HOW TO MAKE RAINBOW POPCORN BALLS
Steps:
- In a small pot over medium high heat combine corn syrup, butter, sugar, marshmallows, water, vanilla and salt. Keep stirring until mixture comes to a boil.
- Separate popcorn into bowls depending on how many different colors you are using. If you are using 5 colors, separate popcorn into 5 bowls - this will make it safer so you don't mix colors.
- Carefully (it's hot) pour your syrup mixture into bowl of popcorn. Make sure to equally distribute into each bowl of popcorn. For example if you are using 5 colors, separate the syrup into 5 equal parts.
- Add 2 drops of food coloring to the bowl.
- With a spoon stir popcorn so every piece is coated with syrup mixture. Tip: Use a different spoon for each bowl so you don't mix colors.
- Using your hands shape into popcorn balls (whatever size you prefer). You have to do this quickly before the syrup cools off. You can use food safe plastic gloves sprayed with nonstick spray to make this easier to do.

- Place popcorn in a large baking pan; keep warm in a 200° oven. , In a heavy saucepan, combine the sugar, corn syrup, water and salt. Cook over medium heat until a candy thermometer reads 235° (soft-ball stage). , Remove from the heat. Add the butter, vanilla and food coloring if desired; stir until butter is melted. Immediately pour over popcorn and stir until evenly coated. , When mixture is cool enough to handle, quickly shape into 3-in. balls, dipping hands in cold water to prevent sticking.

- In a saucepan over medium heat, combine the corn syrup, margarine, cold water, confectioners' sugar and marshmallows. Heat and stir until the mixture comes to a boil. Carefully combine the hot mixture with the popcorn, coating each kernel.
- Grease hands with vegetable shortening and quickly shape the coated popcorn into balls before it cools. Wrap with cellophane or plastic wrap and store at room temperature.

RAINBOW POPCORN BALLS
The third grade teacher at my school would make these for her students. The many colors of jello make them appropriate for any holiday. Orange jello is great for Halloween; lime and cherry for Christmas time, etc. These are very yummy and never get hard. You will recognize the similarity to Rice Krispie Candy. I don't see why this recipe wouldn't work just as well with cereal as with popcorn, although I've never done it myself.

- Melt butter (margarine may also be used) and marshmallows over low heat. Add jello and stir well to combine.
- Put popcorn in a large bowl and pour this mixture over, mixing well to be sure to coat all popcorn. When cool enough to handle, butter your hands and form into balls.
- Wrap balls in plastic wrap to show off the color.

- Remove all unpopped kernels from popped corn. Place popcorn in a disposable greased 17x12x2-inch pan. Keep popcorn warm in 300 oven while making syrup mixture. Butter bottom and sides of heavy 2-qt. saucepan. In the pan combine margarine, sugar, gelatin, water, and corn syrup. Cook mixture over medium heat till boiling, stirring constantly. Clip a candy thermometer to side of pan. Continue cooking over medium heat, stirring constantly, till the thermometer registers 255 (hard-ball stage). Pour syrup mixture evenly over popcorn and shake gently to coat. Bake at 300 for 5 minutes. Shake once more and bake for 5 more minutes. Turn popcorn mixture onto large piece of foil. Cool. Store in airtight container in cool, dry place.

- Working quickly, whisk 1/2-1 teaspoon of drink powder into 1/3 cup of the corn syrup mixture. Drizzle over each bowl of popcorn and toss until coated in color. Don't worry if the popcorn is completely coated with this sugary sauce. You're going to pour a final coat over everything before forming them into ball!
- Once all bowls of popcorn have been tinted with the colored drink and sugar mixtures, pour all the colored popcorn back into the pot, and toss with the remaining corn syrup mixture. The popcorn should now be very well coated with the sugar mixture.
