TEXAS- RED CHILI CON CARNE

This recipe was given to my wife, Glenda, by Bob Keith, one of her old Houston friends, now deceased, a Montana native transplanted to Texas. I felt I had to include this recipe appease No-Bean chili afficionados and to offset my recipe for Texas Chil Beans. This IS a very good no-beans recipe, though I prefer to substitute 3-4 Poblano peppers for the bell peppers.

5 lbs coarse ground beef (chili beef)
5 garlic cloves, chopped
1 large onion, diced
2 bell peppers, seeded and diced
5 stalks celery, diced
1 jalapeno pepper, minced
4 tablespoons ground cumin (2 oz)
8 tablespoons dried oregano, lightly crushed (4 oz)
4 tablespoons chili powder (2 oz)
4 tablespoons fresh ground black pepper (2 oz)
2 tablespoons salt (1 oz)
6 tablespoons sweet paprika (3 oz)
2 cups water
1 (8 ounce) can tomato paste
4 tomatoes, skinned seeded, and diced
0.5 (12 ounce) bottle lone star beer

Steps:

  • Brown meat in a large, heavy bottom pot, and drain off grease.
  • Add garlic, onion, bell pepper, celery, jalapeno, cumin, oregano, chili powder, black pepper, salt, and paprika.
  • Add 2 cups water, and let simmer for 30 minutes.
  • Add tomato paste, diced tomatoes, and beer.
  • Cook for 30 minutes or until desired consistency is reached.
  • According to Bob, DO NOT ADD BEANS OR RICE!
  • This is considered a felony offense by many Texans!
  • Beans may, however, be served on the side, if desired.

This recipe produces the most FLAVORFUL red chile con carne that rivals any Mexican restaurant. Since it's made in the crockpot and uses prepared store-bought chili paste, it's super simple and foolproof! (Finding the chile paste is half the battle...I use a prepared chili paste that is found in the freezer section of most Arizona grocery stores, but it may not be available nationwide [I've had trouble finding it online]. If you can't find it at your grocery store, you're better off trying to make your own with dried New Mexico chile pods softened in hot water and processed till smooth [no salt or anything else should be added]...there are instructions everywhere online. Enchilada sauce is NOT a recommended substitution as it has flavorings and salt added. You just want pure chile paste.) Yield amount is approximate.

4 lbs roast (any kind is fine)
2 tablespoons canola oil
1 medium onion, chopped
3 tablespoons chili powder
1/2 tablespoon cumin
1 teaspoon garlic powder
1 (8 ounce) can Mexican tomato sauce (El Pato brand)
8 ounces beef broth
8 ounces chili paste
salt and pepper
hot sauce (I use Tapatio brand)
2 (4 ounce) cans diced green chilies

Steps:

  • Trim the meat of any visible fat and season with salt and pepper.
  • Heat oil in a large skillet over medium-high heat. Place roast in the skillet and brown quickly on all sides. (This step can be skipped if cooking from frozen, or if you're short on time.).
  • Transfer the meat to a crockpot and add all of the remaining ingredients except for the green chilies and hot sauce.
  • Cook on low for 8 hours.
  • One hour before done, shred the roast with a fork and stir in the green chiles and hot sauce to taste.
  • Serve with grated cheddar cheese in a warmed tortilla.

8 Mexico Chilies (cleaned)
4 Garlic Cloves (minced)
1 medium Onion (chopped)
1 can Tomatoes (diced)
2 lbs. Beef Chuck Roast
2 cup Chicken or Beef Broth
1 teaspoon Butter
2 teaspoons Olive Oil
½ teaspoon ground Coriander
½ teaspoon ground Cumin
¼ teaspoon Oregano
Salt and Pepper (for taste)

Steps:

  • Take a blender and put hot broth and chilies in it.
  • Wait for the chillies to get softened for about 10 minutes.
  • Meanwhile, sauté the garlic and onions in a pan until they are soft. Add these onions and garlic into the blender. Also, add chilies, cumin, tomatoes, coriander, salt, and pepper to it. Blend this mixture until it becomes smooth.
  • Now, heat olive oil in a pan and add butter to it. Sauté the chuck roast and chilies in it for about 3-4 minutes.
  • Then, season the chick roast with salt, Mexican oregano, and pepper. Remove the pan from heat and pour the blended sauce into this pan. Mix it well with the chuck roast.
  • Take an instant pot and transfer the chuck roast and the sauce in it. Put on its lid and cook it for 25 minutes. When done, let the pot to depressurize on its own.
  • Add salt and pepper as per your taste. Serve it hot along with freshly cooked tortillas.

For Red Chile Sauce
10 chile California (guajillo or New Mexico, stems and seeds removed)
Grapeseed or olive oil
1 medium sweet onion (sliced)
4 to 6 cloves garlic (sliced)
1 teaspoon cumin seeds
2 cups beef or chicken broth
Salt and pepper to taste
2 tablespoons grapeseed oil or olive oil
2 pounds cube chuck (for stew)
salt and pepper
1 1/2 to 2 more cup beef or chicken broth
1 more teaspoon cumin seeds (crushed)
1 teaspoon corinader seeds (crushed)
1 teaspoon mexican oregano (crushed)
1 teaspoon chile piquin (crushed (or red pepper flakes))

Steps:

  • Preheat 3 tablespoons of oil to medium heat for a few minutes. Add the dried chiles and cook for 2 to 3 minutes. Add the onion, garlic and cumin seeds and cook for 3 more minutes. Add the 2 cups of broth and cook for 5 to 7 more minutes or until dried peppers have become soft.
  • Transfer all of the ingredients from the skillet with chiles into the blender. Season with salt and pepper to taste, using a kitchen towel to hold down the lid to the blender, blend on high until smooth. Taste for salt. Strain chile sauce into a large bowl using a wire mesh strainer. Set aside.
  • In that same skillet, add 2 more tablespoons of oil and preheat for a few minutes. Season the beef with salt and pepper and place into hot oil. Cook and sear until golden brown on most sides. Add the strained chile sauce, remaining broth and spices. If you like the a carne con chile with more broth, add all of the remaining broth. Bring to a boil, reduce to a simmer. Taste for spices and cover partially while is slow simmers for the next 2 to 2 1/2 hours or until the beef becomes tender. Serve with your favorite sides and warm, homemade flour totillas.

2 1/2 pounds beef chuck, cut into 1 inch cubes
2 1/2 pounds pork shoulder, cut into 1 inch cubes
1 tablespoon kosher salt plus more to taste
Freshly ground black pepper
1/3 to 1/2 cup olive oil
2 large Spanish onions, chopped
10 large cloves garlic, minced
1/4 cup New Mexico red chile powder
2 tablespoons ancho chile powder
1 tablespoon ground cumin
2 teaspoons oregano, crushed (preferably Mexican)
6 cups beef or chicken broth, homemade or low-sodium canned (see note)
Two 15 1/2-ounce cans pinto beans, drained and rinsed
Serving suggestions: White rice, sour cream, chopped cilantro (fresh coriander), shredded cheddar, minced fresh or pickled jalapeno peppers

Steps:

  • Pat the meat dry with a paper towel and season with the salt and pepper. Heat 2 tablespoons of the oil in a large stew pot or Dutch oven over medium-high heat. Sear the meat, in small batches, until well browned, adding more oil to the pan if needed. Transfer meat to a bowl and reserve.
  • Discard all but 2 tablespoons of the oil from the pan. Saute the onions over medium heat for 10 minutes, scraping up the browned bits with a wooden spoon from the bottom of the pan. Add the garlic and saute for 2 minutes more. Stir in the chili powders, cumin, and oregano and cook for 2 minutes. Whisk in 5 cups of the stock. Add the meat and any accumulated juices to the pot. Bring to a gentle simmer. Season the chili with salt and pepper to taste, and stew the meat with a cover slightly ajar until almost tender, about 3 hours.
  • In a food processor or blender puree half of the beans with the remaining stock. Add the bean mixture to the chili along with the whole beans. Simmer for 1 hour more or until the meat is tender. Season with salt and pepper to taste and serve with rice and selections of condiments, like sour cream, chopped cilantro, shredded cheddar, minced fresh or sliced pickled jalapenos.

3 white onions, quartered
8 tomatillos, peeled and washed
4 tomatoes, quartered
8 cloves garlic, peeled
1/2 ounce ancho chiles, stemmed, seeded, and de-veined
1/2 ounce gaujillo chiles, stemmed, seeded, and de-veined
1 quart chicken stock
1 tablespoon ground cumin
1 tablespoon ground coriander
1 tablespoon ground mustard seed
1/4 cup extra-virgin olive oil
Salt and pepper
1 (1 1/2 to 2 pound) flank steak or brisket
2 cups water
12 tortillas
Shredded Monterey jack

Steps:

  • Preheat the oven to 500 degrees F.
  • On a sheet tray or baking pan, place onion, tomatillos, tomatoes, and garlic and drizzle with olive oil. Place under the broiler or roast in a preheated 500 degree F oven until the vegetables start to get a little charred on the outside. Remove and set aside. On another sheet tray or baking pan, place the dried chiles, and toast in a 500 degree F oven for 1 minute or until the chiles start to release some smoke. Remove and plunge in to bowl with hot water and set aside.
  • In a blender, begin pureeing the chiles and roasted vegetables in batches with chicken stock until smooth. Season with salt and pepper and set aside.
  • In a saute pan, toast the cumin, coriander, and mustard for 3 minutes or until they start to smoke. Remove from pan and place in a small mixing bowl. Add the olive oil, salt, and pepper, to make a paste. Rub this paste all over the piece of flank steak and allow to marinate for 30 minutes.
  • Preheat the oven to 350 degrees F. Preheat a grill or grill pan on high.
  • Grill the flank steak for 3 minutes on each side. Place the flank steak in a roasting pan and pour the pureed chile sauce over it. Add 2 cups of water, cover with foil, and cook in the oven for 1 hour until the meat becomes flaky.
  • Remove the meat from the pan, shred the meat, and reserve the sauce. Place 6 of the tortillas onto a baking sheet. Put a small amount of the shredded meat on the tortilla and spoon over some of the sauce. Top with some cheese. Repeat with the remaining ingredients. Bake for 5 minutes and serve.

4 lbs boneless beef chuck roast, diced (or ground for chili)

Steps:

  • In a large dutch oven, heat the oil and cook the onion over medium heat until it is soft.
  • Add the garlic and cook until it's transparent.

  • Remove each batch to a large bowl as it's cooked.
  • Stir and cook until the meat is browned, then put all the meat back in the pot and add the vinegar, coffee and enough water just to cover the meat.

  • Skim off any fat on the surface.
  • Add the cornmeal and stir in well.

3 lbs chuck steaks, coarsely ground
1 cup Wesson Oil or 1 cup suet
black pepper
3 ounces Gebhardt® Chili powder
6 tablespoons cumin
2 tablespoons msg
6 garlic cloves, minced
2 medium onions, chopped
6 dried chili pods, seeded and de-stemmed, boiled 30 minutes in water or 1 (3 ounce) bottle new mexico peppers
1 tablespoon oregano, brewed in Budweiser beer, like tea
1/2 cup Budweiser beer
2 tablespoons paprika
2 tablespoons cider vinegar
3 cups beef broth
4 ounces green chilies, diced (Ortega brand)
14 ounces stewed tomatoes (or to taste)
1 teaspoon Tabasco sauce (or to taste)
2 tablespoons masa harina flour

Steps:

  • Brown meat in oil or fat, adding black pepper to taste. Drain meat and add chili powder, cumin, MSG, garlic and chopped onion.
  • Cook for 30 - 45 minutes using as little liquid as possible. Add water only as necessary.
  • Stir often.
  • Remove skins from boiled chile pods.
  • Mash the pulp and add to meat mixture. Strain oregano tea, then add to meat mixture along with paprika, vinegar, 2/3 of the beef broth, green chiles, stewed tomatoes and Tabasco sauce. Simmer 30 - 45 minutes.
  • Stir often.
  • Dissolve masa flour into remaining beef broth then pour into chili.
  • Simmer another 30 minutes, stirring often.
  • Makes 1 potful.

1 green bell pepper, chopped

2 beef bouillon cubes
⅔ cup red wine

1 (12 ounce) can tomato paste

  • Heat oil in a large saucepan over medium heat. Cook green pepper, and onion, until softened. Add the ground beef and cook until browned. Crumble over bouillon cubes, and stir in wine; continue to cook for a few minutes. Stir in chopped tomatoes, garlic, and tomato paste. Season with paprika, chili powder, cayenne pepper, basil, oregano, and parsley. Stir in salt and pepper.
  • Bring to a boil over high heat. Reduce heat to medium low. Cover, and simmer for 90 minutes, stirring occasionally.
  • Stir in kidney beans, and hot pepper sauce. You can add the reserved tomato juice if more liquid is needed. Continue to simmer for an additional 30 minutes.
  • In a small bowl, whisk together the flour, corn meal, and water until smooth. Stir into chili, and cook for a further 10 minutes, or until chili has thickened up.

Notice that the beans and beef are cooked together for an hour before the onions, scallions, garlic, jalapeño, and an assortment of herbs and spices are added; then the mixture is cooked for another hour. This gives the dish a fresher flavor than adding all the seasoning ingredients at the beginning. Spoon this soupy chili over boiled rice, with a salad of Romaine and a creamy yogurt dressing for a refreshing complimentary taste.

8 ounces extra lean ground beef (10-percent fat or less)
1 1/2 teaspoons salt

  • Add the onions, scallions, garlic, jalapeño, tomatoes (with sauce), thyme, cumin, chili powder, bay leaves, and cilantro stems. Bring the mixture to a boil over high heat, reduce the heat to low, cover, and boil gently for an hour. (The mixture will still be somewhat soupy).
  • To serve, spoon the chili over the rice, and sprinkle the cilantro leaves on top.
