These are addictive! They can be made to anyone's taste by adjusting the amount of heat.

Number Of Ingredients 9

1 pound shredded Cheddar cheese
1 cup butter, softened
2 cups all-purpose flour
2 cups crisp rice cereal
½ teaspoon salt
2 dashes Worcestershire sauce
1 pinch garlic powder
¼ teaspoon cayenne pepper
freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine cheese, butter or margarine, flour, crispy rice cereal, salt, Worcestershire sauce, garlic powder, cayenne pepper, and black pepper. Mix well and form small balls out of the dough (the dough will yield approximately 55 balls). Flatten each ball of dough with your fingertips until the dough is very thin and arrange the discs on a cookie sheet.
  • Bake for 12 minutes; or until the Cheese Crispies are golden and slightly brown around the edges. Enjoy!

4 tablespoons unsalted butter, 1/2 stick
10 oz mini marshmallows
6 cups crispy rice cereal
8 oz semisweet chocolate
¼ cup heavy cream
16 oz cream cheese, softened
½ cup sugar
1 teaspoon vanilla
2 ½ cups whipped cream, divided
3 oz chocolate bar, for shaving

Steps:

  • In a large saucepan over medium heat, melt the butter.
  • Add the marshmallows and stir until melted. Add the crispy rice cereal and stir to coat.
  • While the crispy rice cereal mix is still warm, transfer them to a greased 10-inch (25 cm) springform pan.
  • Using a greased measuring cup, press down into the cereal to form to the pan. Press the edges against the springform pan to create walls. Set aside.
  • Place the chocolate in a small microwave-safe bowl and pour the heavy cream on top. Microwave in 30-second intervals, stirring until melted, about 1 minute.
  • In a large bowl, mix the cream cheese, sugar, and vanilla until smooth.
  • Pour in the melted chocolate and stir to incorporate.
  • Add 1½ cups (90 g) of whipped cream to the chocolate mixture and fold with a spatula until combined.
  • Pour the cheesecake mixture into the crispy rice base and smooth the top with a spatula.
  • Refrigerate for 3-4 hours or overnight, until the cheesecake is set. Release the springform.
  • Put the remaining cup of whipped cream in a piping bag fitted with a star tip and decorate the top of the cheesecake.
  • Use a vegetable peeler to shave the chocolate into the middle of the cheesecake.
  • Slice and serve.

2 cups puffed rice cereal (like Rice Krispies)
1/2 teaspoon ground red pepper

Steps:

  • Preheat oven to 325-degrees F. Line baking sheets with baking parchment or silicone lined baking mat.
  • Combine all ingredients.* Form into small balls, approximately 1-inch in diameter. Placed on lined baking sheets about 1-inch apart. Flatten each ball slightly with a fork that has been dipped in water.
  • Bake at 325-degrees F for 12-14 minutes, or until lightly browned.

2-1/2 cups shredded extra-sharp cheddar cheese
2 cups all-purpose flour
3/4 teaspoon salt
1/2 teaspoon cayenne pepper
2-1/2 cups Rice Krispies
Pecan halves, optional

Steps:

  • Beat butter and cheese until blended. In another bowl, whisk flour, salt and cayenne; gradually beat into cheese mixture. Stir in Rice Krispies. If necessary, turn onto a lightly floured surface and knead 4-6 times, forming a stiff dough., Divide dough in half; shape each into a 7-in.-long roll. Wrap and refrigerate 1 hour or overnight., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/4-in. slices. Place 1 in. apart on parchment-lined baking sheets. If desired, top each slice with a pecan half. Bake until edges are golden brown, 14-16 minutes. Remove from pans to wire racks to cool. To Make Ahead: Dough can be made 2 days in advance. Freeze option: Freeze wrapped logs in an airtight container. To use, unwrap frozen logs and cut into slices. Bake as directed.

Everyone simply loves these because they are extra crunchy from the addition of rice cereal. I strongly suggest serving these round wafers alongside a dish of pepper jelly and a block of softened cream cheese or log of goat cheese. Smear a little cheese on a wafer and top with a dab of the jelly to form a perfect bite. Repeat often. Luckily this recipe makes about 4 dozen wafers, so you might have just enough to go around. Steps:

  • Preheat the oven to 350°.
  • Mix together cheese, butter, flour, red pepper, Worcestershire and salt in a large bowl until mixture forms a ball that lightly sticks together and pulls in all the flour. (Hands might work best for this).
  • Gently fold cereal into dough.
  • Shape mixture into 1-inch balls. Place balls about 1 inch apart on an ungreased baking sheet. Flatten each ball with a fork, making a crisscross pattern.

1 tsp cayenne pepper
1 tsp salt
3 c sifted all-purpose flour
1 1/2 c butter, softened to room temperature
3 c finely grated sharp cheddar cheese
1 1/2 c crispy rice cereal

Steps:

  • 1. Add the cayenne pepper and salt to the sifted flour.
  • 2. Cut the butter into the flour mix.
  • 3. Work the mixture between your fingers to produce a cornmeal-like consistency.
  • 4. Add the cheese and crispy rice cereal.
  • 5. Continue to combine with your fingers. The more you mix, the more butter-like the dough will become and will better hold the crispies together.
  • 6. Roll the dough into 1 inch balls, working in your hands to press the balls together.
  • 7. Place on a cookie sheet lined with parchment paper.
  • 8. Press the balls flat with a fork or the bottom of a flour covered glass.
  • 9. Bake in a preheat oven at 350 for 15 minutes or until golden.
  • 10. Allow to completely cool.
  • 11. Store in an airtight container.
