ROLLED REUBEN MEAT LOAF

1 egg, beaten
2 tablespoons chopped onion
2 tablespoons 2% milk
1/3 pound lean ground beef
1-1/4 cups soft rye bread crumbs
2 tablespoons Dijon mustard
1/2 cup sauerkraut, rinsed and well drained
8 slices deli corned beef (about 2 ounces), divided
3/4 cup shredded Swiss cheese, divided

Steps:

  • In a small bowl, combine the egg, onion and milk. Crumble beef over mixture and mix well. Add bread crumbs; mix gently. On a piece of heavy-duty foil, pat beef mixture into an 8x6-in. rectangle. , Spread mustard over loaf to within 1 in. of edges. Layer with sauerkraut, six slices of corned beef and 1/2 cup Swiss cheese. Roll up jelly-roll style, starting with a short side and peeling foil away while rolling. Seal seam and ends. , Place meat loaf seam side down in a shallow 1-qt. baking dish coated with cooking spray. Bake, uncovered, at 350° for 25 minutes. Top with remaining corned beef and cheese. Bake 5 minutes longer or until no pink remains and a thermometer reads 160°. Using two large spatulas, carefully transfer meat loaf to a serving platter.

1 tablespoon Worcestershire sauce

1/4 cup prepared Thousand Island salad dressing
1 can (8 ounces) sauerkraut, rinsed and drained

Steps:

Spread with salad dressing; top with sauerkraut and 1/2 cup Swiss cheese. Bake, uncovered, at 350° for 50-55 minutes or until meat is no longer pink and a thermometer reads 160°; drain. Sprinkle with remaining cheese. Bake 2 minutes longer or until cheese is melted. Let stand 10 minutes before slicing.

8 ounces deli-sliced corned beef
1 slice rye bread, cut into cubes
1 pound ground beef
1 large egg
1/4 cup milk
1/2 onion, grated on the large holes of a box grater
1 1/4 cups shredded Swiss cheese (about 5 ounces)
Kosher salt and freshly ground pepper
1 cup drained sauerkraut
Russian or Thousand Island dressing, for topping
Chopped fresh parsley, for topping
Potato chips and pickles, for serving

Steps:

  • Preheat the oven to 450 degrees F. Put the corned beef in a food processor and pulse until finely ground; remove to a medium bowl. Add the bread to the food processor and pulse until fine; add to the corned beef. Add the ground beef, egg, milk, onion, 3/4 cup cheese, 1/4 teaspoon salt and a few grinds of pepper. Mix well with your hands and transfer to a rimmed baking sheet. Form into four 3/4-inch-thick oval patties.
  • Bake the patties until lightly browned, firm and cooked through (a thermometer inserted into the centers should register 160 degrees F), 20 to 23 minutes. Evenly top the meatloaves with the sauerkraut and remaining 1/2 cup cheese. Return to the oven and bake until the cheese is melted, about 3 minutes.
  • Transfer the meatloaves to plates and top with Russian dressing and parsley. Serve with potato chips and pickles.

  • Combine all ingredients except last 3 in medium bowl.

  • Preheat oven to 375 degrees F. Coat a large rimmed baking sheet with cooking spray (or see Loaf Pan Variation).
  • Pulse onion and carrot in a food processor until finely chopped. (Or finely chop them with a knife.)

1 egg, beaten
1 onion, chopped
1/4 cup sweet pickle relish
