I got this recipe from a friend after having trouble making a pancake with whole wheat flour that my 2 boys will eat. I made these and I swear they were the best pancakes I ever made. They looked so fluffy and browned just right. The boys loved them. We usu. eat maple syrup or powdered sugar over them. I just tried making a homemade syrup and that turned out good too. This is freshly ground whole wheat flour, so if you have store bought whole wheat, I would recommend doing it 1/2 white and half wheat.

1 3/4 cups freshly ground whole wheat pastry flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups buttermilk (or make it with milk and vinegar)
3 eggs, separated
2 tablespoons olive oil
1 tablespoon honey

Steps:

  • In a bowl, combine the flour, powder, soda and salt.
  • In a large bowl, combine the buttermilk, egg yolks, olive oil and honey, stirring well.
  • Add the dry ingredients to the wet ingredients.
  • In a glass or ceramic bowl, beat the egg whites until stiff peaks form; fold them gently into the pancake mixture.
  • Heat an electric skillet to 375° F and spray with cooking oil.
  • Drop about 1/2 cupfuls onto hot skillet and cook until underside is golden (you may not get a lot of bubbles, since this is very airy).
  • Flip and cook until second side is done. You should have 5-6" pancakes.

To get the authentic flavor, use all white flour. We have tried it with half whole wheat, and they are still good. BUT they are perfect with white flour and worth the carb splurge once in a while. And, yes, that really says 4 Tbsp of white vinegar. Crazy! Right? Don't worry! You won't taste it. You can substitute buttermilk for the milk and vinegar, if you want to or if you have some on hand.

1½ cups milk
4 Tbsp white vinegar
2 cups all-purpose flour
4 tbsp white sugar
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 eggs
4 tbsp melted butter

Steps:

  • Preheat electric griddle to approx. 325 degrees or a large frying pan to medium-low heat. On our stove, he sets the large burner between the 3 and 4. You may have to experiment to find the sweet-spot temperature for whatever pan you are using.
  • Combine the milk and vinegar and allow to sit for 1-2 minutes.
  • Next, combine all dry ingredients (flour, sugar, baking powder, baking soda, and salt) in a medium mixing bowl and mix well.
  • Add milk/vinegar combo, eggs, and melted butter.
  • Then, using a whisk, stir everything together until there are no lumps. Allow mixture to sit for 1-2 minutes. It will start to almost bubble a little.
  • Ladle or pour batter onto skillet in 4- or 5-inch circles.
  • Do not flip until bubbles appear and the surface starts to dull.
  • Serve with your favorite pancake toppings.

2 cups all purpose | plain flour, ((290 g | 10 oz))
1/4 cup granulated sugar or sweetener, ((60g | 2 oz))
4 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 3/4 cups milk, ((440ml))
1/4 cup butter, ((60g | 2 oz))
2 teaspoons pure vanilla extract
1 large egg

Steps:

  • Combine together the flour, sugar (or sweetener), baking powder, baking soda and salt in a large-sized bowl. Make a well in the centre and add the milk, slightly cooled melted butter, vanilla and egg.
  • Use a wire whisk to whisk the wet ingredients together first before slowly folding them into the dry ingredients. Mix together until smooth (there may be a couple of lumps but that's okay).(The batter will be thick and creamy in consistency. If you find the batter too thick -- doesn't pour off the ladle or out of the measuring cup smoothly -- fold a couple tablespoons of extra milk into the batter at a time until reaching desired consistency).
  • Set the batter aside and allow to rest while heating up your pan or griddle.
  • Heat a nonstick pan or griddle over low-medium heat and wipe over with a little butter to lightly grease pan. Pour ¼ cup of batter onto the pan and spread out gently into a round shape with the back of your ladle or measuring cup.
  • When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining batter.
  • Serve with honey, maple syrup, fruit, ice cream or frozen yoghurt, or enjoy plain!

Steps:

  • Whisk flour, sugar, baking powder, baking soda, and salt in a large bowl. Using a fork, beat eggs, buttermilk, seltzer, vanilla, and 3 Tbsp. melted butter in a medium bowl to incorporate eggs. Add egg mixture to dry ingredients and whisk to combine (batter will be slightly lumpy).
  • Heat a large griddle or 2 cast-iron or nonstick skillets over medium; brush with butter.
