Double the sugar syrup for creme de cassis. You can divide this recipe And make half cassis and half creme de cassis. Creme de cassis is commercially made with brandy, but it is also delicious made with vodka.

Yield 1 cup

Number Of Ingredients 9

Ingredients

1 cup water
1 cup dried currants or 1 cup raisins
2 cups vodka or 2 cups brandy
3/4 cup sugar syrup (for cassis)
1 cup granulated sugar
1/2 cup water
3/4 cup brown sugar
1/2 cup granulated sugar
1/2 cup water

Steps:

Boil 1 cup water. Add currants. Cover, turn off heat and let currants plump in hot water for about 5 minutes.
Drain off water.
Place currants and alcohol in a tightly closed jar and steep for 1 week.
Shake jar occasionally during steeping.
Strain and filter.
Add enough sugar syrup for cassis, or more for creme de cassis, to your taste. Mature for 2 weeks.
Either recipe makes 1 cup.

1 lb raisins
3 cups vodka (80 proof)
1 cup water
1 teaspoon cinnamon, ground
6 whole cloves
2 cups white sugar

Steps:

Chop raisins into large piecies.
Put in mixing jar with cloves and cinnamon, and cover with vodka and water. Cover.
Leave to infuse for 2 weeks.
Strain through large strainer and then hand squeeze remaining raisins.
Add sugar.
Shake vigorously until sugar is dissolved.
Leave to clear for one week.
Decant clear liqueur and bottle.

A mixture of crushed chocolate wafer cookies, walnuts, and raisins makes up the base of this cherry liqueur flavored confection.

1 (9 ounce) package chocolate wafer cookies, finely crushed
½ cup finely chopped walnuts
¾ cup California raisins
1 ½ cups powdered sugar
⅓ cup cherry liqueur
3 tablespoons light corn syrup
¾ cup white vanilla chips
4 teaspoons oil

Steps:

In large bowl, combine chocolate crumbs, walnuts, raisins and powdered sugar; mix well. Add liqueur and syrup; mix well to make a stiff mixture. Form into 1-inch balls. Place on waxed paper. Let stand 1 hour to set.
Combine vanilla chips and oil in small microwave-safe bowl. Microwave on HIGH 30 to 45 seconds or until melted, stirring once during cooking. Dip tops of balls in melted chips, or drizzle over balls. Store in air-tight container for several hours to allow flavor to develop.
