NAPA VALLEY RED WINE APPLESAUCE
This is an adopted recipe that I have not yet tried. Comments from the original chef are: "This is excellent with barbecued pork. From California The Beautiful Cookbook."

Steps:
- Combine apples, red wine, bay leaf and sugar (adjust the amount of sugar based on your preference and the tartness of the apples) in a large saucepan.
- Cover and cook over medium heat for about 15 to 20 minutes.
- Mash the apples with the back of a spoon as they begin to soften.
- Remove the bay leaf.
- For thicker applesauce, boil uncovered and stir constantly until it has reduced slightly.
- Use a food mill, if you want a smoother sauce.
- Add butter and adjust the sweetness by adding more sugar if necessary.
APPLESAUCE

- Throw the apples, apple juice and lemon juice into a pan and bring it to the boil over medium-high heat. Lower the heat and simmer until the apples are soft, about 15 minutes. Stir through the sugar and mix until melted. Add the cinnamon and stir through.
- Puree the mixture in a food processor, blender or food mill. If not using right away, leave to cool and then refrigerate.

RED WINE APPLESAUCE

- Peel and core apples; cut into large wedges and combine in saucepan with all other ingredients. Bring mixture to a boil and simmer, covered, 15 minutes or until tender. Remove cover and simmer until most liquid is evaporated, about 5 more minutes. Mash with a potato masher, leaving some chunks. Transfer to a bowl and chill overnight.
THE BEST HOMEMADE APPLESAUCE
After tasting the pure apple flavor of this homemade sauce, you just might never go back to the store-bought kind. Supermarket applesauce can be loaded with added sweeteners and flavorings. We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

- Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
- Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
- Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.

Stir cinnamon candies and sugar into the apples and water; return mixture to a simmer and cook until the candies melt, about 15 minutes. Remove pot from heat and set aside until the mixture cools, about 15 minutes.
- Mash apples with a potato masher until no large chunks remain. Alternately, you can blend the mixture with an immersion blender to get a smoother applesauce.

- Place apples, sugar, lemon juice, cinnamon, and 1/2 cup water in a large saucepan, and cook over medium heat until very tender, stirring often so that apples do not scorch, about 45 minutes. If necessary, add additional water to apple mixture, up to 1 cup, while apples cook.
- Remove the mixture from heat. Using a potato masher, mash into sauce, leaving some of the chunks. Let cool. If making ahead of time, chill, covered, until ready to use. Allow to warm to room temperature before serving.

- Combine apples, cinnamon stick, lemon juice, salt, and 1/4 cup water in a large Dutch oven or other heavy pot. Scrape in seeds from vanilla bean and add pod. Cover pot and cook over medium-low heat, occasionally stirring with a wooden spoon and checking to make sure apples are not scorching (add a splash of water if they are), until apples are soft and falling apart, 35-45 minutes. Uncover pot and let apples cool slightly.
- Working in batches, pass apples through food mill fitted with a medium disk into a large bowl; discard solids. If sauce is watery, return to pot and simmer over medium heat until thickened.
- Do Ahead:
- Applesauce can be made 4 days ahead. Let cool; cover and chill.
