BIG SMOKEY BURGERS

I created this recipe while trying to recreate the best burger I had ever tasted at a restaurant in the Great Smoky Mountains of North Carolina. My family and I think these burgers are better! They are packed with flavor!

2 pounds ground beef sirloin
½ onion, grated
1 tablespoon grill seasoning
1 tablespoon liquid smoke flavoring
2 tablespoons Worcestershire sauce
2 tablespoons minced garlic
1 tablespoon adobo sauce from canned chipotle peppers
1 chipotle chile in adobo sauce, chopped
salt and pepper to taste
6 (1 ounce) slices sharp Cheddar cheese
6 hamburger buns

Steps:

  • Preheat an outdoor grill for medium-high heat.
  • Combine ground sirloin, onion, grill seasoning, liquid smoke, Worcestershire sauce, garlic, adobo sauce, and chipotle pepper in a large bowl. Form the mixture into 6 patties. Season with salt and pepper.
  • Place burgers on preheated grill and cook until no longer pink in the center. Place a slice of Cheddar cheese on top of each burger one minute before they are ready. Place burgers on buns to serve.

3 large eggs, lightly beaten
2 tablespoons liquid smoke
1 medium onion, finely chopped
1/2 cup crushed saltines (about 15 crackers)
1 teaspoon salt
1/2 teaspoon seasoned salt
1/2 teaspoon seasoning blend
1/2 teaspoon pepper
3 pounds ground beef
12 slices process American cheese
12 sesame seed hamburger buns, split
Mayonnaise, lettuce leaves, tomato slices and pickle slices

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into 12 patties. , Grill, covered, over medium heat for 5 minutes on each side or until a thermometer reads 160° and juices run clear. , Top each burger with a cheese slice. Grill 1-2 minutes longer or until the cheese begins to melt. Serve on buns with mayonnaise, lettuce, tomato and pickles.

  • Patty out burgers - with one pound, sometimes I make 3 thicker burgers and sometimes I make 4 thinner. Either way, the cook time will be the same.
  • Salt and pepper the tops of your burgers. You can salt/pepper as desired. See blog post for tips on what type of salt/pepper and how much depending on type.
  • Place the burgers on the smoker racks (directly, no pan needed) and cook for one hour or until the desired doneness. (USDA recommends the internal temperature of burgers should be 160°.) NOTE: No need to flip the burgers.
