Steps:
- In a large bowl, combine the romaine lettuce, iceberg lettuce, artichoke hearts, red onions and pimentos. Toss together.
- Prepare the dressing by whisking together the olive oil, red wine vinegar, salt, pepper and cheese. Refrigerate until chilled and pour over salad to coat. Toss and serve.

Gino's Italian Restaurant in Des Moines, Iowa is known for their fabulous house salad dressing (a creamy Parmesan cheese dressing). This recipe is very close to their great recipe. I know you will be tempted to leave out the achovy paste, but DO NOT. It is what makes this salad dressing so special. Achovy paste is found in most grocery stores and is not expensive. This recipe makes a large batch, so I often make just half of it.

CHEESY ITALIAN HOUSE SALAD WITH PARMESAN DRESSING
This salad is rich and very filling and should be served as a main meal. The dressing makes about 1-1/2 cups but can easily be doubled. Plan ahead the dressing needs to chill for a couple of hours before using, prep time includes chilling time for the dressing. Feel free to add in other ingredients to the salad.
