RAMEN EGG - AJITSUKE TAMAGO
Ramen egg makes the perfect topping for a hot bowl of ramen!

- Bring a pot of water to boil and turn the heat off. Carefully add the eggs, cover and let sit for 6-7 minutes until they are soft to medium boil in consistency. If you are using an egg cooker, use the cup the egg cooker comes with and fill it with water up to the medium boil line, or just under for a softer consistency. Put the lid on and start steaming.
- Meanwhile, add the ingredients for the marinade in a bowl and stir. Set aside.
- Once the eggs are cooked, submerge them in a bowl with ice cold water. Let sit for 5 minutes and peel.
- Place the eggs in a Ziploc bag or other sealable container, pour the marinade over and seal. Rotate the eggs every 30 minutes or so, for 2-4 hours. You can let them marinate for up to 2 days for a stronger taste.
- Slice in half and serve with ramen or rice.

- To Prep Prepare an ice bath by adding ice into a large bowl filled with cold water. Place in the fridge. In a mixing bowl, combine the soy sauce, mirin and water. Pour into a zip lock bag. Seal and set aside.
- To Cook Bring water to the boil in a saucepan over high heat. Once boiling, carefully add eggs from the fridge and reduce heat to medium-low. Allow to simmer for exactly 7 mins. Remove eggs from the water and place in the ice bath. Allow to cool for 3 mins. Gently peel eggs, then add into the bag with marinade. Seal, place in a bowl or container and leave in the fridge to marinate at least overnight. For best results, allow to marinate for 3-4 days. To serve, slice in half and serve with ramen.
- Tip: If you prefer your egg runnier, cook for 6 - 6½ mins. For a more set, custard-like yolk, cook for 8 - 8½ mins. For a hard-boiled egg, cook for 12+ mins.

- In a medium bowl, add soy sauce, mirin and water. Mix to combine. Pour liquid into a plastic bag or container that you will be using to marinate the eggs. You want to use something which allows the eggs to be completely submerged in the marinade. I put my eggs in a container that just barely fit all the eggs and marinade. I then placed a lid on top to keep the eggs from floating above the marinade.
- Marinate eggs for about 4 hours or overnight in the fridge. I recommend overnight for the best flavor. Eggs can be eaten cold or you can add them to hot ramen broth to warm them up.

- Fill a medium saucepot with enough water to fully cover the eggs, once added. Place the saucepot over high heat and add the vinegar. Bring to a boil. (The vinegar makes the eggs easier to peel.)

- Bring enough water to boil that is able to cover 6 eggs in a medium pot over high heat. Carefully place eggs using a spatula, ladle or a spoon. Cook the eggs for 6 minutes. Stir the eggs occasionally for the first couple of minutes, so the egg yolk will be right in the middle.
