3 tbsp (45 g) butter
5 cups (250 g) mini marshmallows
6 cups (150 g) crispy rice cereal

Steps:

  • Prepare a baking pan. Line a deep, rectangular baking pan with aluminum foil, then grease with cooking spray or butter. It will be easy to cut the cake into whatever shape you like, but you can use specially shaped containers if you prefer. There is no baking involved in this recipe. The containers do not have to be oven-safe. You can skip the foil, but the cake may stick to the pan.
  • Melt butter in a large frying pan. Melt 3 tbsp (45 g) butter over low heat. Use a heavy-bottomed frying pan or skillet. Or combine butter and marshmallows in a large bowl, then microwave. Microwave in three 1-minute bursts, stirring in between.
  • Add marshmallows. Pour in 5 cups (250 g) mini marshmallows. Continue to heat and stir until they have melted completely. Skip this step if you used a microwave.
  • Remove from heat and add cereal. Take the frying pan off the heat. Pour in 6 cups (150 g) crispy rice cereal and stir until all of the crispy rice is well coated.
  • Press into the baking pan and let cool. Spoon the mixture into the prepared baking pan and press down. Let cool to room temperature, or until marshmallows have solidified. If you want to sculpt the treats into a certain shape, cover with plastic wrap and press down until quite firm. The sticky mixture is easiest to handle with a greased spatula, or with clean, slightly buttered fingers.
  • Decorate (optional). Sprinkle the treat with nuts, candy, or edible glitter. For a birthday cake, spread store-bought or homemade frosting over the top. You can cut the dessert into bite-size pieces, one-person chunks, or leave it as one cake.

100g milk chocolate, broken up
50g dark chocolate, broken up
100g butter
4 tbsp golden syrup
100g rice pops (we used Rice Krispies)
50g milk chocolate, melted
sprinkles, mini marshmallows, nuts, Smarties, dried fruit or white chocolate buttons

Steps:

  • Put the chocolate in a heatproof bowl with the butter and golden syrup and gently melt in 10-second bursts in the microwave, or melt it over a pan of simmering water, making sure the bowl doesn't touch the water. Stir until smooth, then take off the heat and stir in the rice pops, coating them gently with the chocolate until they are all completely covered.
  • Divide the mixture between nine cupcake or 12 fairy cake paper cases - it's easier if you slide these into a muffin tin as it will help them hold their shape. Leave to set. If you want them to set faster, put in the fridge for 1 hr.
  • Drizzle with a little melted chocolate and decorate with sweets, dried fruit or nuts while they are still wet enough to stick them on. Will keep in an airtight container for five days.

One 10-ounce bag mini marshmallows
2 teaspoons pure vanilla extract
Kosher salt
6 cups crispy white cereal
1/3 cup multicolored sprinkles, plus more for decorating
2 cups mini marshmallows
4 tablespoons unsalted butter, at room temperature
1/2 cup confectioners' sugar
Butter a 9-inch round cake pan.

Steps:

  • For the "cake": Melt the butter in a large pot over medium heat. Add the marshmallows, and cook, stirring occasionally, until they melt completely, about 5 minutes. Remove the pot from the heat, and stir in the vanilla and a pinch of salt. Add the cereal and sprinkles, and stir with a rubber spatula, scraping up from the bottom, until the cereal is completely coated. Transfer the cereal to the prepared cake pan, and pat it down into an even layer. Let sit at room temperature until firm, about 30 minutes. Invert onto a serving plate.
  • For the frosting: Heat the marshmallows and butter in small saucepan over medium-low heat, stirring constantly, until completely melted. Remove the saucepan from the heat, and stir in the confectioners' sugar.
  • Spread the frosting over the top of the "cake" in an even layer. Decorate with sprinkles. Cut into wedges, and serve. (The frosted "cake" can be stored in an airtight container at room temperature for up to 3 days.)

80g butter, cubed, plus extra for the tin
1 tbsp vanilla bean paste
300g pink and white marshmallows (ensure vegetarian, if needed)
200g crispy rice cereal
200g white chocolate, broken into 1cm chunks
30g mini marshmallows (optional)

Steps:

  • Butter a 34 x 24 x 5cm deep baking tray and line with baking parchment. Melt the butter and vanilla in a large saucepan over a low heat, then add the marshmallows and cook gently, stirring occasionally until everything is melted, smooth and glossy.
  • Remove from the heat and mix in the rice cereal and 150g of the white chocolate chunks. Stir until the cereal is evenly coated, then tip into the baking tray and press into the corners using slightly wet hands to prevent the mixture from sticking to you. Leave to cool for 1 hr until set.
  • Melt the remaining 50g white chocolate in a heatproof bowl set over a pan of simmering water, ensuring the base of the bowl doesn't touch the water. Drizzle the melted white chocolate over the crispy cakes and sprinkle over the mini marshmallows, if using. Leave to set, then cut into 12 squares. Cut the squares in half diagonally to serve. Will keep in an airtight container for up to two weeks.

2 eggs, lightly beaten
1 cup finely chopped zucchini
3 tablespoons chopped mint

In this recipe, tenaciously chewy rice cakes are stir-fried until crispy, then smothered in a sweet and earthy peanut sauce and finished with syrupy hoisin. Rice cakes deserve to be a pantry staple for many reasons: They can be used as a filling substitute for short pasta, added to stews or quickly pan-fried with your favorite sauce. Sold in Chinese or Korean markets, they come in tubes (like those used in tteokbokki) or sliced disks, and are packaged in vacuum-sealed packs or frozen, so they keep for ages. 2 tablespoons neutral oil such as vegetable or grapeseed
1 tablespoon soy sauce
1/2 pound yu choy or other Asian greens, halved lengthwise

2 scallions, finely sliced
1 tablespoon toasted white sesame seeds

1 garlic clove, grated
1 teaspoon soy sauce

Steps:

  • Bring a large pot of salted water to boil. Add the rice cakes and cook for 2 to 3 minutes, until softened. Drain and refresh under cold water.
  • Meanwhile, make the peanut sauce: In a medium bowl, place the peanut butter, hot water, sugar, garlic and soy sauce, and whisk together until combined. Set aside.
  • Heat a large (12-inch) nonstick skillet or wok on medium high. (Check the drained rice cakes. If they are sticking together, rinse them with cold water and gently toss to separate before adding them to the pan.) When the pan is hot, add the neutral oil and rice cakes, and toss to combine. Add soy sauce and stir-fry for 6 to 8 minutes, until the rice cakes begin to caramelize. (If more than a few clump together, add a tablespoon of water at a time and break them up with your spatula.) Add the yu choy and cook for another 3 to 4 minutes, until the greens are wilted. Turn off heat, add the peanut sauce and toss to coat.
  • To serve, drizzle with the diluted hoisin sauce, scatter with scallions and finish with sesame seeds.
