir-fry for 1 minute. Add the sauce, stir and toss, cooking until the chicken is all the way cooked through and the sauce is thick, about 2 minutes. Remove the chicken and vegetables from the pan. Add the noodles, toss, and cook to warm through, 30 seconds to 1 minute.
