3 1/2 cups fresh or frozen blackberries, (one 16-ounce package)
¼ cup sugar
¼ cup water
1 tablespoon lemon juice

Steps:

  • Bring blackberries, sugar and water to a simmer in a medium saucepan, stirring occasionally. Simmer over low heat for 5 minutes. Strain through a fine sieve into a bowl. Stir in lemon juice. Cover and refrigerate until chilled.

I love this recipe with tenderloins, but backstrap or even a well-cut leg steak would work. And of course this will work with duck, goose, beef or lamb, too. You'll notice I use both clarified and regular unsalted butter here. I like the clarified because it has a high smoke point and is better for searing than regular butter; milk solids burn easily. You can buy it in many markets labeled as Indian ghee, or you can make your own. Or use another fat or oil. As for the mushrooms, I used dried morels. Any good dried mushroom will do. You want that mushroom soaking water, so don't use fresh mushrooms. Port wine can be a nicer kick in the sauce than red wine, but it's strong -- if you use Port instead of red wine, use only 1/4 cup. Finally, remember that this is a savory sauce, despite the blueberries (or huckleberries). If this is weird to you, add some sugar.

Tenderloins from a deer (or 1/2 pound venison backstrap)
Salt
2 tablespoons clarified butter, (regular unsalted butter, lard, duck fat or vegetable oil)
3 tablespoons unsalted butter
1 small onion, (peeled and sliced root to tip)
1 garlic clove, (minced)
3/4 ounce dried mushrooms, (wild if possible, reconstituted in 1 cup hot water)
1/2 cup venison stock or beef stock
1/2 cup red wine
1/2 cup blueberries or huckleberries, (fresh or thawed)
1 teaspoon fresh rosemary (minced)
Black pepper to taste
Malt or red wine vinegar (to taste)
Sugar (optional)
2 large russet potatoes, (peeled and diced)
Salt
2 or 3 three tablespoons unsalted butter
1 or 2 heaping tablespoons sour cream or heavy cream
1 cup chopped spinach or other greens

Steps:

  • Take the venison out of the fridge and salt it well. Let it set on the cutting board while you rehydrate the mushrooms and boil the potatoes for the colcannon.
  • Put the diced potatoes into a pot of salted water and bring to a boil. Simmer until tender. Drain the potatoes and put them back in the pot. Turn the heat to low under the pot and let the potatoes steam for a few seconds.
  • Beat in the butter, sour cream and chopped vegetables. You want nice mashed potatoes with green streaks. Add salt to taste, cover the pot, turn off the heat and set aside.
  • Get a large saute pan and put 2 tablespoons of unsalted butter into it. Turn the heat to high and when the butter is hot, add the sliced onion. Saute over medium-high heat until browned along the edges, about 4 to 5 minutes. Turn off the heat, remove the onions and set aside.
  • Wipe the pan with a paper towel. Pat the venison dry and put the clarified butter into the pan. Set it over high heat until the butter is very hot, but not smoking. Add the venison and sear until medium-rare. If you don't know to tell when the meat is done, use the finger test for doneness. When the venison is done, move it to rest on a cutting board.
  • Return the onions to the pan, add the mushrooms and garlic and saute over medium-high heat for 2 to 3 minutes, stirring often. Sprinkle some salt over everything and add the wine.
  • Boil this down until it's almost gone, using a wooden spoon to stir up any browned bits on the bottom of the pan. Add the stock and mushroom soaking water (strain the water if there is any debris in it) and boil this down by two-thirds.
  • Add the huckleberries or blueberries and cook another minute or two, Add black pepper, salt and vinegar to taste. If you want it sweet, add some sugar now; start with a teaspoon or two. Garnish with the rosemary.

1 3/4 cups beef or veal stock
1 chopped shallot
1 3/4 cups sweetened cranberry juice
Juice of 1 lemon
2 teaspoons sugar
10 whole, peeled shallots
Salt and pepper to taste
2 stalks celery, each cut into 5 pieces
1 tablespoon butter
2 teaspoons cornstarch
3/4 cup cream
1/2 cup lingonberries, raspberries or cranberri
4 tablespoons butter
1 1/2 pounds mushrooms, finely chopped
3 shallots, finely chopped
Salt and pepper to taste
4 pounds fillet of reindeer, venison or beef
2 tablespoons vegetable oil

Steps:

  • To make the sauce, combine the stock, shallot and 1 cup of the cranberry juice in a small saucepan. Simmer until reduced to about 1/3 cup. It will be very thick and syrupy. Set aside.
  • In another small pan, combine the remaining 3/4 cup cranberry juice, lemon juice and sugar and bring to a boil. Add the whole shallots, season with salt and pepper, cover the pan and simmer until the shallots are tender, about 15 minutes. Set aside.
  • Sauté the celery in the butter until crisp-tender. Add the celery to the pan with the reduced stock, along with the whole shallots and the juice they cooked in. Set aside.
  • To make the meat, melt 2 tablespoons of the butter in a large skillet over medium-high heat and add half the mushrooms and half the shallots. Season with salt and pepper and cook, stirring frequently, until all the moisture from the mushrooms has evaporated, about 10 minutes. Transfer to a bowl. Wipe out the skillet, melt the remaining butter and season and cook the remaining mushrooms and shallots.
  • Preheat the oven to 400 degrees. (If using beef fillet, which is much larger and thicker than reindeer or venison, have your butcher tie it and cut it into at least 2 sections.) Using the handle of a heavy wooden spoon, make a tunnel as wide as possible through each piece of meat. Fill with the mushroom mixture.
  • Season the meat well with salt and pepper. Heat the vegetable oil in a large ovenproof skillet or roasting pan over high heat. Sear the meat on all sides. Transfer to the oven and roast until medium rare (about 8 minutes for reindeer and venison; longer for the beef fillet). Remove and allow to rest for 10 minutes.
  • To finish the sauce, dissolve the cornstarch in 1 tablespoon of water and add it and the cream to the saucepan. Simmer for a few minutes, stir in the berries and season with salt and pepper. Thin with more stock if necessary.
  • Slice the meat and serve it with the sauce.

3 medium Yukon gold potatoes
Kosher salt
3 tablespoons butter, room temperature
1 teaspoon ground nutmeg
1 tablespoon heavy cream, plus more if needed
Salt and freshly ground white pepper
2 venison tenderloins
Salt and freshly ground black pepper
3 tablespoons grapeseed oil
1 cup red wine
1 cup demi glace
1 small red onion, halved
2 sprigs fresh thyme
1 sprig fresh rosemary
1 tablespoon juniper berries
1 teaspoon sugar
1/3 cup blueberries
Salt and freshly ground black pepper
2 tablespoons butter

Steps:

  • For the potatoes: Peel the potatoes and cut into 1-inch chunks. Place the potatoes in a large saucepan of cold, salted water. Bring the water to a boil over high heat. When the water boils, lower the heat to medium and simmer the potatoes until they're fork tender, 15 to 20 minutes.
  • For the venison: Season both sides of the venison tenderloins with salt and pepper.
  • Heat a large saute pan over high heat and add the oil. When the oil is hot, but not smoking, add the tenderloins. Reduce the heat to medium and sear the tenderloins on all sides, 3 to 4 minutes per side. Remove the loins from the pan and let rest until ready to serve.
  • For the potatoes: Drain the potatoes well and transfer to a bowl. Mash the potatoes until there are no lumps. Stir in the butter, nutmeg, cream, salt, and white pepper. Stir until creamy, adding more cream if needed. You want smooth, creamy potatoes. Taste and season with more salt and white pepper, if needed.
  • For the sauce: In a small saucepan, combine all of the ingredients, except for the blueberries and butter. Bring the mixture to a boil over medium-high heat. Lower the heat, add the blueberries, and simmer until reduced a little and thickened, 8 to 10 minutes. Remove from the heat, strain the sauce back into the saucepan, season with salt and pepper, and then whisk in the butter. Hold warm until serving.
  • To plate: Spoon potatoes into the center of the plate. Slice the venison loin into 1/2-inch thick slices on a bias. Lay slices over potatoes. Top with sauce.

2/3 cup flour
1/2 teaspoon salt
1/2 teaspoon lemon pepper
1 teaspoon celery seed
1/4 cup corn oil (or olive)
2 tablespoons butter or 2 tablespoons margarine
1/3 cup yellow onion, chopped
3 cups beef or 3 cups chicken bouillon
1 teaspoon soy sauce
1/4 cup cooking sherry
1/2 teaspoon crushed rosemary
12 large mushrooms, sliced
1 (10 3/4 ounce) can cream of mushroom soup
8 ounces sour cream
1 (12 ounce) package egg noodles (or 16-oz. pkg.)

Steps:

  • Mix flour, salt, lemon pepper, and celery seed in bowl.
  • Add cubed meat and knead meat into flour mixture.
  • Heat corn oil and one tbsp butter in a skillet over medium heat.
  • Shake excess flour from meat and set pieces into heated oil; brown meat on each side.
  • When meat is almost brown on remaining side, pour chopped onions over meat.
  • Cover five minutes, then mix with a wooden spoon.
  • Add one cup beef (or chicken) bouillon and soy sauce to meat.
  • Simmer 15 minutes on low heat, stirring occasionally.
  • Then add a second cup of the beef bouillon, cooking wine and rosemary leaves to the meat mixture.
  • Allow the meat to simmer on low heat foran additional 30 to 35 minutes.
  • Stir occasionally.
  • Don't be in a hurry, as cooking time affects the tenderness of the meat.
  • When done, the meat should be covered with a thick, brown gravy.
  • Using a separate skillet (preferably stainless steel), combine the remaining cup of beef bouillon and 1 tbsp butter.
  • Heat to simmer.
  • Add fresh, sliced mushrooms and simmer five minutes.
  • Meanwhile, prepare egg noodles in a separate pan, following instructions on label.
  • Add mushroom soup to steamed mushrooms.
  • Simmer 5 minutes, then add sour cream; simmer another 5 minutes.
  • Finally, fold the meat mixture into the mushroom mixture.
  • Simmer an additional 5 minutes, stirring occasionally.
  • Serve immediately with egg noodles (as a side dish) and your favorite vegetable and bread.
  • Enjoy!
  • (Sometimes I just throw it all into a crock pot and let it cook on low about 6-8 hours. It's good that way too!).

½ cup all-purpose flour
½ teaspoon ground sage
½ teaspoon salt
½ teaspoon black pepper
4 tablespoons butter, divided
1 cup chopped Vidalia onion
2 cups sliced mushrooms or baby bellas
6 (3 ounce) venison tenderloin steaks
1 tablespoon all-purpose flour
¾ cup sherry
¼ cup water

Steps:

  • Combine 1/2 cup flour, sage, salt, and pepper in a resealable bag, set aside. Melt 1 tablespoon of butter in a large pan over medium heat. Stir in onion and cook until almost soft. Add mushrooms, and continue cooking until soft. Remove from pan.
  • Turn heat to medium-high and melt 2 tablespoons of butter in pan. Toss the venison steaks in the seasoned flour and shake off the excess. Sear venison in butter for 6 to 7 minutes per side and remove.
  • Reduce heat to medium-low, and melt the remaining tablespoon of butter. Whisk in 1 tablespoon of flour, followed by the sherry and water. Return the vegetables and meat to the pan. Increase heat, and simmer for 15 minutes.
