Number Of Ingredients 8

1/4 cup lime juice (freshly squeezed, if possible)
3 tablespoons raspberry jam, seedless
2 tablespoons mint jelly
1 tablespoon vegetable oil
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon dry mustard
1/4 teaspoon pepper

Steps:

  • Combine all ingredients in an electric blender or food processor; process until smooth.
  • Cover and chill before serving.
  • Store refrigerated.
  • OPTIONAL- replace a little of the jam or jelly with hot pepper jelly, to taste.

This is a sweet raspberry sauce with a touch of mint that is really good as an addition to many desserts. I originally came up with this recipe when I needed to add a little extra to a white chocolate panna cotta (which was really good).

1 cup raspberries
1/4-1/3 cup fresh mint leaves
2 tablespoons lemon juice
2 tablespoons balsamic vinegar
1/2 cup sugar

Steps:

  • Put raspberries, mint leaves, lemon juice, and balsamic vinegar in a mixer and mix until smooth.
  • Pass through a strainer into a small pan.
  • Add sugar.
  • Bring to a boil and simmer for a few minutes while constantly stirring.

1 cup sugar
1/3 cup water
1 tablespoon lemon juice
1/2 cup loosely packed fresh mint leaves

Steps:

  • Combine sugar, water, and lemon juice in a small saucepan; bring to a boil, stirring occasionally.
  • Remove from heat.
  • Combine sugar mixture and mint leaves in container of an electric blender or food processor; process until leaves are finely chopped.
  • Cover and chill dressing 2 to 3 hours.
  • Serve dressing over fresh fruit.
