Kids and adults alike will love these super colourful pancakes, perfect for a celebratory breakfast or brunch. Stack them up and top with whipped cream, maple syrup and mixed berries.

200g self raising flour
1 tsp baking powder
1 tbsp golden caster sugar
½ tsp vanilla extract
200ml milk
3 eggs
25g butter , melted, plus extra for frying
red, yellow, green and blue gel food colouring
punnet raspberries
punnet blueberries
whipped cream or ice cream
maple syrup

Steps:

  • Put all the pancake ingredients, except the dye, in a bowl and mix well with a whisk until smooth. Divide the batter into 5 bowls or disposable cups. Use the food colouring to dye 4 of them a different colour, leaving one plain.
  • Melt a small knob of butter in a large non-stick frying pan over a medium-low heat. Once foaming put spoonfuls of the pancake batter into the pan and shape into 4-5cm circles with the back of your spoon, you should have enough to make 4 pancakes from each coloured batter. Cook for 2-3 mins then flip over and cook the other side for another minute or until cooked through and ever so slightly golden.
  • Stack the pancakes so that everyone gets one of each colour. Serve with fresh fruit, cream or ice cream and a drizzle of maple syrup if you like.

2 cups master mix*
1 cup milk
2 large eggs
1 teaspoon vanilla
Food dye
Whipped cream (for serving)

Steps:

  • In a large bowl, whisk together master mix, milk eggs and vanilla until combined. Divide batter among 6 small mixing bowls.
  • Stir in food dye to each bowl, starting with a couple drops until a vibrant color is achieved. Repeat until you have red, orange, yellow, green, blue and purple.
  • Heat a nonstick frying pan or griddle over medium-low heat. The pan is ready when a sprinkle of water lightly sizzles on the pan.
  • Pour 2 tablespoons of batter per pancake. Cook for about 45-60 seconds or until the bubbles begin to pop. Flip and cook for an additional 45-60 seconds. Remove from pan and repeat until all the colors have been used.
  • Pancakes can be kept warm in a 200°F oven until ready to serve.
  • Stack the pancakes in the color order of a rainbow and serve with whipped cream clouds.

Steps:

  • TO MAKE PANCAKES.
  • Sift cake flour, salt, and baking powder.
  • Mix egg, sugar, milk, oil and vanilla extract in a bowl.
  • Add in sifted flour mixture.
  • Divide the batter and add food coloring in each, and mix thoroughly.
  • Lightly oil a non-stick frying pan and set to medium heat.
  • Scoop or pour in the batter, and cook both sides.
  • TO MAKE ICING.
  • Mix store-bought, ready-made icing with milk and water until smooth.
  • Stack the colored pancakes.
  • Pour over the icing.
  • Top with sprinkles.

Steps:

  • For the russet pancakes, preheat vegetable oil in a skillet until it reaches 350 degrees F.
  • Grate potatoes and onion, set aside. Place measured amounts into a clean bar towel or cloth. Squeeze out as much moisture as possible.
  • Whisk eggs and whisk in potato starch, salt, and white pepper until smooth. Quickly fold onion and potatoes into the egg mixture.
  • Use a 1/4 cup measuring cup to portion out a potato pancake. Place into hot oil and flatten with a spatula.
  • Fry until golden brown and flip with a slotted spatula (about 4 minutes per side). Fry for an additional time until the second side is golden brown.
  • Use a slotted spatula to remove the pancake to a drain pan or rack. Sprinkle with fine salt.
