Egg and Vegemite Soldiers image

I grew up with vegemite soldiers, my grandmother made them for my mum, my mum used to make them for me, and then I made them for my kids, and I guess it's just one of those things that will continue. I still love this recipe every now and then and so do my teenage kids and DH. Yes we are all Happy Little Vegemites here!!!! And of course it goes without saying the spread MUST be vegemite........NO alternatives !!!!

2 eggs
2 slices hot toast, buttered
2 teaspoons vegemite

Steps:

  • Place eggs in saucepan, add enough hot water to cover eggs. Bring to boil and simmer for 3 minutes for soft boiled yolk.
  • Spread toast with Vegemite and cut into 2cm fingers(about 3 fingers)to make soldiers. Place eggs in egg cups, slice tops off eggs. Dip soldiers in the soft egg yolk.

Switch up your regular egg soldiers for these Vegemite covered fingers with avocado and a soft boiled egg. The avo and Vegemite compliment each other perfectly.

½ small ripe avocado
1 tsp lemon juice
2 eggs, at room temperature
2 slices wholegrain bread
Vegemite, for spreading

Steps:

  • Draw funny faces, names or messages with a texta on the eggs before cooking.
  • Halve avocado and scoop out the insides into a small bowl. Add lemon juice and mash with a fork. Set aside.
  • Place eggs into a saucepan of cold water and bring to a gentle simmer, stirring gently in a clockwise direction, over medium heat. Simmer for 3-4 minutes for soft-boiled.
  • Meanwhile, toast bread then lightly spread with Vegemite and top with avocado. Cut the toast into fingers.
  • Transfer eggs into egg cups and serve with avocado and Vegemite toast.
