2 cup wheat flour / atta
¼ tsp salt
¼ tsp baking powder
¼ cup ghee / clarified butter
water to knead
2 tbsp of ghee / clarified butter
3 tbsp powdered sugar
2 tbsp cashew & almond (chopped)
¼ tsp cardamom powder
½ cup moong dal / green gram dal
¼ cup masoor dal / pink lentils
¼ cup chana dal / bengal gram dal (soaked 30 minutes)
3 cup water
3 tsp ghee / clarified butter
1 tsp mustard
1 tsp cumin / jeera
pinch hing / asafoetida
1 onion (finely chopped)
1 tsp ginger garlic paste
1 green chilli (slit)
1 to mato (finely chopped)
¼ tsp turmeric
½ tsp kashmiri red chilli powder
¼ tsp garam masala
1 tsp salt
1 cup water
2 tbsp coriander (finely chopped)

Steps:

  • firstly, in a large bowl take 2 cup wheat flour, ¼ tsp salt, ¼ tsp baking powder and ¼ cup ghee.
  • mix well making sure the dough is moist.
  • now add water as required and knead the dough.
  • pinch a small ball sized dough and roll with x impression.
  • place the rolled bati in each mould of appe pan
  • cover and cook on low flame for 30 minutes all sides.
  • dip the bati in ghee for more soft bati from inside.
  • finally, enjoy dal bati churma along with slices of onion and chilli.

Rajasthani Dal Bati Churma Recipe is a very traditional recipe from Rajasthan and one if the favorites at home. The Baatis are made from whole wheat flour, sooji and ghee with the addition of ajwain that adds to the delicious flavor of the baati. I like to personally use freshly ground wheat for certain dishes like baati as it brings out the best flavors. The dal is usually a combination of multiple dals and I keep making variations to the dal to give the family a fresh taste. Serve the Rajasthani Dal Bati Churma for a wholesome weekend lunch or even for parties with friends. 2 cups Whole Wheat Flour , (or a combination of flours)
1 cup Sooji (Semolina/ Rava)
1/2 cup Ghee
1 teaspoon Ajwain (Carom seeds)
1 teaspoon Baking powder
Salt , to taste
1/4 cup Jaggery , for churma
1/4 cup Green Moong Dal (Split)
1/4 cup Black Urad Dal (Split)
1/4 cup Chana dal (Bengal Gram Dal)
1 Onion , finely chopped
1 inch Ginger , finely chopped
1 Green Chilli , slit
3 clove Garlic , finely chopped
1 Tomato , finely chopped
1 Bay leaf (tej patta)
1 inch Cinnamon Stick (Dalchini)
1 teaspoon Turmeric powder (Haldi)
1 teaspoon Garam masala powder
5 sprig Coriander (Dhania) Leaves , chopped
1 teaspoon Ghee
1 teaspoon Cumin seeds (Jeera)
2 Dry Red Chillies , halved

Steps:

  • To begin making the Dal Baati Churma Recipe, we will first making the bati.
  • Combine all the ingredients for the Bati together, except the jaggery until well combined. Add water to combine it well and make a smooth and yet stiff dough. Leave the bati dough aside for 20 minutes so it rests and becomes fluffy with the baking powder that we added.
  • Once the baat dough is well rested, knead again for a few minutes.
  • Divide the dough in large lemon size portions (about 12 to 15 of them). Preheat the oven to 180 C and bake the bati in the oven for about 20 to 30 minutes until browned on both sides.
  • Make sure to keep turning the baatis around, until it is browned from all sides. The batis will tend to crack from the top while it is baking and that's completely natural.
  • Once the batis are golden brown in color from all sides, remove them from the oven.
  • For the churma, I usually make it from the same baked bati balls. Take 3 to 4 of them, crush them and combine them with jaggery in a mixer to make a coarse powder. And that's it, churma is ready. The salt from the batis does not overwhelm the taste and tastes perfectly fine.
  • The next step is to make the dal for the dal bati.
  • To make the dal, add all the ingredients into the pressure cooker, except the ingredients for the tadka
  • Add 2-1-/2 cups of water and pressure-cook the dal for two to three whistles. After two whistles, turn the heat to low and simmer for 10 minutes and turn off the heat.
  • Once the pressure is released completely, open the cooker and your dal is ready. Check the salt and spices and adjust to suit your taste. Transfer the dal to a serving bowl.
  • The next step is to make the tadka. Heat ghee in a small pan, add the cumin seeds and red chilies. Allow them to roast and crackle. Once done, turn off the heat and pour the seasoning over the dal and serve with the hot baatis.
  • Serving baatis are usually done in individual portions and bowls.
  • In a small serving bowl, add 2 batis, lightly crush them, drizzle some ghee over the baked baatis. Pour the dal over the baked baatis and serve. I personally like to add the churma over the baatis as well to give it a sweet touch and a delicious taste as well.
  • Serve the Rajasthani Dal Bati Churma for a wholesome weekend lunch or even for parties with friends.

Dal Baati is a traditional Rajasthani dish. It is fuller, tasty, and easy to make. You can also make it with mixed lentils or with any one of the lentils.

For Baati
Wheat Flour - 400 grams,
Ajwain - 1 tsp,
Semolina - 1 tbsp,
Salt - as per taste,
Fennel - 1/2 tsp,
Turmeric powder - 1/2 tsp,
Hot oil - 2-3 tbsp,
Curd - 2 tablespoons,
Baking soda - 1 pinch,
Water (for kneading the dough) - as required
Desi Ghee - to apply on the baati
For Dal
Urad dal (without peel) - 1 cup
Oil - 1 tbsp,
Asafoetida - 1 pinch,
Mustard - 1/2 tsp,
Cumin - 1/2 tsp,
Garlic (cut long) - 4-5 buds,
Green chilli (finely chopped) - 2-3
Onion (chopped) - 1
Green chilli Ginger Garlic paste - 1 tsp
Tomato - 1 chopped
Red Chilli - 1 tsp,
Turmeric - 1/4 tsp,
Coriander powder - 1/2 tsp,
Garam masala - 1/2 tsp
Salt per taste
Water - 1/2 cup
For Cooking Spices
Ghee - 1 spoon
Green coriander
NOTE: Some ingredients can be replaced with their vegan counterparts.

Steps:

  • Sieve flour in a vessel, and then add salt, ajwain, turmeric, curd, and soda to it, and mix it well.
  • After adding a little water, knead the dough. Do not knead the dough too hard or too soft. Keep it semi-soft.
  • After kneading the dough, apply some oil on it and keep it covered for 10 minutes so that our dough gets set.
  • Then by breaking the pieces from the dough, make all the baatis as spherical shapes.
  • Keep the oven on the gas to heat for 10 minutes, and keep it covered. After that, put all the baatis in it for roasting.
  • To bake the baati, keep the flame full for 10 minutes and turn the baatis very quickly. After roasting from both the sides, put the oven on medium flame.
  • Check the baatis in between while roasting them well. When they become brown, then take them out.
  • By pressing with the help of a cloth, break the baatis and dip them well in ghee.
  • Our Rajasthani Baati is ready. They have turned out to be very tasty and soft.

  • We will take a cup of urad dal without peel, and wash it well. Then soak it in water for 10 minutes. Then put it in the cooker to cook on the gas. After 2 whistles, open the lid and check that the lentils are cooked well.
  • Now put oil in a pan already on the stove. Put mustard, cumin, asafoetida, ginger garlic paste, onion and tomato and stir it for 2 minutes. After that add all the dry spices and add a little water and roast well for 3 to 4 minutes..
  • Put this roasted masala into the dal, and mix it well. Pour ghee on top in the end. Garnish with coriander and turn off the stove. Our spicy and colorful dal is ready.
  • To serve, take out the dal in a bowl. Enjoy with Baati. Enjoy this traditional Rajasthani Dal Baati Recipe.

  • To make this delicious traditional recipe, take a glass bowl and add wheat flour, baking powder and 2 tsp of salt. Add 6 tbsp of ghee and mix well until it resembles bread crumbs. Add the thymol seeds and 1/2 cup of water. Knead well to make a stiff yet pliable dough. Now, take small portions of the dough and make medium sized balls. Place them on a baking tray lined with sheet.
  • Place the tray in a pre-heated oven at 200C/400 F and bake for 12 to 15 minutes or until they start to turn light brown in colour. Bake the batis at a lower temperature for another 15 to 30 minutes or until crispy and fully cooked.
