- Arrange 6 slices thick-cut bacon on a rack set on a foil-lined rimmed baking sheet. Bake at 375 degrees F until they just start to crisp, 12 to 14 minutes.
- Microwave 2 tablespoons sugar with 1 teaspoon water until dissolved, about 45 seconds. Flip the bacon and brush the tops with the sugar mixture.
- Sprinkle with seasonings (such as chili powder, pie spice or Cajun seasoning). Continue baking until browned, 12 to 16 more minutes. Drain on paper towels.

- Place the bacon in an even layer in a large skillet. Cook over medium-low heat, stirring often with a rubber spatula, until the bacon is light golden brown, about 20 minutes.
- Meanwhile, combine the maple syrup, black pepper and cayenne in a small bowl.
- Pour off some of the rendered bacon fat, leaving just a small amount. Return the skillet to the heat and pour the maple syrup mixture over the bacon. Braise gently until the syrup thickens and glazes the bacon and the bacon is deep golden brown, about 15 minutes. Serve warm.

- Partially freeze your package of bacon so that it holds together easier while slicing.
- Use a sharp knife and cut the frozen bacon into long strips about 1/4 inch wide.
- Turn the bacon and cut the strips into pieces also about 1/4 in wide.
- Sprinkle with pepper.
- Fry over a medium high heat until crisp.
- Remove with a slotted spoon and drain on paper towels.
- You can freeze this for later use by placing the bacon bits in a single layer on a cooking sheet. Once they are frozen, place them in a zip lock bag for use in recipes, salads or baked potatoes. Freezing this way allows you to be able to take out just what you need without thawing the entire bag of frozen solid bacon bits.

- Heat oven to 400°F. Line cookie sheet with cooking parchment paper. Place bread slices with sides touching in single layer on parchment paper. Brush with oil.
- Bake 5 to 7 minutes or until bread is toasted. Meanwhile, in medium bowl, stir together remaining ingredients except 1 tablespoon of the chives.

SPICED BACON BITS

- In a bowl stir together the Worcestershire sauce, the brown sugar, the allspice, the cayenne, and black pepper to taste, add the bacon, and toss the mixture in 2 batches over moderately low heat, stirring frequently, until the bacon is crisp, transfer the bacon bits with a slotted spoon to paper towels to drain, and sprinkle them with salt to taste. Serve the bacon bits as a topping for tomato or spinach salad.
SPICED BACON TWIST
There is another similar recipe on here but doesn't have the added spices that I think make this so special. I do got this from another sight and made it for three very hungry Man-Cubs breakfast and they ALL rated it 5 stars. One called it "candy bacon" Hope you like it too. Nest time I'm thinking I'll cut back on the brown sugar as I had a LOT left over - but left it here as in the original recipe.
