1 1/2 cups granulated sugar
2 eggs
1 cup sour cream
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
2 cups finely chopped rhubarb
1/2 cup packed brown sugar
1 tablespoon all-purpose flour
1 teaspoon cinnamon
1 tablespoon butter, softened

Steps:

  • Preheat oven to 350°F.
  • Cream butter and sugar together in mixing bowl.
  • Beat in eggs one at a time.
  • Stir in sour cream and vanilla.
  • Mix flour and baking soda together and fold into batter.
  • Stir in rhubarb.
  • Turn into greased 9x13-inch pan.
  • Topping: Mix all ingredients together until crumbly.
  • Sprinkle over top.
  • Bake 30-40 minutes until done.

1/2 cup all-purpose flour
1/2 cup sugar
pinch of salt
6 tablespoons cold butter, cut into 1/2" pieces
3 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon kosher salt
3/4 cup plus 1 teaspoon unsalted butter, softened (not melted), divided
1 cup sugar
2 large eggs
3/4 cup milk
1 teaspoon pure vanilla extract
1 teaspoon pure almond extract
2 cups chopped fresh rhubarb, cut into 1/2" pieces
6 ounces fresh raspberries (about 3/4 to 1 cup)

Steps:

  • Preheat oven to 375° F. Grease a 10" cast iron skillet with tall sides (a smaller pan will not work!) with the 1 teaspoon of butter. Set pan aside.
  • In a medium bowl, whisk together flour, baking powder, cinnamon, and salt.
  • In a separate large bowl, or in the bowl of an electric stand mixer, cream together the remaining 3/4 cup of butter with the sugar until light and fluffy. Add the eggs and milk and beat until smooth, and then mix in the vanilla and almond extracts. Don't worry if it's a bit curdled looking.
  • Add the dry ingredients to the wet ingredients and mix until just combined. Gently fold in the rhubarb and spread into prepared skillet. Sprinkle the top of the batter with raspberries, pressing them into the batter just a bit.
  • In a medium bowl, mix together the flour, sugar, and salt. Cut in the butter with a rigid pastry cutter or a fork until you have pea-sized pieces. Sprinkle over the top of the coffee cake batter, taking care to let most of the raspberries peek through.
  • Place skillet in oven and bake for about 50 minutes, or until coffee cake is puffed up and set in the center, and nicely golden brown. Remove to a wire rack to cool. Let cool for at least 1 hour before serving. When served still warm, it will be very tender (and also highly irresistible!).

3 cups chopped fresh or frozen rhubarb
1 cup fresh or frozen raspberries, mashed

3/4 cup butter-flavored shortening
1-1/2 cups sugar
3 large eggs
3 cups all-purpose flour
1-1/2 teaspoons baking powder
3/4 teaspoon baking soda
1-1/2 cups sour cream
TOPPING:
1/2 cup all-purpose flour
1/2 cup sugar
1/2 cup quick-cooking oats
1/2 teaspoon ground cinnamon
1/4 cup cold butter, cubed
1/2 cup sweetened shredded coconut
1/2 cup chopped walnuts

Steps:

  • In a large saucepan, combine sugar and cornstarch; stir in rhubarb and raspberries. Bring to a boil over medium heat; cook 2 minutes or until thickened, stirring constantly. Remove from heat. Stir in lemon juice. Cool slightly., Preheat oven to 350°. In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs. Combine flour, baking powder and baking soda; add to creamed mixture alternately with sour cream. , Spread two-thirds of the batter into a greased 13x9-in. baking dish. Top with rhubarb mixture. Steps:

  • Heat oven to 325°F (for all pans). Spray bottom and sides of 13x9-inch pan with baking spray with flour.
  • In large bowl, beat cake mix, milk, vanilla, eggs and cream cheese with electric mixer on low speed 1 minute, then on medium speed 2 minutes, scraping bowl frequently; set aside.
  • In medium bowl, toss rhubarb and 1/4 cup of the flour. Fold rhubarb into batter; spread in pan.

1/4 cup freshly squeezed lemon juice (about 2 lemons)
1/3 cup cornstarch
2 3/4 cups sugar
1 pound strawberries, hulled and sliced
1 1/2 pounds rhubarb, trimmed and cut into 1-inch pieces
3 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
Pinch of salt
2 large eggs
1 1/2 cups buttermilk
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350 degrees. Brush a 9-by-12-by-3-inch baking pan with butter, and set aside. Make fruit sauce: Combine lemon juice, cornstarch, and 1 cup sugar in a medium saucepan. Add strawberries and rhubarb; cook, stirring frequently, over medium heat, until rhubarb is soft and liquid has thickened, 15 to 20 minutes. Transfer to a medium bowl; let cool.
  • Make the crumb topping: Combine 3/4 cup sugar and 3/4 cup flour in a medium bowl. Melt 1/4 cup butter in a small saucepan over low heat. Drizzle butter over flour mixture; using your hands, mix until crumbly. Set aside.
  • Make cake batter: Whisk together remaining 3 cups flour and 1 cup sugar, baking powder, baking soda, and salt in a large bowl. Using a pastry knife or two forks, cut butter into flour mixture until it resembles coarse meal. In a separate bowl, mix eggs, buttermilk, and vanilla. Pour into flour mixture; stir to combine.
  • Spread half the cake batter evenly into the prepared pan. Top with half the fruit sauce. Carefully spread the remaining batter over the fruit, and top with the remaining fruit sauce. Sprinkle with the crumb topping.

3 cups sliced fresh or frozen rhubarb (1-inch pieces)
1 quart fresh strawberries, mashed
2 tablespoons lemon juice
1 cup sugar
1/3 cup cornstarch
CAKE:
3 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, cut into pieces
1-1/2 cups buttermilk
2 large eggs, room temperature
1 teaspoon vanilla extract
TOPPING:
1/4 cup butter
3/4 cup all-purpose flour
3/4 cup sugar

Steps:

  • In a large saucepan, combine rhubarb, strawberries and lemon juice. Cover and cook over medium heat about 5 minutes. Combine sugar and cornstarch; stir into saucepan. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from heat and set aside. , Preheat oven to 350°. In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Cut in butter until mixture resembles coarse crumbs. Beat buttermilk, eggs and vanilla; stir into crumb mixture. , Spread half of the batter evenly into a greased 13x9-in. baking dish. Carefully spread filling on top. Drop remaining batter by tablespoonfuls over filling. , For topping, melt butter in a saucepan over low heat. Remove from heat; stir in flour and sugar until mixture resembles coarse crumbs. Sprinkle over batter. Lay foil on lower oven rack to catch any juice spillovers. , Place coffee cake on middle rack; bake 40-45 minutes. Cool on a wire rack.

I clipped this recipe out of Homemakers' Magazine years ago, always meaning to try it and never getting around to it. Well, I finally did try it and am sorry I didn't do so earlier. It is a delicious, moist cake with two scrumptious fillings - the bottom one is lemon-flavoured cream cheese, topped by fresh rhubarb, cooked to a jam-like consistency. They are then covered by a delicious streusel topping. I have adapted the instructions for the food processor, since that is what is used to put the cake together.

1 1/4 cups rhubarb, finely diced
1 1/2 cups granulated sugar
1 lemon
2 1/4 cups all-purpose flour
3/4 cup butter
1/2 cup walnuts, chopped
1/2 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
8 ounces cream cheese, softened
2 eggs
3/4 cup sour cream
1 teaspoon vanilla

Steps:

  • In a small, heavy saucepan, combine the rhubarb, 1/2 cup of the sugar, and 1 slice cut from the lemon.
  • Bring to a boil over high heat, stirring until the sugar melts.
  • Reduce the heat to medium and simmer 12 to 13 minutes or until thickened and reduced to about 1/2 cup.
  • Let cool.
  • In the bowl of a food processor, combine the flour and 3/4 cup of the sugar.
  • Add the butter and pulse until the mixture resembles coarse crumbs.
  • Measure 1 cup of the mixture into a small bowl and add the walnuts and cinnamon.
  • Set aside.
  • Add the baking powder, baking soda, salt, sour cream, vanilla and one egg to the remaining flour/butter mixture in the food processor.
  • Pulse until a soft, sticky dough is formed.
  • With floured fingers, press the dough evenly over the bottom and 2 inches up the sides of a greased 10" springform pan.
  • Wipe out the bowl of the food processor and add 1 teaspoons grated lemon rind, the cream cheese, 1/4 cup sugar and the remaining egg.
  • Pulse until well blended.
  • Spread the cream cheese mixture over the dough in the cake pan.
  • Top with the rhubarb mixture.
  • Sprinkle the walnut mixture evenly over the top.
  • Bake in a 350 degree F oven for about 1 hour or until a knife inserted in the centre of the cake comes out clean.
  • Place the pan on a wire rack and let cool for 15 minutes.
  • Remove from the pan.
  • Serve warm, cut into wedges and refrigerate any leftovers.

1 large egg
1 teaspoon vanilla extract
1 cup whole milk
2-1/2 cups all-purpose flour

2-1/2 cups finely chopped fresh or frozen rhubarb
1/2 teaspoon ground cinnamon

Steps:

  • In a bowl, cream butter and 1-1/2 cups brown sugar. Add egg and vanilla, beating until light and fluffy. Add milk; beat until smooth. Combine the flour, baking soda and salt; add to creamed mixture and mix well. Fold in rhubarb. Pour into a greased 13x9-in. baking dish., Combine the cinnamon and remaining brown sugar; sprinkle over batter. Bake at 325° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

This was my Grandma Moyer's recipe. It has been missing since at least the mid 80's. I found it stuck the middle of an old book I got after my mom passed away. Everyone in the family has been trying to recreate this delicious coffee cake for years. It is moist and very flavorful. I added the strawberries because I like it a little sweeter. Rhubarb is an ingredient that you don't see used very often any more, but those of us who do use it always love to find new ways to spread the love.

2 cups white sugar
2 eggs
1 cup cold coffee
3 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon

1 ½ cups sliced strawberries
½ cup brown sugar
½ cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.
  • Beat white sugar and eggs together in a large bowl until smooth; mix in coffee. Whisk flour, baking soda, cinnamon, and salt in a separate bowl. Beat the dry ingredients into the moist ingredients just until combined; stir rhubarb and strawberries into the batter. Pour batter into prepared cake pan and sprinkle top with brown sugar and pecans.
  • Bake in the preheated oven until the cake is lightly browned and a toothpick inserted into the middle comes out clean, 45 to 50 minutes.
