Shrimp Scampi with Pasta image

Well-rounded seafood and pasta dish. Good with any pasta; angel hair is less filling.

1 (16 ounce) package linguine pasta
2 tablespoons butter
2 tablespoons extra-virgin olive oil
2 shallots, finely diced
2 cloves garlic, minced
1 pinch red pepper flakes
1 pound shrimp, peeled and deveined
1 pinch kosher salt and freshly ground pepper
½ cup dry white wine
1 lemon, juiced
2 tablespoons butter
2 tablespoons extra-virgin olive oil
¼ cup finely chopped fresh parsley leaves
1 teaspoon extra-virgin olive oil, or to taste

Steps:

  • Bring a large pot of salted water to a boil; cook linguine in boiling water until nearly tender, 6 to 8 minutes. Drain.
  • Melt 2 tablespoons butter with 2 tablespoons olive oil in a large skillet over medium heat. Cook and stir shallots, garlic, and red pepper flakes in the hot butter and oil until shallots are translucent, 3 to 4 minutes. Season shrimp with kosher salt and black pepper; add to the skillet and cook until pink, stirring occasionally, 2 to 3 minutes. Remove shrimp from skillet and keep warm.
  • Pour white wine and lemon juice into skillet and bring to a boil while scraping the browned bits of food off of the bottom of the skillet with a wooden spoon. Melt 2 tablespoons butter in skillet, stir 2 tablespoons olive oil into butter mixture, and bring to a simmer. Toss linguine, shrimp, and parsley in the butter mixture until coated; season with salt and black pepper. Drizzle with 1 teaspoon olive oil to serve.

I've been buying a well known frozen dinner bag that's absolutely fantastic, but rather expensive. So I checked the ingredients, searched scampi recipes online, and decided to create my own by adding, subtracting, and tweaking all of them. This is my first!!

1 (16 ounce) package linguine pasta
2 tablespoons butter
1 ½ tablespoons olive oil
½ cup chopped red bell pepper
½ cup chopped yellow bell pepper
6 cloves garlic, sliced
48 large shrimp - peeled, deveined, and tails removed
½ cup dry white wine (such as Chardonnay)
1 teaspoon lemon juice
¼ cup clam juice
2 tablespoons butter
1 ½ tablespoons olive oil
2 tablespoons heavy cream
1 ½ teaspoons crushed red pepper flakes, or to taste
3 tablespoons chopped fresh parsley
1 teaspoon sea salt

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the linguine, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Reserve 1 cup of the linguine cooking water, and drain pasta well in a colander set in the sink.
  • Melt 2 tablespoons of butter and 1 1/2 tablespoon of olive oil together in a large skillet over medium heat, and cook and stir the red and yellow bell pepper and garlic until the peppers have softened, about 10 minutes. Stir in the shrimp, and cook and stir until the shrimp are opaque and pink, about 5 minutes. Remove the shrimp to a bowl and set aside, leaving the peppers and garlic in the skillet.
  • Stir the wine, lemon juice, and clam juice into the skillet, and bring to a boil over medium heat. Mix in 2 more tablespoons of butter and 1 1/2 tablespoons of olive oil, and return the shrimp to the skillet. Stir in reserved pasta cooking water, cream, red pepper flakes, parsley, and sea salt. Add the cooked linguine, and toss lightly with the shrimp and sauce in the skillet. Simmer the mixture over medium-low heat for 5 minutes to let the pasta absorb some of the sauce, and serve hot.

1 pound pasta, or 3 cups cooked rice
Coarse salt
2 tablespoons extra-virgin olive oil, plus more for drizzling
2 pounds large shrimp, peeled and deveined
Freshly ground black pepper
5 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes, plus more for garnish
1 1/2 tablespoons freshly grated lemon zest
1/4 cup white wine
Juice of 1 lemon
1/4 cup chopped fresh parsley leaves

Steps:

  • Bring a large pot of water to a boil over high heat. Add the pasta and a generous pinch of salt and cook until al dente. Drain the pasta, reserving 1/2 cup of the pasta water.
  • Meanwhile, heat a large saute pan over high heat. Add 1 1/2 tablespoons of the oil and swirl it to coat the pan. Add the shrimp in a single layer. Sprinkle with salt and pepper. After 2 minutes, turn the shrimp over; add the remaining 1 1/2 teaspoons of oil, the garlic, and the red pepper flakes. Stir constantly for 1 to 2 minutes, regulating the heat to avoid burning the garlic.
  • Add the lemon zest and white wine to the shrimp. Stir to reduce the wine slightly. Add the lemon juice, cooked pasta, and reserved pasta water to the pan. Toss to combine. Remove from the heat and sprinkle with the parsley. Serve with a drizzle of olive oil and extra red pepper flakes on each serving.

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions for al dente.While the pasta cooks, trim the top and bottom off of each squash. Peel the squash in ribbons into a colander, using a vegetable peeler, turning the squash as you peel. Stop peeling the squash when you only have the center core of seeds left. Discard the core and seeds.Reserve 1/4 cup of the pasta water, and then drain the pasta over the squash ribbons. Put in a medium bowl and toss to evenly distribute the pasta with the squash ribbons.Toss the shrimp with 1/2 teaspoon kosher salt and some pepper. Heat 1 tablespoon oil in a large skillet over medium-high heat. Add the shrimp, spread into a single layer and cook without stirring, until just turning pink around the edges, about 2 minutes. Stir the shrimp, add the tomatoes, garlic and pepper flakes and continue to cook until the tomatoes have softened and the garlic has toasted, about 1 minute. Add the pasta and squash ribbons, broth and the remaining 1 tablespoon olive oil. Cook, tossing, until warmed through and most of the liquid has been absorbed. Add the pasta water a bit at a time, if needed, if the noodles seem dry.Season with additional salt and pepper. This is my version if shrimp scampi. All my guest say it's as good or berrer than Carrabas. For a large group serve it in a large bowl family style rather than making individual orders. I prefer the fresh frozen shrimp with the shells on rather than the frozen pealed and deviined, which have a preservative added taste. The recipe is for one serving you can bump it up

2 teaspoons extra virgin olive oil
1 garlic clove, minced
6 shrimp, pealed and devined, tails on
2 tablespoons butter, chefs style, see below
1/3 cup white wine, chablis
2 teaspoons lemon juice, fresh
4 ounces pasta noodles, cooked, your favorite kind and shape
1 tablespoon cheese, grated parmesan
1/3 cup parsley, fresh finely chopped
1 cup butter, lightly salted, room temperature
6 garlic cloves, finely minced fresh

Steps:

  • Preheat saute' pan medium high and add olive oil and minced garlic but dont let the garlicburn, afer a minuet add the shrimp and cook about two minuets each side. Deglaze the pan with the wine, add lemon juice and reduce by half. Turn OFF the heat and add the chefs butter when melted toss with warm pasta, top with grated parm if desired and serve.

SHRIMP SCAMPI PASTA (ITALIAN STYLE)
Add 2 tablespoons of EVOO and 2 tablespoons of butter to a frying pan. Once the butter is melted, add the garlic cloves and sliced shallots and saute until fragrant, about 1 minute. Then add the shrimp, season with salt and pepper, and sauté for 1-2 minutes on one side (until just starting to turn pink), then flip and cook on the other side.
