ORIGINAL RANCH BEEF AND NOODLE SKILLET



Original Ranch Beef and Noodle Skillet image

This recipe is very simple to prepare and tastes great. The key to this meal is the Hidden Valley Ranch dressing, which really brings out the flavor of the noodles, beef and it is a meal that everybody enjoys. Good for lunch or dinner.

½ cup grated Parmesan cheese
½ pound freshly sliced mushrooms
¾ cup milk
1 container (8 oz.) sour cream
1 package (12 oz.) wide egg noodles dry
1 packet (1 oz.) Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix
1 pound ground beef cooked, drained
1 tablespoon vegetable oil
sliced green onions (optional)

Steps:

  • Cook noodles according to package directions and drain. In a bowl, combine the sour cream, milk, and seasoning mix and stir until smooth. In a large skillet, heat the oil over medium heat, add the mushrooms and cook for 5 minutes or until the mushrooms are browned. Remove the mushrooms from the skillet. Add the beef and cook stirring to break up the meat until nicely browned. Drain the beef. Add the mushrooms back to the skillet. Add the noodles,sour cream mixture, and cheese to the skillet and stir until the cheese has melted. Serve immediately.

I've tried to refrain from posting too many casserole type dishes, but my self-control has abandoned me and it's casserole time, people! So, here ya go: I am not afraid to say it - I love...

1 1/2 lb ground beef, browned, drained
1-2 can(s) ranch-style beans - mom always used 1 can; i like more beans and use 2
nacho cheese flavored doritos
1 1/2 c shredded cheddar cheese
1 c cooked rice, optional
sour cream and salsa, optional garnishments

Steps:

  • 1. In large skillet, brown and drain ground beef. Return the beef to skillet, and add ranch style beans (do not drain the gravy from the beans - just open the can and pour them into the skillet). Let cook over low-medium heat, covered, stirring occasionally, until beans are warmed through, for about 10 minutes.
  • 2. OPTIONAL STEP: Add cooked rice at the same time as beans and stir to disperse throughout.
  • 3. Add about 2-3 handfuls of Doritos. No need to crush them - just add a handful, stir; add another handful, stir. Once Doritos are well combined throughout, cover and let simmer until Doritos are soft, for about 10 minutes, stirring occasionally.
  • 4. Turn heat to low. Top with shredded cheese and cover. Once cheese melts, remove from heat and serve.
  • 5. If desired, make sour cream, salsa or left over uncooked Doritos available for people to dress up their plates however they prefer.

2 teaspoons chili powder
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon pepper
1/2 cup shredded pepper jack cheese

Steps:

  • Cook rice according to package directions., Meanwhile, in a large skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain. Stir in the rice, beans, broth, tomato sauce, chili powder, salt, cumin and pepper; heat through. Sprinkle with cheese. Cover and cook for 1-2 minutes or until cheese is melted.

1 (7 ounce) box seasoned black bean and rice mix (Zatarain's brand)
1 (10 ounce) package frozen corn
1 (14 ounce) can diced tomatoes
2 1/2 cups water
1 cup cheddar cheese, shredded
1/2 cup cilantro, chopped

Steps:

  • Brown beef and onion in a large skillet til beef no longer pink.
  • Drain off excess grease. (I use a paper towel and run it across the bottom of the pan, soaking up the grease.
  • Stir in rice and beans, tomatoes, corn and 2-1/2 cups water.
  • Bring to a boil, reduce heat, cover and simmer for 20 minutes or until water has been absorbed.
  • Meanwhile chop cilantro.
  • Sprinkle with cheddar cheese and cilantro.
  • Enjoy!
