2 cups rolled oats
3 ripe bananas, mashed
⅓ cup applesauce
½ cup raisins
¼ cup almond milk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir oats, bananas, applesauce, raisins, almond milk, vanilla extract, and cinnamon together in a bowl until evenly mixed; drop by the spoonful onto a baking sheet.
  • Bake in the preheated oven until the edges are golden, 15 to 20 minutes.

These sugar-free oatmeal and almond cookies hide very well just how good they taste and how good they are for you. And so very easy to make. It's coffee time!

1 cup steel-cut oatmeal ([120g])
1 cup blanched slivered almonds ([160g])
10 pitted medjool dates
1 teaspoon vanilla extract
1 egg (medium)
2 tablespoons coconut oil ((plus extra for greasing tray))

Steps:

  • Mixing: Pulse the oatmeal in the food processor for two minutes over medium speed. Add the remaining ingredients, and pulse until it turns into a firm dough.
  • Forming cookies: Make into 12 balls of approx. 1 ½" [4 cm] diameter.Place on a greased baking tray and press to flatten until they have an approx. thickness of ¼" [0.75 cm], or thinner for crispier cookies.
  • Baking: Bake in preheated oven to 350 ºF [175 ºC] for 20 mins, or until they turn golden brown. Remove from the oven and cool on a wire rack.
  • Serving: Serve freshly made, or store in a tight container for two days, or a week in the fridge.

2 c almond flour
1 c quick oats
1 c sugar
1/16 tsp almond extract
3 egg whites
1 c sliced almonds

Steps:

  • 1. Preheat oven to 350 degrees Fahrenheit
  • 2. Cover cookie sheets with parchment paper
  • 3. Lightly beat the egg whites for 2 minutes
  • 4. In a large bowl, combine Almond Flour, Sugar, Oats, Almond extract
  • 5. Add the beaten egg whites and mix to form a paste.
  • 6. Create 24 1-inch balls of dough
  • 7. Pour sliced almonds into a bowl.
  • 8. Dip each ball of dough into the slice almonds.
  • 9. Place the balls on the parchment paper and gently flatten each ball
  • 10. Bake for 15 minutes.
