Steps:
- Combine the apple cider vinegar and honey in a large mixing bowl and whisk until combined. While continuously whisking, slowly pour the olive oil in to emulsify the dressing. Sprinkle in the celery seed, salt and freshly ground black pepper and stir to combine.
- Add the carrots, green cabbage and purple cabbage. Toss with the dressing and transfer to a serving dish.

HARVEST SLAW
This is a yummy, quick side dish for any meal. It came from using ingredients I had on hand. This salad tastes so fresh and I love the hint of toasted pecans. Happy eating!

- In a medium ungreased skillet, over medium heat, toast the pecans by stirring frequently until golden brown. Set aside to cool.
- In a large bowl, combine coleslaw mix, carrots, grapes, pecans, and feta cheese.
- In a small bowl, stir together the mayonnaise, and Ranch dressing. Pour in sugar, and mix until dissolved. Toss coleslaw mixture with dressing until evenly coated. Serve immediately, or cover and chill in refrigerator.

- Put all the vegetables in a large bowl of iced water and leave in the fridge for 1 hr to crisp up. Drain well and pat dry on a tea towel, then tip into a large serving bowl.
- To make the dressing, whisk all the ingredients together with a large pinch of salt until the sugar has dissolved. Pour over the vegetables, toss well and chill until ready to serve.

RAINFOREST SLAW
I've had this in my recipe book for awhile, and can't remember where it came from. I seem to recall pulling it from a newspaper or magazine, but blasted if I could tell you which one. I think maybe it's a clone of a Rainforest Cafe recipe? Regardless, this is a great coleslaw for people who don't like mayonnaise!

- Whisk together vinegar, sugar, mustard, paprika, salt and pepper in a small bowl until blended. Gradually whisk in oil. Add onions and toss to blend. Let stand at least two hours to marinate onions.
- Combine cabbage, cranberries and apricots in a large bowl. Add dressing and toss till well blended.

- In a medium bowl, whisk together the mayonnaise, mustard, cayenne, sugar, celery seed, apple cider vinegar, and salt and black pepper, to taste, until thoroughly combined. Reserve.
- Using a large holed grater attachment for a food processor, grate the cabbage, carrots, red onion, sweet potato, and apples. Remove to a large serving bowl and toss with the reserved dressing. Cover with plastic wrap and refrigerate for at least 2 hours.

CONFETTI VEGGIE SLAW (RAINFOREST CAFE)
We had the Napa Veggies at the Rainforest Cafe and knew we had to find a way to make something similiar at home. My kids now say that our recipe is better than the Rainforest Cafe's. There is a lot of room for personal taste with this recipe, add other veggies or take out those you don't like. Our favorite is the Jicima, we could never leave that one out! This recipe makes a ton, but it keeps well. It will still be nice & crispy 4 days later.
