3 cups fresh red currants, washed and stemmed
sugar
6 eggs, separated
1 pinch salt
1/2 cup sugar
1 1/2 teaspoons vanilla

Steps:

  • Sprinkle a little sugar on currants and stir gently to mix.
  • Let stand at room temperature 30 minutes, or until syrup begins to form
  • Meanwhile, beat egg whites and salt until foamy.
  • Gradually beat in sugar, beating until egg whites form stiff peaks.
  • Beat egg yolks until thick.
  • Mix vanilla into egg yolks.
  • Gently fold egg whites into yolks.
  • Spoon currants into stemmed glasses, reserving a few for garnish.
  • Spoon egg mixture over currants.
  • Top with reserved currants.

2 egg whites
6 tablespoons sugar
4 -6 teaspoons brandy

Steps:

  • Beat the egg yolks and whites with an electric mixer until thick and lemon-colored. Add the sugar gradually, continuing to beat.
  • Use sherbet glasses, and place 1 tsp of brandy in each. Gently spoon the egg mixture over this.
