- Place ice and fresh blueberries, if using, into a tall glass. Pour in blueberry simple syrup and club soda. Stir to combine.

BLUEBERRY SODA

Yield about 3 cups blueberry syrup, enough for 12 drinks

- Place the blueberries and the water into a medium saucepan, set over medium-high heat and bring to a boil. Reduce the heat to low and simmer for 15 minutes. Remove the saucepan from the heat and pour the mixture into a colander lined with cheesecloth that is set in a large bowl. Allow to cool for 15 minutes. Gather up the edges of the cheesecloth and squeeze out as much of the liquid as possible. Discard the skin and pulp. Return the blueberry juice to the saucepan along with the sugar and lime juice. Place over medium high heat and stir until the sugar has dissolved. Bring to a boil and cook for 2 minutes. Remove from the heat and transfer to a heatproof glass container and place in the refrigerator, uncovered, until completely cooled.
- To Serve: Combine 1/4 cup of the liquid with 8-ounces of carbonated water and serve over ice.
REFRESHING BLUEBERRY SODA
Summer favorite that can easily be translated into freezer pops. Fresh mint leaves could also be used instead of basil.

- Bring 1 cup water to a boil in a saucepan. Stir the sugar and basil into the water and return to a boil; cook at a boil for 10 minutes and immediately remove from heat. Chill in refrigerator until slightly cooled, about 10 minutes.
- Blend the blueberries, 1/2 cup water, and the lemon juice in a blender until smooth; pour into a pitcher. Remove the basil leaves from the simple-syrup mixture; discard the basil. Stir the syrup into the blueberry mixture. Add the carbonated water to the mixture and stir gently.

BLUEBERRY SODA - A REFRESHING HOMEMADE DRINK
This homemade blueberry soda is made with fresh blueberries and lemons. It makes a perfect drink on a hot summer day and even at parties.

- Measure 150ml water (at room temperature) in a small pot.
- Add sugar and cook it over low heat until it is completely dissolved.
- Add the blueberries and continue cooking until the blueberries turn soft.
- Remove the syrup from heat. Strain it into a measuring jug. Press the blueberries with a spoon to mash them and squeeze out all the juice.
- Let the syrup cool down completely and then strain the lemon juice in. Mix well.
- Pour the syrup into a glass jar or bottle and refrigerate until ready to use.
- To make the blueberry soda, pour the above blueberry syrup into a 2 liters pitcher.
- Add the chilled soda water and mix well.
- Add ice cubes if you wish and serve immediately.

- In a mixing bowl, add the flour and brown sugar; stir to mix.
- With a pastry blender, cut in the butter until mixture resembles coarse meal.
- Press 1 1/3 cup of mixture onto the bottom of an ungreased 8-inch square baking pan.
- In another bowl, mix together the cinnamon, baking soda, and salt.
- Add the remaining crumb mixture, sour cream, egg, and vanilla; stir to blend.
- Add blueberries; stir to combine.
- Spoon filling mixture evenly over the crust.
- Bake at 350 degrees for 35 minutes.
- Cool in the pan.
- Sprinkle with powdered sugar.
- Cut into bars and serve.

BLUEBERRY CORNMEAL GALETTE
I like making pie just as much as the next guy likes making pie, but I like making a galette even more. They're more fun, and I like the freedom that the rustic appearance affords. But mostly, I think I just enjoy the higher crust to fruit ratio. Serve with ice cream.

- Combine flour, cornmeal, and salt in a bowl with a pastry blender. Add cold butter and combine with the pastry blender until coarse crumbs form. Drizzle in cold water, a little at a time, stirring to combine with a fork, until dough comes together.
- Turn dough onto a work surface and bring together with your hands; press into a disk of dough.
- Wrap dough in plastic wrap and chill in the refrigerator for about 30 minutes.
- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper or a Silpat® baking mat.
- Combine blueberries, sugar, lemon juice, lemon zest, and cornstarch in a bowl.
- Remove dough from the refrigerator and roll on a lightly floured work surface into a 15-inch circle, about 1/8 inch thick.
- Place blueberry filling into the center of the dough, leaving 3 to 4 inches of space around the border of dough. Fold dough up and around the berries, rotating a few inches and make another fold, overlapping the first; repeat around the dough until pleats are formed.
- Combine beaten egg and water in a small bowl and brush on the dough. Sprinkle on demerara sugar.
- Bake in the center of the preheated oven until golden, about 45 minutes.
