1 (10.5 ounce) can beef consomme
1 cup water
1 pound thinly sliced deli roast beef
8 slices provolone cheese
4 hoagie rolls, split lengthwise

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Open the hoagie rolls and lay out on a baking sheet.
  • Heat beef consomme and water in a medium saucepan over medium-high heat to make a rich beef broth. Place the roast beef in the broth and warm for 3 minutes. Arrange the meat on the hoagie rolls and top each roll with 2 slices of provolone.
  • Bake the sandwiches in the preheated oven for 5 minutes, or until the cheese just begins to melt. Serve the sandwiches with small bowls of the warm broth for dipping.

One 8-pound lip-on boneless rib eye roast
1 cup Worcestershire sauce
4 ounces Montreal steak seasoning
3/4 cup red wine
3 tablespoons beef base
1 cup large-diced onion
6 cloves garlic
6 sprigs fresh thyme
6 to 8 good-quality hoagie rolls
12 ounces horseradish
12 ounces sour cream
12 to 14 slices Swiss cheese
1 1/2 to 2 cups caramelized onions
Serving suggestion: hand-cut fries

Steps:

  • For the prime rib: Preheat the oven to 350 degrees F.
  • Place rib eye fat-side down in a roasting pan. Pour half of Worcestershire over the top, then sprinkle on half of the steak seasoning. Flip and cover with remaining Worcestershire and seasoning.
  • Roast for 2 hours. Let cool completely, then slice thinly on a meat slicer.
  • For the au jus: Place red wine in a saucepan over medium-high heat. Reduce by half. Add beef base and dissolve thoroughly. Add onion, garlic, thyme and 6 cups water and simmer until vegetables are soft. Strain.
  • For the French dip: Split and toast hoagie rolls. Heat au jus until hot, then add prime rib to heat thoroughly.
  • Whisk together horseradish and sour cream in a bowl. Spread on hoagie rolls. Layer Swiss cheese in hoagies, then add caramelized onions and top with hot prime rib.
  • Plate sandwiches with fries and cups of warm au jus for dipping.

1/2 cup sour cream
3/4 teaspoon prepared horseradish
1 teaspoon salt
1/4 teaspoon freshly cracked black pepper
1 1/2 cups French onion soup
1 1/2 cups beef broth
1/2 teaspoon granulated sugar
2 teaspoons Worcestershire sauce, plus more to taste
1/8 teaspoon salt, plus more to taste
Freshly cracked black pepper
Olive oil, for the grill pan
1 boneless rib-eye steak (about 8 ounces, 1-inch thick)
Salt and freshly ground black pepper
Salt and freshly ground black pepper
2 small baguettes, split in half lengthwise

Steps:

  • For the horseradish sauce: Combine the sour cream, horseradish, salt and pepper in a medium bowl. Cover and refrigerate to develop the flavors.
  • For the au jus: Combine the onion soup, beef broth, sugar, Worcestershire sauce, salt and 3/4 cold water in a saucepan and bring to a boil over medium-high heat.
  • Reduce heat and simmer 5 minutes. Taste and season with pepper and more salt if needed. Strain the mixture and discard the onions (if there were any in the soup.) Cover and keep warm.
  • For the steak: Heat a grill or grill pan over high heat. Oil the grill pan if needed. Season the steak with salt and lots of black pepper. Grill the steak for 2 to 3 minutes per side for medium rare. Let the steak rest, then thinly slice.
  • Spread the horseradish sauce on one side of each baguette. Dip the steak slices in the warm au jus and place on top of the bread with horseradish sauce, then place the other slices of bread on top. Transfer the remaining au jus to two dipping bowls and serve with the sandwiches for dipping.

1 boneless ribeye (approx. 16 oz)
1/2 cup beef stock (or broth)
1 bunch fresh thyme
4 baguettes, or rolls (approx. 8 inches long)
1/2 cup horseradish sauce
ground black pepper
kosher salt
4 slices provolone cheese
3/4 cup French onion soup
1/2 cup beef broth
1 tsp Worcestershire sauce
1/4 tsp sugar
1/4 tsp kosher salt
1/4 tsp ground black pepper
1/3 cup cold water

Steps:

  • Season beef generously with salt and pepper. Set out of the fridge for about 30 minutes so it can get to room temperature, if possible
  • Preheat grill to 375ºF
  • After grill grate is hot, place steak on grill and sear for about 5 minutes per side, cooking until medium rare. If you have a probe thermometer, remove steak once the center reaches an internal temperature of 130ºF
  • Let steak rest for 10 minutes then slice as thin as possible, a very sharp knife helps

For the Steak:
4 (1 pound) boneless ribeye steaks, ideally each 1 inch thick
1 tablespoon kosher salt
1 teaspoon ground black pepper
2 tablespoons olive oil, divided
8 (6-inch) baguette-style rolls or French bread, lightly toasted
For the Onions:
3 (6-8 ounce) thinly sliced onions
1 1/2 teaspoons kosher salt
1/2 teaspoon ground black pepper
1 teaspoon granulated sugar
1 tablespoon chopped fresh thyme
For the Au Jus:
1/2 cup (one stick) unsalted butter
4 teaspoons flour
1/4 cup red wine
2 teaspoons Worcestershire sauce
1 tablespoon Dijon mustard
3 (10.5 ounce) cans condensed beef consommé
1/2 cup water

Steps:

  • Gather the ingredients.
  • Season ribeyes all over with salt and pepper.
  • In a large skillet , preferably cast-iron, heat the oil on medium-high. When the oil shimmers, add two steaks and sear until nicely browned, 4 to 5 minutes per side. Transfer to a plate. Repeat with the remaining two steaks, adding an additional tablespoon of oil to the pan if necessary. Tent plate with foil to keep warm, and set steaks aside.
  • To residual beef fat, add sliced onions and season with salt and pepper. Cook, stirring frequently, until softened and golden brown, 10 to 12 minutes.
  • Add sugar and thyme and cook until onions are slightly darker and thyme is fragrant, about 2 minutes more. Transfer to a small bowl and set aside.
  • To the same skillet, add the butter and flour, whisking until butter has melted and flour has cooked slightly, about 2 minutes.
  • Add wine, Worcestershire sauce, and mustard, whisking until combined. While steadily whisking, gradually add the consommé and water. Bring mixture to a boil and immediately reduce heat to medium. Simmer, whisking frequently, until mixture has thickened slightly and become rich and glossy, 5 minutes.
  • Thinly slice rested steaks against the grain and add to the large skillet. Gently toss to coat in sauce, then divide equally among the rolls. Top each sandwich with onions and a few tablespoons of au jus.
  • Divide the remaining au jus between small bowls and serve next to the sandwich for dipping. Enjoy!
