This homemade home fries recipe is made with uncooked cubes of red potatoes (skin on or off), onions, and red and green bell peppers fried until brown.

4 large red potatoes (washed, unpeeled, and cut into 1/2-inch dice)
2 tablespoons butter
1 large yellow onion (peeled and chopped)
2 cloves garlic (peeled and crushed)
1 ​large red bell pepper (washed and cut into 1/2-inch dice)
1 ​large green bell pepper (washed and cut into 1/2-inch dice
1/2 teaspoon paprika
Kosher salt (to taste)

Steps:

  • Gather the ingredients.
  • Heat a cast-iron skillet or another heavy-bottomed pan over medium heat.
  • Melt the butter, then add the onion and garlic and sauté until slightly translucent, about 2 minutes.
  • Add the diced red and green peppers and cook for another 2 minutes, stirring with a wooden spoon.
  • Add the potatoes and cook, stirring frequently, for another 15 to 20 minutes or until the potatoes are tender and lightly browned.
  • Season to taste with paprika and ​kosher salt.

1 1/2 pound Russet potatoes, washed and scrubbed clean
2 tablespoon olive oil, divided
1 tablespoon unsalted butter
1 medium onion, diced
1 red bell pepper, diced
1 small jalapeno, diced
1/2 teaspoon kosher salt
1/4 teaspoon pepper
1/2 teaspoon garlic powder
1 teaspoon smoked paprika

Steps:

  • Cut the potatoes into half inch cubes. In a medium saucepan add the potatoes and cover with cold water adding a few pinches of salt. Bring the water to a boil then cook for 1-2 minutes longer. Potatoes should be slightly firm and not mushy. Drain the potatoes and shake off excess water, let cool for 5 minutes.
  • While the potatoes are cooking heat a large skillet over medium heat, add 1 tablespoon of olive oil and when hot add the onions, bell pepper and jalapeno. Saute for about 5 minutes. Add a few pinches of salt and pepper. Set aside.
  • In another large skillet heat the oil and butter. Add the potatoes and season with the salt and pepper. Spread the potatoes in a single layer and cook for 8-10 minutes without stirring, you want the bottoms to be browned and crisp.
  • Add the onions, bell pepper mixture to the potatoes. Add the garlic powder and paprika to the pan and stir to combine.
  • Serve hot.

The addition of Tabasco sauce sets this apart from most other marinated mushroom recipes. ZWT REGION: USA.

1 lb button mushroom (leave them whole)
1 medium onion
2/3 cup cider vinegar
1/2 cup salad oil (has to be salad oil)
1 garlic clove (minced)
1 tablespoon sugar
1 1/2 teaspoons salt
fresh ground pepper (to taste)
2 tablespoons water
1 dash Tabasco sauce (more if you are brave)

Steps:

  • Peel and slice onion into thin rounds, put into a plastic container with a lid.
  • Wash and pat dry mushrooms, add to onion rounds.
  • In a saucepan mix remaining ingredients and bring to boil, mixing well.
  • When slightly cooled, pour over the mushroom/onion mixture and when cool enough, place in the fridge for 1-2 days to marinate.
  • Variation: fresh herbs like oregano, thyme and sage can also be added according to preference.

20 scallops
2 tablespoons white wine
2 tablespoons Dijon mustard
1/4 teaspoon salt
fresh ground pepper
10 slices bacon
wooden toothpick

Steps:

  • Clean scallops and pat dry.
  • Mix together wine, mustard, salt and pepper, add the scallops and coat with the mixture. Marinate for 1 hour in a covered container in the fridge.
  • Preheat the oven to 250 F (130 C).
  • Place the bacon slices on a baking sheet in a single layer and cook for 10 minutes or until soft, drain on paper towels and then cut each slice in half crosswise.
  • Increase the oven temperature to 350 F (180 C ) , drain the scallops and wraps a bacon strip around each one, fastening with a toothpick.
  • Place the scallops in the baking tray and bake 8-10 minutes, basting with the juice they release.
  • Serve immediately once cooked.

2 pounds potatoes, peeled and diced into 1/4-inch cubes
1 cup butter
3/4 cup diced onion
2 tablespoons Home Fries Seasoning Mix
butter, for serving (optional)
Home Fries Seasoning Mix:
1 cup salt
1/2 cup paprika
1/4 cup ground black pepper
1/4 cup ground white pepper
1/2 cup onion powder
1/2 cup garlic salt

Steps:

  • Cook the potatoes in a vegetable steamer over simmering water for 20-30 minutes, until just tender. Melt the butter in a heavy skillet, and add the onions and 1 tablespoon of the seasoning mix. Sauté over medium heat until the onions are limp and translucent, about 10 minutes. Do not let them brown. Add the potatoes, and sprinkle with the remaining 1 tablespoon seasoning mix. Sauté over medium heat until golden brown and crisp, about 15 minutes. Dot with more butter for added flavor. For Home Fries Seasoning Mix: Combine all the ingredients in a large jar or other covered container. Shake to mix well. This will last up to 6 months.
