This is one of our family's favorite desserts. It has a tangy, unique flavor. After a hard day of working on the farm, this fruity treat is most welcome.

1-1/4 cups graham cracker crumbs
1/4 cup butter, melted
50 large marshmallows
1 cup milk
1 carton (8 ounces) frozen whipped topping, thawed
2 packages (10 ounces each) frozen sweetened raspberries
1-1/4 cups water, divided
1/2 cup sugar
2 teaspoons lemon juice
6 tablespoons cornstarch
Whipped cream and fresh raspberries, optional

Steps:

Combine crumbs and butter; press into a greased 13-in. x 9-in. baking dish. Bake at 350° for 10 minutes. Cool. , In a large saucepan over medium heat, stir marshmallows and milk until marshmallows are melted. Cool to room temperature. Fold in whipped topping; spread over crust. , In a large saucepan, bring raspberries, 1 cup water, sugar and lemon juice to a boil. Combine cornstarch and remaining water; stir to raspberry mixture. Boil for 2 minutes, stirring constantly. Cool to room temperature. Spread over marshmallow layer. , Chill until firm, about 4 hours. Garnish with whipped cream and raspberries if desired.

6 ounces raspberry gelatin powder
2 cups water, boiling
3 cups applesauce
12 ounces frozen raspberries, thawed
8 ounces cream cheese, soft tub
8 ounces sour cream
1/2 cup light brown sugar
10 ounces miniature marshmallows

Steps:

Place gelatin in a large bowl. Add boiling water and stir until gelatin is dissolved.
Add applesauce and raspberries. Mix well.
Pour mixture into a 9x13 pan.
Refrigerate several hours until set.
Place cream cheese, sour cream and brown sugar in large bowl -- mix well.
Add marshmallow. Mix well.
Spread marshmallow mixture evenly over raspberry mixture.
Cover and refrigerate until serving time. Can be made up to 24 hours ahead.

Light and fluffy, this Raspberry Fluff Jell-O Salad only has 5 ingredients and comes together in a matter of minutes. It's the perfect light dessert or even side dish at your potluck party.

Ingredients

4.6 ounces cook and serve vanilla pudding mix (1 package, (Instant Pudding will NOT work))
6 ounces raspberry Jell-o (1 package)
3 cups water
1 teaspoon lemon juice
16 ounces cool whip (1 container, (lite or fat-free is fine))
3 cups raspberries ((sometimes I add blackberries and blueberries too! Any fresh/frozen berries will do))

Steps:

Mix together pudding, Jell-o, water, and lemon juice in saucepan over medium heat until it boils.
Once it comes to a full rolling boil, remove from heat and pour into large bowl.
Cover with plastic wrap and refrigerate until mixture has thickened (about 3 hours).
With an electric mixer, beat jello until creamy. Gently fold in Cool Whip.
Then add in raspberries until completely mixed together.
Stick back into the fridge and chill for about an hour before serving.

5.1 ounces cheesecake instant pudding mix (1½ (3.4 ounce) boxes)
32 ounces Vanilla yogurt (1 container)
8 ounces cool whip (1 container, thawed)
10 ounces frozen raspberries (1 package, slightly thawed)

Steps:

In a large bowl, mix together pudding mixes, yogurt, and Cool Whip (you'll have to really beat it to get out all the lumps!).
Fold in the berries (the more that you stir them in, the more that they will turn your salad pink).
Cover and chill until serving time.
