ONE-POT RICE AND BEANS
Not only is rice with beans adored the world over (see: gallo pinto, khichdi, hoppin' John and Caribbean rice and peas), it even has its own Wikipedia page. This deeply flavored rendition is inspired by these comforting traditions and a desire to wash as few dishes as possible: The rice cooks with the beans and the starchy liquid they're canned in. As the two ingredients cook together, the beans disperse and glom onto the rice. For an extra kick, sauté chopped jalapeño with the onions, or add 1/4 cup salsa with the stock.

Steps:
- In a large saucepan or Dutch oven with a tight-fitting lid, warm the olive oil over medium heat. Add onion and sauté until translucent, about 3 minutes. Add the stock, cover and bring to a boil.
- Add the salt, rice and beans (including the liquid). Stir just to combine, then cover.
- Turn the heat down as low as it will go, then let simmer, undisturbed, for 18 to 20 minutes. Remove from heat and let sit for 4 minutes, then fluff with a fork.
- Season to taste with salt and pepper, then garnish with lime or cilantro as you wish.

WILD RICE FRITTATA

- Cook wild rice in water as directed on package; drain if necessary.
- In 10-inch nonstick skillet, melt butter over medium-high heat. Cook bell peppers and onion in butter 2 to 3 minutes, stirring frequently, until vegetables are crisp-tender.
- In small bowl, mix eggs, milk, wild rice and 1/2 cup of the cheese; pour over vegetables. Reduce heat to medium-low. Cover; cook 15 to 20 minutes or until eggs are set. Remove from heat.
- Sprinkle with remaining 1/2 cup cheese. Cover; let stand about 5 minutes or until cheese is melted. Cut into wedges. Serve immediately.

RICE AND BEAN FRITTATA
This is from Better Homes and Garden 30-Minute Dinners. Instead of the pouch of wild rice and regular rice, you can use 1.5 to 2 cups of cooked rice. I used brown boil-in-the-bag rice, and it came out great. This would be good topped with sour cream and/or avocados as well as the listed cherry tomatoes. Without the optional toppings, however, this is a pleasantly mild, soothing dish.

- In a large skillet, heat oil over medium-high heat. Add zucchini in single layer; cook just until crisp-tender.
- Microwave rice according to package directions. Add beans and rice to zucchini; stir gently.
- Combine egg, milk, salt and pepper. Pour over skillet mixture. Cook over medium heat, lifting edges to let raw egg run to the edges. When egg mixture is set, top with cheese. If desired, top with cherry tomatoes and parsley.

FRIED RICE AND BEANS (GALLO PINTO)
My dad's black bean recipe. He is from Costa Rica. I eat these 4 different ways: as "gallo pinto," plain rice and beans for a side dish, as black bean soup, or mash them to make a dip. Serve gallo pinto with a fried egg and bacon.

- Go through beans and pick out any with holes or rocks. Transfer beans to a large container and cover with several inches of cool water; let soak for at least 1 hour, or overnight.
- Rinse beans and dump water out. Transfer to a large pan and cover with fresh water by 2 inches. Add garlic and bay leaf and bring to a boil. Reduce to a simmer and cook until tender, about 1 hour, adding oregano and salt during the last few minutes. Reserve a few spoons of "caldo" (cooking juice) as it cooks.
- Measure 1/2 cup cooked beans for gallo pinto and reserve remaining beans for another use.
- For one serving of gallo pinto: Heat oil in a skillet over medium-low heat. Add onion and saute until dark but not burned, 8 to 10 minutes. Add 1/2 cup cooked black beans along with 2 to 3 tablespoons "caldo." Stir in rice and cook until it starts to get crispy 3 to 5 minutes.

- Preheat broiler. In a large bowl, whisk the first 6 ingredients until blended., In a 10-in. ovenproof skillet, heat oil over medium-high heat. Add peppers and green onions; cook and stir 3-4 minutes or until peppers are tender. Add garlic; cook 1 minute longer. Stir in beans. Reduce heat to medium; stir in egg mixture. BAKED RICE FRITTATA
Steps:
- Heat the oven to 325°. Grease the inside of the skillet with 1 tablespoon of the soft butter, and coat the bottom and sides thoroughly with bread crumbs. Pour out any loose crumbs.
- Pour 4 cups of the milk into the large saucepan, and heat rapidly, stirring in the rice, 2 teaspoons salt, and remaining 2 tablespoons butter, until the milk starts to boil. Lower the heat, and simmer, partially covered, about 8 minutes, until the rice has a loose custard consistency. Remove the pan from the heat, and stir in the remaining cup of milk, cooling the rice slightly.
- Whisk the egg yolks in a large bowl, just to break them up. Pour or ladle in the hot rice gradually, whisking well between additions, to avoid scrambling the yolks. Whisk in the grated cheese and chopped scallions.
- In another bowl, whisk the egg whites and a pinch of salt with the electric mixer on medium-low speed until the whites become foamy, then raise the speed and whip just until they form soft peaks. Fold the whites into the rice batter with the wire whisk, gently turning them over and breaking up any large clumps, until incorporated.
- Pour the frittata batter into the skillet, and smooth the top. Set into the oven and bake for about an hour, until the frittata is nicely browned and a paring knife inserted in the center comes out clean. Place the skillet on a cooling rack, and run the knife blade around the sides to loosen the frittata. Let it set for about 10 minutes before unmolding.
- When the frittata has cooled slightly, lay a wooden cutting board over the top of the skillet, hold the two together, and flip them over. Rap on the upturned bottom of the pan and give it a good shake to release the frittata. Present it on the board as is, or invert again onto a serving platter, browned side on top. Serve warm or at room temperature, sliced in wedges.
CHEESY RICE AND BEAN STRATA
This is a great vegetarian recipe! It is very filling and reheats well, which is good since it makes a ton! Enjoy!

- Preheat oven to 350'.
- Cook rice according to directions on package. Set aside.
- Heat olive oil in large nonstick skillet over medium-high heat.
- Add red onion, cumin, and garlic. Sautee 2 minutes.
- Add spinach and sautee 1 minute or until spinach wilts.
- Remove from heat. Set aside.
- In a seperate bowl combine beans and picante sauce; stir well.
- Coat bottom of a 13X9 inch baking dish with cooking spray.
- Spread 2 cups of bean mixture in 13X9 baking dish.
- Spread 4 cups cooked rice over bean mixture.
- Top with tomato slices.
- Layer spinach mixture, remaining 4 cups of rice, and 2 cups bean mixture over tomato slices.
- Cover and bake at 350' for 25 minutes.
- Sprinkle with cheeses.
- Bake, uncovered, an additional 10 minutes or until cheese melts.
- Top each serving with 2 tablespoons marinara sauce and 1 tablespoon sour cream.
- Enjoy.

- Place a 10-inch, heat-proof, skillet over medium high heat. Add the bacon and cook, stirring often, until crispy. Use a slotted spoon to remove onto a plate lined with paper towels. Discard all but 2 tablespoons of the bacon grease and then add in half the onion, the bell pepper, and jalapeño. Cook until starting to soften. Stir in the garlic, a large pinch of salt and pepper, cumin, cayenne and oregano. Cook for another 1 to 2 minutes to develop the flavor. Stir in the black beans, rice and the bacon.
- In a large bowl, whisk together the eggs, milk, a pinch of salt and pepper, and a couple of dashes of hot sauce. Pour into the skillet and give it all a gentle stir to evenly distribute. Transfer the skillet to the oven and bake until the center is no longer jiggly, about 18 to 20 minutes. Remove from the oven and let cool slightly.
- In the meantime, in a large bowl, stir together the remaining half of onions, tomatoes, avocado, cilantro, lime and salt and pepper. Place this mixture on top of the frittata, and sprinkle with queso fresco. Cut and serve with a dollop of sour cream. Enjoy!
