This recipe is Vegan, Gluten-Free and Nut-Free. It is an easy and fun treat to make with simple pantry staples and a food processor.

¾ cup brown rice flour or oat flour
1 cup rolled oats
1 tsp unsweetened cocoa powder
2 Tbsp coconut oil
1 tsp vanilla extract
½ cup maple syrup
1 cup 85% or 100% dark chocolate chips
¼ tsp fin sea salt

Steps:

  • Using a food processor, pulse all ingredients till combined and mixture turns a chocolate brown. Don't worry about over mixing.
  • Using a small ice cream scoop or tablespoon, form small even sized balls by rolling the batter in the palm of your hands.
  • Place in a container and chill in the refrigerator or freezer for 10 minutes to firm up. Store in the refrigerator for 2 weeks or freezer for 6-8 months.

Super simple and supremely chocolaty, these chocolate oatmeal cookies are stuffed to the brim with chocolate chip goodness.

1/2 cup 1 stick unsalted butter, room temperature*
1 cup packed dark brown sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/3 cup cocoa powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 1/2 cups rolled oats
1 cup dark chocolate chips (semi-sweet are also good)

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with a silicone mat (a non-stick sheet will also work just fine, I just like the ease of the silpats).
  • In the bowl of an electric mixer fitted with a paddle attachment, or in a large bowl using a hand mixer, beat together the butter and the brown sugar until pale yellow and fluffy, about three minutes.
  • Add egg and vanilla, and beat until blended.
  • In a medium bowl, whisk together the flour, cocoa powder, salt, and baking soda.
  • Add to the wet ingredients in the mixer bowl and mix just until combined. Add rolled oats and chocolate chips and mix just until combined, scraping down the sides as needed.
  • Scoop by tablespoonful onto your cookie sheet, spaced about two inches apart.
  • Bake for about 10 minutes, until cookie appears set and no longer wet. They might not look completely done, but they'll set up after they cool! If you like a crisper, less chewy cookie, let them cook for 2 - 3 minutes longer.
  • Remove from oven and let sit for about 5 minutes, then move to a wire rack to cool completely.
  • They keep nicely for 4 - 5 days in an airtight container at room temperature, or you can freeze them in a zipper bag for several months.

Everyone loves a good oatmeal cookie - and this one will take you straight to Morocco. Ras el hanout is a common Moroccan spice blend and translates to "top of the shop" in Moroccan Arabic, which suggests that the spices selected were the finest available in the merchant's shop at the moment. The fragrant and warming spices of ras el hanout pair beautifully with the sweetness of the oatmeal cookie and the sharpness of the dark chocolate. Because of the spice mixture, these cookies won't appear to brown much, so be careful not to overbake. You can use your favorite store-bought ras el hanout for your cookies or make your own blend (see tip).

2/3 packed cup/146 grams light brown sugar
1/2 cup/113 grams unsalted butter, melted and cooled to room temperature
1 large egg
2 teaspoons vanilla extract
1 1/2 cups/180 grams old-fashioned rolled oats
1 cup/120 grams all-purpose flour
1 teaspoon ras el hanout (see Tip)
1/2 teaspoon baking soda
1 teaspoon fine sea salt
1 cup/190 grams semisweet chocolate chips or chunks

Steps:

  • Heat the oven to 350 degrees and line a large baking sheet with parchment paper.
  • Combine the sugar, butter, egg and vanilla in a large bowl, and use a handheld electric whisk or a stand mixer fitted with the paddle attachment to mix all ingredients until smooth, about 1 to 2 minutes.
  • Add the oats, flour, ras el hanout, baking soda and salt; mix on a low speed until everything is just incorporated, about 30 seconds. Use a spatula to fold in the chocolate.
  • Scoop the dough in single heaping tablespoonfuls and transfer them to the lined baking sheet, leaving about 2 inches between each piece.
  • Bake until the edges are light golden brown and the center of each cookie is a bit soft, 10 to 12 minutes. Remove from the oven and leave the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely. Store in an airtight container for up to 4 days at room temperature.

½ teaspoon baking soda

1 cup white chocolate chips

Steps:

  • Preheat oven to 350 degrees F. Line cookie sheets with Reynolds® Parchment Paper; set aside.
  • Combine flour, ground oats and baking soda in a medium bowl. Set aside. Beat butter with an electric mixer on medium speed for 45 to 60 seconds in an extra large mixing bowl. Add the sugar and brown sugar and beat mixture until combined, scraping sides of bowl occasionally. Beat in egg and vanilla extract until combined. Slowly fold in flour mixture in several batches. Stir in chocolate chips and white chocolate chips with a wooden spoon.
  • Place dough by rounded tablespoons, 2 inches apart, onto parchment lined cookie sheets. (About 15 cookies per baking sheet.)
  • Bake in center of oven for 10-12 minutes or until the edges are set. Place cookie sheet on cooling rack for 2 minutes to cool. Slide the parchment sheets with baked cookies onto wire racks and cool completely.
