FIG, CREAM CHEESE AND MINT TART

Fig, Cream Cheese and Mint Tart image

A real stunner and a snappy one to prepare. Serve with a simple arugula or spinach salad.

Provided by Lorraine Pascale

Categories     main-dish

Time 1h

Yield 8 to 10 servings

Number Of Ingredients 9

1lb 2oz/500g homemade or store-bought short pastry
All-purpose flour, for dusting
1 generous cup/9 1/2 fl oz/260ml whipping cream
3/4 generous cup/5 1/2oz/165g cream cheese
3 big squidges of honey
1 tbsp Marsala (optional)
12 to 16 figs, each cut into 6 pieces
Handful of green shelled pistachios, walnuts, or pecans, halved
1 bunch of fresh mint, ripped or roughly torn

Steps:

  • Preheat the oven to 350 degrees F (180 degrees C).
  • Roll out the pastry on a floured counter to the thickness of a 1-cent piece and use it to carefully line the pan. Homemade pastry is short and so will be quite crumbly. Don't be alarmed by this, you can patch it together in the pan. Take a small ball of the pastry (the size of a nickel) and use it to gently ease the dough down into the pan. Press the handle of a wooden spoon against the pastry all round the edges to coax it into the fluted grooves. Trim off the excess around the top and run a thin knife around between the pastry and the edge of the pan to loosen. Put in the refrigerator for about 15 minutes, or until firm.
  • Remove the tart from the refrigerator. Take a piece of parchment paper slightly larger than the pan and scrunch it up, then unscrunch it and line the pan with it. Fill it with pie weights or dried beans and "blind bake" in the oven for 20 to 25 minutes, or until the pastry feels sandy to the touch. Remove the paper and bake for an additional 5 minutes. Remove from the oven and set aside.
  • For the filling, put the cream in a bowl and whip until beginning to thicken, then fold it into the cream cheese and mix with the honey and Marsala, if using. Put the filling in the tart case, then arrange the figs on top and scatter over the nuts and mint. Serve with a sweet wine such as Asti.
  • Figs and mint are delicious, so sprinkling some torn mint leaves over the tart works really well. This tart is best eaten on the day it is made.

FIG JAM WITH ROSEMARY

Fig Jam With Rosemary image

Ripe figs lend their subtle sweetness to this chunky jam. Lemons add a necessary sparkle, and fresh rosemary balances the tanginess. You can substitute other woodsy herbs, such as thyme, marjoram or oregano, or add spices, such as black pepper, but additional seasonings should complement rather than overpower the figs. This jam involves little preparation but yields tasty results: Use it as a spread for warm toast, to serve alongside salty cheese or as a topping for meat dishes.

Provided by Yewande Komolafe

Categories     jams, jellies and preserves

Time 45m

Yield 3 to 4 cups

Number Of Ingredients 6

2 pounds fresh ripe figs, stemmed and chopped (about 6 cups)
4 large sprigs fresh rosemary (wrapped and tied in cheesecloth)
2 cups granulated sugar
2 tablespoons lemon zest (from about 4 lemons)
1/4 cup lemon juice (from 1 to 2 lemons), plus more to taste
1/2 teaspoon kosher salt (Diamond Crystal), plus more to taste

Steps:

  • Place the figs in a 4-quart heavy-bottomed pot. Pour in 1 1/2 cups water and bring to a simmer over medium heat. Cook uncovered, stirring occasionally, until the figs soften and the liquid begins to thicken, about 10 minutes.
  • Add the rosemary and sugar, and stir until the sugar dissolves. Bring the mixture to a simmer over medium-high heat. Cook, stirring frequently, until the syrup thickens, the figs are mostly broken down and the jam goes from a rapid boil to slow bubbles, about 25 minutes. Remove and discard the rosemary.
  • Stir in the lemon zest and juice and kosher salt. Reduce the heat to medium-low and cook for another minute for a runnier jam or up to 8 minutes if you prefer a thicker jam. Taste and adjust with more lemon juice and salt as needed. (Adding lemon juice will thin the jam, but it does thicken as it cools.) The jam should be sweet and tart with a hint of fresh rosemary.
  • Transfer to sterilized jars and can, or cool to room temperature, then store in the refrigerator for up to 4 weeks.

FIG JAM AND GOAT CHEESE CROSTINI

Fig Jam and Goat Cheese Crostini image

Flavors of fall 'sage and figs' pair up with tangy goat cheese for an elegant appetizer that's a perfect pairing for a glass of bubbly. The toasts can be made up to a day ahead and stored at room temperature in an airtight container. The sage can also be prepared a day ahead, loosely wrapped in a paper towel, and stored in an airtight container. Fig jam can be purchased at high-end grocery stores. Quince jam, a.k.a. membrillo, would also be delicious here. Taken from CHOW.com

Provided by alligirl

Categories     Cheese

Time 45m

Yield 20 crostini, 10 serving(s)

Number Of Ingredients 6

1 baguette
1/3 cup olive oil
salt, to taste
20 sage leaves
4 ounces goat cheese
1/3 cup fig jam

Steps:

  • Heat the oven to 400°F
  • Cut the baguette on the bias into about 20 (1/2-inch-thick) slices and place on a baking sheet.
  • Using 1 tablespoon of the olive oil, lightly brush each slice. Sprinkle with salt and bake until lightly toasted and crisp, about 8 minutes; let cool.
  • Line a plate with paper towels and set aside.
  • Heat the remaining olive oil in a small frying pan over medium-low heat. When the oil shimmers, gently place 2 to 3 sage leaves at a time into the hot oil until they darken in color and any bubbling subsides.
  • Immediately remove the leaves with tongs or a slotted spoon and transfer to the paper-towel-lined plate.
  • Repeat with remaining sage leaves; set aside.
  • Gently spread 1 teaspoon of the goat cheese on each crostini, top with a heaping 1/2 teaspoon of the fig jam, and garnish with a fried sage leaf.
