Ramen egg makes the perfect topping for a hot bowl of ramen!

4-6 large eggs
3 tablespoons soy sauce
2 tablespoons mirin
1 tablespoon cooking sake
pinch ground black pepper

Steps:

  • Bring a pot of water to boil and turn the heat off. Carefully add the eggs, cover and let sit for 6-7 minutes until they are soft to medium boil in consistency. If you are using an egg cooker, use the cup the egg cooker comes with and fill it with water up to the medium boil line, or just under for a softer consistency. Put the lid on and start steaming.
  • Meanwhile, add the ingredients for the marinade in a bowl and stir. Set aside.
  • Once the eggs are cooked, submerge them in a bowl with ice cold water. Let sit for 5 minutes and peel.
  • Place the eggs in a Ziploc bag or other sealable container, pour the marinade over and seal. Rotate the eggs every 30 minutes or so, for 2-4 hours. You can let them marinate for up to 2 days for a stronger taste.
  • Slice in half and serve with ramen or rice.

  • To Prep Prepare an ice bath by adding ice into a large bowl filled with cold water. Place in the fridge. In a mixing bowl, combine the soy sauce, mirin and water. Pour into a zip lock bag. Seal and set aside.

  • Tip: If you prefer your egg runnier, cook for 6 - 6½ mins. For a more set, custard-like yolk, cook for 8 - 8½ mins. For a hard-boiled egg, cook for 12+ mins.

  • In a medium bowl, add soy sauce, mirin and water. Mix to combine. Pour liquid into a plastic bag or container that you will be using to marinate the eggs. You want to use something which allows the eggs to be completely submerged in the marinade. I put my eggs in a container that just barely fit all the eggs and marinade. I then placed a lid on top to keep the eggs from floating above the marinade.

  • Fill a medium saucepot with enough water to fully cover the eggs, once added. Place the saucepot over high heat and add the vinegar. Bring to a boil. (The vinegar makes the eggs easier to peel.)
  • Use a needle to prick a hole in the wide end of each egg. (This does two things, it helps the egg to form a prettier shape as it cooks, without a flat end, and it makes the eggs easier to peel.)
  • Once boiling, use a skimmer or slotted spoon to gently lower the eggs into the water. Once they are all in, set a timer for 6 or 7 minutes, depending on wether you want saucy yolks or custardy yolks.
  • Meanwhile, fill a medium mixing bowl with ice and cold water. The moment the timer goes off, use the slotted spoon to carefully move the eggs from the boiling water to the ice water to cool. Cool for at least 10 minutes.
