EASY TURKEY MEATBALLS
We made this turkey meatballs recipe easy so that you can whip up a batch of tasty meatballs even on your busiest weeknight. Serve them with a classic bed of freshly cooked spaghetti and red sauce, or plate them up next to steamed veggies, accompanied by white or brown rice. They'd also make the perfect filling for a hearty meatball sandwich. Basically, there's no wrong way to eat these delicious easy ground turkey meatballs!

Steps:
- Heat oven to 375°F. Spray large cookie sheet with cooking spray.
- In large bowl, mix turkey, bread crumbs, cheese, onion powder, garlic salt and Italian seasoning. Add milk and egg; mix until just combined.
- Shape mixture into 15 balls of slightly less than 1/4 cup each. Place on cookie sheet.
- Bake 16 to 20 minutes or until thermometer inserted in center of meatballs reads at least 165°F. Serve with pasta and marinara sauce, or use in your favorite meatball dinner.

- Preheat broiler. Line a baking sheet with parchment paper and spray with cooking spray.
- In a bowl, add ground turkey, cumin, oregano, onion powder, garlic powder, parsley, egg, sesame oil, and green onions. Gently mix until well combined. Careful not to overmix or the meatballs won't be moist and tender.
- Form the mixture into meatballs. Place on lined baking sheet. Using a medium cookie scoop makes 15 meatballs, 1-inch in diameter. You can definitely make them in whatever size you'd like, just make sure they are all the same size so they cook evenly.
- Broil on HIGH for 10 minutes or until meatballs are cooked through.* Brush with more sesame oil on top for more flavor. Serve with your favorite side dish. Enjoy!

RECIPE: QUICK TURKEY MEATBALLS OVER GREENS

- Combine the turkey, onion, egg, breadcrumbs, cheese, garlic, salt, pepper, and parsley in a large bowl. Mix with your hands until all of the ingredients are evenly distributed.
- Begin heating a large pot of salted water for the cooking the greens while you shape and cook the meatballs.
- Roll the meat mixture into 1 1/4-inch meatballs and place on a tray or in a pan. You should have between 26 and 30 meatballs.
- Heat the olive oil over medium-high heat in a large skillet or sauté pan. Place the meatballs in the hot skillet and brown for 3 to 4 minutes on each side. Use tongs to gently rotate the meatballs so they brown evenly. (If your pan isn't large enough to brown all of the meatballs without them touching, cook them in batches and place them back on the cookie sheet once they've been browned. Then combine them back in the pan before simmering with the tomato sauce.)
- Reduce the heat to medium, add the tomato sauce, and cover the pan. Simmer the meatballs and sauce for another 10 minutes, or until meatballs are cooked through.
- While the meatballs are simmering, boil the greens in the salted water for 8 to 10 minutes, until tender. Drain. (You can also sauté or stir-fry the greens in a hot skillet with oil if preferred.)
- To serve, put greens on the plate and top with meatballs and sauce.

TURKEY MEATBALLS WITH FIRE-ROASTED GREEN CHILES

- Preheat the oven to 350 degrees F.
- Over an open flame, roast the hatch, poblano, serrano and Anaheim chile peppers. Roast until the skins are charred and black all over, 2 to 3 minutes per side. Remove chiles from the flame and immediately place in a large bowl and cover with plastic wrap. Set aside and allow to steam for 8 to 10 minutes. Once the peppers have cooled, scrape away and discard the charred skin, then remove the stems and seeds. Finely dice the flesh and set aside.
- In a small bowl, combine the milk and panko and set aside. In a medium mixing bowl, combine the ground turkey, onion, parsley, garlic, eggs, cumin, salt, black pepper, cayenne, panko-milk mixture and diced peppers. Mix all the ingredients together. Using your hands, shape the mixture into golf ball-sized meatballs, about 3 ounces each. Evenly space the meatballs on a baking sheet and place into the oven. Bake until firm and browned, 12 to 14 minutes.
- Place the meatballs on a large platter, garnish with cilantro and serve.
FAST AND FRIENDLY MEATBALLS
These oven-baked meatballs are fast and easy to prepare and very kid-friendly. You can serve them with pasta and spaghetti sauce or just eat them with ketchup, as my children do. Feel free to substitute lean ground beef for the ground turkey. The turkey should have at least 7% fat.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish with the olive oil, and place it in the oven while preheating.
- In a medium bowl, mix together the ground turkey, egg, and bread crumbs using your hands. Using an ice cream scoop if possible, form the meat into golf ball sized meatballs. Place about 1 inch apart in the hot baking dish. Press down to flatten the bottom just slightly.
- Bake for 15 minutes in the preheated oven, then turn them over, and continue baking for about 5 more minutes, or until somewhat crispy on the outside. Serve with pasta and sauce or however you'd like.
