CRANBERRY-STREUSEL CORN MUFFINS
Here's a sweet new way to serve up the tart holiday staple, canned cranberry sauce.

- Preheat oven to 400°F. Line three 6-cup muffin tins with paper liners; set aside.
- For streusel topping: In a bowl, mix flour, light-brown sugar, and allspice. Cut in butter, then keep chilled until ready to use.
- For batter: In a separate bowl, combine cornmeal, flour, sugar, baking powder, baking soda, and salt. Stir in eggs, sour cream, butter, and vanilla until just combined.
- In each muffin cup, place 2 tablespoons batter, top with 2 teaspoons canned whole-berry cranberry sauce, and sprinkle with streusel topping. Bake about 15 minutes.

- In a small bowl, combine the first five ingredients. Whisk the egg, milk, butter and espresso powder until espresso powder is dissolved. Stir into the dry ingredients just until moistened. Fill greased or paper-lined muffin cups two-thirds full., For topping, combine the flour, sugar and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle about 1 teaspoon over each muffin. , Bake at 400° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing to a wire rack. Serve warm.

- Beat butter, white sugar, and brown sugar with an electric mixer until creamy. Mix flour and cinnamon into creamed butter until mixture resembles fine crumbs. Store in airtight container in the freezer until needed.

I printed this recipe off in 1999 - and I remember my choco-holic daughter just loving these muffins. Unfortunately time and my unorganized printed out recipe collection has not allowed me to make these in a while but that will all change now.

Steps:
- For muffins: combine the flour, sugar, brown sugar, baking powder and salt in a large bowl.
- Stir in butter, milk and egg just until moistened.
- Stir in chocolate chips.
- Spoon batter into 12 greased or lined muffin cups.
- For streusel: combine brown sugar, flour and butter in a small bowl then stir in nuts.
- Sprinkle generously over muffin batter and press down lightly to adhere.
- Bake at 350F for 20-25 minutes or until pick comes out clean from center of muffin.
- Let cool in pan for 15 minutes before removing to a wire rack to cool completely.

- Heat oven to 425°F. Place paper baking cups in 12 regular-size muffin cups, or grease bottoms only of muffin cups.
- Mix sugar and flour in small bowl. Cut in shortening, using pastry blender or fork, until mixture looks like fine crumbs; set aside.
- Drain blueberries; rinse and set aside. Stir muffin mix, water, oil and egg in medium bowl just until blended. Gently stir blueberries into batter. Divide batter evenly among muffin cups. Sprinkle 1 1/2 teaspoons crumb mixture over batter in each cup.
- Bake 20 to 25 minutes or until muffins are golden brown around edges.

I love cranberries! And now, we can get them all year-round! You can use fresh or frozen cranberries (and you don't even need to thaw them!!). These are also wonderful with some chocolate chips added to the batter.

- Preheat the oven to 350°F Spray a 12-cup muffin pan with Pam.
- Make topping: in a small bowl, stir together oats, flour, brown sugar, cinnamon, oil and water until the mixture is crumbly. Set aside.
- Make muffins: in a large bowl and using a whisk or electric beaters, combine sugar, milk, oil, egg and vanilla. With a wooden spoon, stir in the cranberries.
- In another bowl, stir together flour and baking powder. With a wooden spoon, stir the mixture into the cranberry mixture just until everything is combined. Divide the mixture among the prepared muffin cups. Sprinkle topping evenly over top.
- Bake for 18 to 20 minutes or until a tester inserted into the middle of a muffin comes out dry.
