Cheesy Chile Relleno Casserole is an old family recipe that will win you over. It's made with eggs, making it perfect for the breakfast table, but this protein-packed meal is a welcomed addition to any meal of the day! If you like Mexican-inspired meals, this is one you have to try. Passed down from Abuela herself, this easy casserole is something to look forward to when you sit down at the table. Layers of cheese, poblano peppers, and corn tortillas make this dish unique. Covered in an egg mixture, baked, and topped with Rotel tomatoes and green chiles and more cheese, this is one casserole we can't turn down!

3 poblano peppers, roasted, peeled and seeded
1 pound Cheddar cheese, shredded
1 pound Colby Jack cheese, shredded
6 small corn tortillas
4 eggs
1 small can evaporated milk
1 teaspoon cumin
salt and pepper to taste
1 can Rotel tomatoes with green chiles, well drained

Steps:

  • Preheat oven to 325 degrees F. Grease an 8x11-inch baking dish. Set aside.
  • In a mixing bowl, whisk together eggs, evaporated milk, cumin, salt and pepper. Set aside.
  • In a baking dish, layer two corn tortillas to cover the bottom. Top with slices of poblano peppers and about 1 cup of each cheese. Repeat with two more layers. Top with any remaining pepper slices and two corn tortillas and cheeses.
  • Slowly pour egg mixture over the top of everything.
  • Bake in the oven for 45 minutes. Remove from the oven and top with drained tomatoes and any remaining cheese. Return to the oven and bake an additional 30 minutes. The top should bubble and the bottom should be golden brown.
  • Remove from the oven and allow to cool for 10-15 minutes before serving.

It doesn't get any easier or tastier than this Cheesy Chile Relleno Casserole recipe! Whole canned green chiles are layered with 3 kinds of cheese, then topped with an egg and milk mixture, just like a breakfast casserole. Is it breakfast? Is it dinner? YES!

nonstick spray
20 ounces whole green chiles
1 cup shredded cheddar cheese (divided)
1 cup shredded Monterey jack cheese (divided)
1 cup shredded Pepper Jack Cheese (divided)
8 large eggs
1 cup evaporated milk*
2/3 cup flour
1 teaspoon baking powder
1/2 teaspoon kosher salt
1/2 teaspoon seasoning salt (such as Lawry's)
3/4 teaspoon black pepper

Steps:

  • Preheat your oven to 350 degrees F. Spray a 9x13 inch pan with nonstick spray.
  • Open up the cans of whole chiles and drain completely. If they are not already open, slit one side of each chili with a knife and remove all the seeds from the center.
  • Layer the chiles in the pan, covering the bottom. Use half the chiles, about 10 ounces.
  • Top the chiles with 1/2 cup each of shredded cheddar cheese, Monterey Jack Cheese, and Pepper Jack cheese.
  • Repeat. Layer the remaining chiles on top of the cheese, top with 1/2 cup each of the cheeses.
  • Meanwhile in a large bowl or stand mixer, whisk together 8 eggs, 1 cup evaporated milk*, 2/3 cup flour, 1 teaspoon baking powder, 1/2 teaspoon kosher salt, 1/2 teaspoon seasoning salt, and 3/4 teaspoon black pepper.
  • Pour the egg mixture evenly over the cheese and chiles.**
  • Bake at 350 for about 35-45 minutes. You will know it's done when the top is puffy, the edges are golden, and the center doesn't wobble more than the edges when you shake the pan.
  • Let set for about 5 minutes and then serve!

1/2 cup Mexican crema or sour cream
1 to 2 teaspoons green chile hot sauce
Zest and juice of 1 lime
Kosher salt
12 ounces Mexican-style raw chorizo, removed from casing
1 small yellow onion, diced
4 large poblano chiles, stems intact
One 10-ounce ball Oaxaca cheese, hand shredded or pulled into 2-inch pieces
1 cup canola oil
4 large eggs, separated
1 tablespoon plus 1/2 cup all-purpose flour
One 7-ounce box yellow rice mix, optional, cooked according to package instructions

Steps:

  • Position an oven rack directly underneath the broiler and preheat the broiler.
  • In a small mixing bowl, combine the Mexican crema, hot sauce, lime zest and juice and salt to taste; stir to combine. Set aside to let the flavors meld together.
  • Heat a large nonstick skillet over medium-high heat. Cook the chorizo and onions, stirring occasionally, until cooked through and slightly browned, about 5 minutes. Remove from the skillet with a slotted spoon to a paper towel-lined plate. Set aside until ready to stuff the roasted poblanos.
  • Place the poblanos on a baking sheet and broil, turning once, until the skin is blistered and blackened, 4 to 5 minutes per side. Put the charred poblanos in a medium heatproof bowl, then cover with plastic wrap and let steam for 10 minutes. Peel and rub away the skins of the poblanos, then gently dry using a paper towel. Cut a 2-inch lengthwise slit in the center of each poblano and carefully cut out the seeds with kitchen shears, leaving the stems intact.
  • Stuff each poblano with the chorizo and cheese, dividing evenly. Gently close the opening using 2 to 3 toothpicks to keep the filling from falling out.
  • In a large skillet over medium-high heat, heat the oil until a deep-fry thermometer reaches 375 degrees F. Position a wire rack on a baking sheet.
  • Meanwhile, add the egg whites to a large mixing bowl. Using an electric mixer, beat until medium peaks form. With the mixer on low, add the egg yolks and 1 tablespoon flour and mix until completely incorporated. The batter should be smooth and fluffy.
  • Sprinkle the poblanos with salt, then dredge in the remaining 1/2 cup flour, tapping to shake off any excess; dip into the batter until fully coated. Gently add the poblano to the hot oil and fry in batches to not overcrowd the skillet. Cook until golden brown and crispy, 3 to 4 minutes per side. Transfer to the wire rack to drain. Serve warm on a platter and drizzle with the spicy lime crema and a side of yellow rice, if using.

⅓ cup all-purpose flour
1 teaspoon salt
1 pound Oaxaca cheese, shredded
27 ounces canned Hatch chile peppers, sliced open
2 tablespoons vegetable oil
1 medium white onion, diced
2 cloves garlic
3 tablespoons New Mexico chile powder
1 teaspoon salt
½ teaspoon cumin
1 red bell pepper, sliced
1 tablespoon all-purpose flour
1 (14.5 ounce) can chicken broth

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13-inch baking dish with cooking spray.
  • Place egg whites in a bowl and beat until stiff. Gently fold in evaporated milk, flour, and salt. Cover bottom of baking dish with 1/2 the egg white mixture. Place chiles flat over egg whites. Sprinkle Oaxaca cheese over chiles. Top with remaining chiles and egg white mixture.
  • Bake in the preheated oven until eggs are set, about 30 minutes.
  • While casserole bakes, heat oil in a medium saucepan over medium-high heat. Saute onion and garlic for 2 minutes. Add chile powder, salt, and cumin. Cook and stir for another minute. Add bell peppers and cook until soft, 3 to 5 minutes. Add flour and stir for 2 minutes. Slowly add broth, stirring to avoid lumps. Bring to a boil; reduce heat to low and simmer until casserole is ready.
  • Serve the sauce with slices of the chile relleno casserole.

2 cups shredded Monterey Jack cheese
2 cups shredded cheddar cheese
3 large eggs

1 cup biscuit/baking mix

Steps:

  • Split chiles; rinse and remove seeds. Dry on paper towels. Arrange chilies in an 11x7-in. baking dish. Top with cheeses. , In a large bowl, beat eggs; add milk and biscuit mix. Pour over cheese. Sprinkle with salt. Bake at 325° until golden brown, 50-55 minutes. Serve with salsa.

7 cans (4 ounces each) whole green chiles, drained
3/4 pound Monterey Jack cheese, cut into strips
1 cup shredded cheddar cheese
5 large eggs
1-1/4 cups milk
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon hot pepper sauce

Steps:

  • Split chiles lengthwise; rinse and remove seeds. Drain on paper towels; pat dry. Stuff chiles with cheese strips. Place half of chiles in a greased 11x7-in. baking dish; sprinkle with 1/2 cup cheddar cheese. Repeat layers., In a small bowl, beat the eggs, milk, flour, salt, pepper and pepper sauce until smooth; pour over chilies.
