UNHEALTHY QUINOA MAC AND CHEESE



Unhealthy Quinoa Mac and Cheese image

Take the health benefits of quinoa and override them with a ton of cheese. You won't regret it!

5 slices bread, crusts removed and cubed
1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, diced
2 cups quinoa
2 cups chicken stock
2 cups water
¼ cup butter
¼ cup flour
2 cups skim milk
salt and ground black pepper to taste
8 ounces sharp Cheddar cheese, shredded
4 ounces mozzarella cheese, shredded
1 tablespoon butter
1 large tomato, cored and sliced

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Process cubed bread in a food processor to make bread crumbs. Set aside.
  • Heat olive oil in a deep ovenproof skillet or Dutch oven. Add onion; cook and stir until softened, about 5 minutes. Add garlic; cook and stir until fragrant, about 1 minute.
  • Add quinoa, chicken stock, and water to the skillet. Bring to a simmer; cover and cook until quinoa is tender, about 10 minutes.
  • Heat 1/4 cup butter in a saucepan over medium-low heat. Add flour; cook and stir to form a paste, about 2 minutes. Slowly whisk in skim milk. Season with salt and ground black pepper; simmer on low until thickened, about 5 minutes. Remove saucepan from heat; stir in Cheddar and mozzarella cheeses, a little at a time, until combined. Stir cheese sauce into quinoa mixture in the skillet.
  • Melt 1 tablespoon butter in a separate skillet over medium heat. Add bread crumbs; cook and stir until crumbs are toasted, about 2 minutes. Place tomato slices on top of quinoa; top with bread crumbs. Quinoa mixture will be soupy but will firm up during baking.
  • Bake in the oven until golden brown, about 25 minutes. Allow to rest for 5 minutes before serving.

1 1/2 c quinoa--rinsed and drained
good pinch of salt
few grinds of seasoning salt
2 clove minced garlic
2 large eggs
1 c milk
1 1/2 - 2 c shredded cheddar cheese
optional- crushed red pepper, panko bread crumbs for topping
toppings (optional)- salsa, hot sauce, sour cream, scallions

Steps:

  • 1. combine 1-cup water to each ½ cup of quinoa in a pan. Bring to a full boil for 5 minutes, and then set aside, covered for 15 minutes.
  • 2. Preheat oven to 350 F. Coat 13x9 inch dish with cooking spray.
  • 3. Whisk together eggs and milk in large bowl. Fold in quinoa mixture and cheese. Stir very well and let some of the cheese melt.
  • 4. Transfer to prepared baking dish and if using Panko Crumbs or Bread crumbs add now and bake 30-35 mins, until bread crumbs are browned.

2 teaspoons olive oil
1 tablespoon minced onion
1 clove garlic, minced
1 cup quinoa, rinsed and drained
2 large eggs
1 cup non-fat milk
1 cup Borden® Sharp Cheddar Shredded Cheese

Steps:

  • Preheat oven to and spray an 8-inch-square baking dish with non-stick cooking spray.
  • Heat oil in a medium skillet over medium heat until hot. Add onion and garlic and sauté for 1 minute or until onion is tender. Add quinoa and cook, stirring, until golden brown and toasted, 2 to 3 minutes. Add 2 1/2 cups water, bring to a boil, reduce heat to medium-low and simmer, covered, until water has been absorbed, about 10 minutes. Remove from heat.
  • Whisk eggs and milk together in a large bowl. Stir quinoa into egg mixture, and whisk in 1/2 cup of the cheese. Spread in the prepared baking dish and sprinkle with remaining 1/2 cup cheese. Bake for 30 minutes. Garnish with chopped tomato and green onion, if desired. Serve immediately.

  • Cook quinoa as directed on package, adding garlic to the cooking water along with the quinoa.

If you haven't tried quinoa yet, this recipe is the perfect place to start, because this gluten-free grain pairs well with any cheese, so try substituting shredded Gruyère or mozzarella for some or all of the cheddar.

1 tablespoon olive oil
1/2 cup finely chopped red or white onion
1/2 cup finely chopped tomato (1 medium)
1 1/2 cups uncooked quinoa
2 cloves garlic, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
3 cups water
2 eggs
1 cup milk
1 1/2 cups shredded Cheddar cheese (6 oz)
Additional shredded Cheddar cheese
Sour cream, if desired
Chopped green onions, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 3-quart saucepan, heat oil over medium heat. Add onion and tomato; cover and cook 5 minutes or until onion is translucent and tender.
  • Stir in quinoa and garlic. Cook 3 to 4 minutes or until grains begin to become translucent and brown slightly (they will still be undercooked).
  • Stir in salt, pepper and paprika. Add water; cover and cook 15 to 20 minutes longer, stirring occasionally, until most of liquid is absorbed. Remove from heat; let stand 5 minutes.
  • In medium bowl, beat eggs and milk with whisk until well blended. Stir into quinoa mixture. Add 1 1/2 cups cheese; stir to combine. Pour mixture into baking dish.
  • Bake 30 to 35 minutes or until edges begin to brown. To serve, spoon into individual serving bowls; top with additional cheese, sour cream and green onions.
