Steps:
- Cook pasta according to the package instructions. Meanwhile, sauté the onion in butter over medium heat for 4-5 minutes.
- Add the salmon and keep cooking for another 5-7 minutes, breaking it into flakes as it cooks.
- Add the spinach and cook it for 1-2 minutes, until wilted.
- Add the heavy cream, Parmesan, garlic, salt, and pepper. Stir and bring to a gentle simmer.
- Add the cooked pasta and chopped parsley. Mix everything together thoroughly.
- Garnish with parsley and grated Parmesan. Serve.

CREAMY SALMON PASTA
This creamy salmon pasta with fresh spinach, lemon and capers in a creamy garlic white wine sauce is perfect for pasta or date night.

- Cook the pasta according to package directions until al dente.
- Season both sides of the salmon fillets with salt and pepper to taste.
- Bake at 400°F for 15 minutes or until the salmon is no longer pink and the internal temperature reads 145° F.
- Melt butter over medium heat in a dutch oven or deep skillet.
- Add minced garlic and saute until fragrant, about 30 seconds.
- Add heavy cream, wine, lemon zest and season with salt and pepper to taste.
- Bring to a gentle boil, reduce heat to low, and simmer for 5 minutes until the sauce has thickened slightly.
- Add in cooked pasta, spinach and capers. Stir and simmer until the spinach is cooked, about 2 minutes.
- Flake the salmon into bite-sized pieces and gently toss the salmon in with the pasta.
- Dish and serve hot with lemon wedges and Parmesan cheese.

- Bring large pot of water to a boil.
- Add 1 tablespoon salt and spinach- Cook 1 minute.
- Using slotted spoon, remove spinach (reserve water for pasta) and transfer to bowl of cold water.
- Drain and squeeze dry.
- Chop coarsely.
- Bring spinach water back to a boil. Meanwhile, in food processor fitted with steel blade, mince garlic if using.
- Add cottage cheese and blend until fairly smooth.

CREAMED SPINACH PASTA
This pasta nods to everyone's favorite steakhouse side, and it comes together in no time, making for a fine weeknight meal. One full pound of fresh spinach is cooked down in garlicky butter before cream is added, then simmered until thickened. The cooked pasta is added directly to the sauce, then tossed with ricotta cheese for even more richness. Fettuccine or tagliatelle pasta work best, but the creamy sauce will cling to any long noodles. Top with pine nuts, walnuts or hazelnuts for crunch, or leave the nuts out entirely. Serve as a side to grilled steak, chicken or fish, or serve it on its own, paired simply with a glass of bubbles.

- Add the ricotta to a large bowl; season well with salt and pepper and set aside.
- Bring a large pot of well-salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water and drain.
- Prepare your sauce while the pasta cooks: If using, cook the pine nuts in a deep 12-inch skillet over medium heat until toasted, stirring occasionally to make sure they do not burn, 2 to 3 minutes. Transfer to a small bowl.
- Wipe skillet clean and melt the butter over medium-low heat. Add the garlic and sauté until pale golden, about 2 minutes. Add the spinach, stirring it in by the handful if needed, and cook until it wilts, adding a few tablespoons of the pasta water to help it along if needed, about 4 minutes. Season with salt.
- Add the cream, bring to a simmer over medium heat and cook until sauce begins to thicken slightly, about 2 minutes more. Stir in the nutmeg then season with salt and pepper. Add the cooked pasta directly to the skillet and toss until the noodles are glossy with sauce.
- Turn off heat and stir in the prepared ricotta, thinning the sauce with a bit of pasta cooking water if needed. Taste and adjust seasonings as needed. Divide among bowls. Top with pine nuts, if using, and pass grated pecorino or Parmesan at the table.

- Bring the cream and half of the butter to a simmer in a small saucepan.
- Add 1 tsp.
- of the salt, and the nutmeg, continue to simmer until cream is reduced by about one third.
- Bring 4 quarts water to a boil in a large pot, add remaining 6 tsp.

- Bring a large pot of water to a boil.
- In a large saucepan, heat the olive oil over medium heat. Once the oil begins to shimmer, add the spinach and cook for 5 minutes, or until wilted.
- Add the spinach to a food processor and process until finely chopped.
- While processing the spinach, spoon the flour in a little bit at a time until a crumbly dough forms.
- While continuing to process, add ¼ teaspoon of salt. Then, add 1 tablespoon of water at a time until dough comes together (the amount of water necessary will vary depending on how wet the spinach is).
- Remove the dough from the food processor and knead on a floured surface to form into a ball.
- With a rolling pin, roll dough out into an oval, about 18 inches (46 cm) long by 12 inches (30 cm) wide, and ¼-inch (6 mm) thick.
- With a knife or pizza cutter, cut the dough into even strips about ½ inch (1 cm) wide.
- Roll the strips into thick noodles.
- Once the water is boiling, add 1 tablespoon of salt and drop in the pasta.
- Cook the pasta for 3-5 minutes, or until the noodles float to the top. Drain.
- Toss with roasted vegetables and pesto and top with basil.

- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
- While pasta cooks, pour enough water into a frying pan to cover salmon; add dill. Strain in lemon juice. Mix and season with salt and pepper. Add salmon to the pan and poach over medium-high heat, flipping as necessary, until it flakes easily with a fork, about 10 minutes. Remove the skin when you flip it the first time.
- At the same time, heat olive oil in a pan over medium to medium-high heat. Saute green beans and shallots until the shallots start to brown and the green beans soften, 8 to 10 minutes.
- Once the salmon is poached, use tongs to set it aside in a shallow bowl, but don't throw the poaching mixture away. Take about 1/4 cup of the poaching mixture and add it to a saucepan. Add sour cream and chopped dill and mix over medium heat until combined. Remove from heat and mix into pasta.
- Place pasta on serving plates, along with some chunks of the salmon, plus some of the sauteed mixture. Try to get an even mix if possible. Sprinkle with garden cress. Serve immediately!

- Pat your salmon filets dry with a paper towel and sprinkle with a little bit of kosher salt and pepper. Heat olive oil in a large skillet over medium heat, until shimmering. Be careful that it doesn't smoke. You want your pan to be hot so the salmon doesn't stick to it and it gets nice and crispy. Add salmon, skin side down first and sear for 3 minutes, until brown and crispy. Flip and continue to cook for another 2-3 minutes or more, depending on the thickness of your salmon.
- Remove the salmon from your pan, cover, and set aside. If there's a lot of excess oil in the pan, I prefer to wipe it with a paper towel. Add your butter along with the garlic and shallot, cooking for 1-2 minutes. Then add vegetable broth, red pepper flakes, and cream, bringing everything to a low simmer.
