BAKED AMARETTI AND CHOCOLATE STUFFED PEACHES
Take a spoon and enjoy this summer treat. Each half of the peach embraces a tempting mix of amaretti and chocolate that you won't be able to resist. Simplicity is key to this recipe-especially when cooking with what you have-resulting in something surprisingly delicious. Crumbled amaretti and chocolate enrich ripe sweet peaches-a cheap dessert which makes everyone happy. It fits both Sunday lunches and special occasions with your family.

Steps:
- Carefully wash the peaches and cut each peach in half, starting along the crease of the peach and running your small paring knife all the way around. Twist the two halves to release one side from the pit and then use the tip of a knife or fork to pry the pit out from the remaining side;
- Scoop out some flesh and place it into a bowl;
- Dilute the liqueur with some water and pour it over the peaches: let them marinate for 10 minutes;
- Mix until well combined and then add the coarsely grated chocolate;
- Drain the peach halves from the marinade; lay them cut side up in a baking tray lined with parchment paper. Spoon the filling into the peach cavities;
- Sprinkle the peaches with brown sugar;
- Pre-heat a static oven to 350°F (180°C). Cover the peaches with aluminum foil and bake for about 40 minutes. Remove the foil and bake for 5-10 minutes more until golden and crispy.
BAKED PEACHES WITH CHOCOLATE
This is a delicious variation on the classic Italian pairing of peaches baked with a filling of amaretti cookies. From a book called "chocolate treats".

Steps:
- Preheat the oven to 375.
- Grease a shallow baking dish with butter.
- Place cookies, grated chocolate, and butter in bowl and mix together.
- Place the peaches in a separate heatproof bowl and cover with boiling water.
- Let stand for one minute, then transfer to a bowl of cold water and let stand for additional minute.
- Remove the peaches from the skin.
- Cut each peach in half and remove pit.
- Using a teaspoon, scoop out a little flesh from each peach half.
- Chop the flesh and add to the cookie mixture.
- Fill each peach half with the amaretti cookie mixture, then sprinkle with sugar.
- Bake in the oven for 30 minutes, or until the peaches are soft and the filling is crisp.
- Transfer to a serving plate and serve hot with creme fraiche or sour cream.
BAKED PEACHES WITH KIRSCH AND CHOCOLATE
Steps:
- Halve the peaches, pull out the stones carefully and place a square of chocolate in the hollow of each peach half. Put the peaches in a baking dish , spoon over a little of the liqueur and bake in a preheated oven (200 degrees cup or 400 degrees F) for 10 minutes, until the fruit is soft and the chocolate has melted. Serve with cream.

BAKED PEACHES WITH AMARETTI AND COCOA
Steps:
- Butter a baking dish large enough to hold 8 peach halves in a single layer.
- Cut the peaches in half with a small knife and remove the pits. Cut off the peel in strips. Place the peach halves in the baking dish as you finish peeling them.
- Use a melon baller to scoop out some of the center pulp from each peach, being careful not to perforate the edges, to make little containers for the filling.
- Put the peach pulp on a cutting board and finely chop it; transfer it to a small bowl. Add the cookie crumbs, the egg yolk, and the cocoa powder, and stir to combine.
- Preheat the oven to 350°F and center a rack in the oven. Divide the filling among the peach halves. Pour the wine into the dish around the peaches. Bake 30 to 35 minutes or until a thin crust forms on the filling. Let cool to room temperature or refrigerate until chilled. Serve with whipped cream, if you like.

- Preheat oven to 400 degrees F (200 degrees C).
- Arrange brown sugar, 1 teaspoon per peach, in a 9x13-inch baking dish. Top each brown sugar mound with a piece of butter and a sprinkle of cinnamon. Place a peach half, cut-side down, on top of brown sugar-butter.

- Preheat the oven to fan 160C/conventional 180C/gas 4. Butter a large, shallow ovenproof dish. Cut the peaches in half and remove the stones, then stand the peaches cut-side up in the dish.
- Put the ginger biscuits into a tough plastic bag, seal the bag and bash the biscuits with a rolling pin until they're roughly crushed. Tip them into a bowl and mix in the chocolate, two-thirds of the chopped ginger, the egg yolk, dessert wine and orange zest until everything is evenly mixed.
- Divide the mixture equally between the peach halves, mounding it into the holes left by the stones. Pour the white wine around the peaches, dot them with the butter and bake for 20 minutes, or until tender. (This can be made up to a day ahead, kept in the fridge once cool, then gently reheated, in two batches, on Medium in the microwave for 4-5 minutes each batch.) To serve, spoon over the cooking juices and scatter with the remaining ginger. Serve warm.

BAKED PEACHES

- Preheat the oven to 375°F. Halve the peaches and remove the pits. Arrange the peaches in a shallow gratin dish, cut-side up, in a snug single layer. If you like, fill the cavity of each peach with berries. Sprinkle the sugar over the peaches and berries-more or less, depending on the fruits' sweetness. Drizzle the wine or water over the fruit. Bake the peaches for about 20 minutes, until juicy and tender. Serve warm with their juices and, if you like, with softly whipped cream or vanilla ice cream.
- Notes
- If you prefer, peel the peaches before baking: Drop the peaches in boiling water for 20 seconds or so, just enough to loosen the skins. Lift them out and plunge immediately into ice water. When cool, slip off the skins.
- In place of the berries, the peaches are delicious baked with an almond stuffing: Cream together 1/4 cup butter and 1 tablespoon sugar. Blend in 1 small egg yolk, 1/4 cup lightly toasted and chopped almonds, and 4 crushed macaroon cookies. Spoon the stuffing into the cavities of the peaches and bake. The stuffing is equally good with pears, nectarines, or apricots.

- Preheat the oven to 200C/gas 6/fan 180C. Halve and stone the peaches, then dig out a little flesh from the centre of each half, using a sharp-edged soup spoon. Put flesh and peaches to one side.
- Tip the amaretti, almonds and chocolate into a food processor and pulse until the mixture is like coarse gravel. Add the spooned-out peach flesh, egg and honey and whizz for just a second or two to combine - don't over-process.
- Spoon the stuffing into the peach halves, mounding it up a little. Arrange the peaches in a single layer in a heavy baking tin, then bake for 25-30 minutes or until the flesh is tender and the stuffing nicely browned. Serve hot, with a dollop of mascarpone or crème fraîche and a dusting of sifted cocoa powder.
