RICOTTA PANCAKES WITH CINNAMON APPLES
Here's a scrumptious way to start the day. My fluffy, tender pancakes and topped with sauteed cinnamon apples and a drizzle of maple syrup. Add a cup of coffee or a glass of milk and you'll be all set.

- In a large saucepan, cook apples in butter over medium heat for 6-8 minutes or until tender. Sprinkle with 1/2 cup sugar and cinnamon; set aside., In a large bowl, combine the flour, baking powder and salt. In another bowl, combine the cheese, milk, egg yolks, lemon zest, juice and remaining sugar. Stir into dry ingredients just until combined. In a small bowl, beat egg whites until stiff peaks form; fold into batter., Pour batter by 1/4 cupfuls onto a greased hot griddle; turn when bubbles form on top. Cook until the second side is golden brown. Serve with apples and maple syrup.

- In a large bowl, combine 1 cup flour, yeast, sugar and salt. In a saucepan, heat the water and butter to 120°-130°. Add to the dry ingredients; beat just until moistened. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Cover and let rest for 10 minutes., Divide dough into four portions. Roll each portion into an 8-in. square. Cut into four 4-in. squares. Cut apple slices into thirds; toss with sugar, flour and cinnamon. Place 1/4 cup filling on each square; bring up the corners up over the filling and pinch to seal. Secure with a toothpick if needed. Place 3 in. apart on baking sheets coated with cooking spray. Cover and let rise in a warm place for 30 minutes., Brush with milk; sprinkle with sugar. Bake at 375° for 12-14 minutes or until golden brown. Remove to wire racks. Discard toothpicks.

BLACKBERRY RICOTTA PIZZA POCKETS

- Fill a Dutch oven about halfway with veggie oil and heat to 375 degrees F. Line a sheet pan with paper towels and set aside.
- Roll the pizza dough to about 1/4-inch thick on a floured work surface. Cut out as many 4-inch rounds as you can. Reroll the dough, if needed, to get 6 rounds total.
- Combine the ricotta, confectioners' sugar and vanilla in a small bowl. Stir in the basil.
- Dollop a scant tablespoon of filling in the center of each dough round and place a blackberry on top. Dab a little water around the edge of each dough round. Fold over to make half-moons and pinch well with your fingers to seal.
- Add the pockets to the hot oil in batches and fry until golden and puffed, about 3 minutes. Remove to the lined sheet pan. Sprinkle on confectioners' sugar.

- Roll out refrigerated pizza dough to 1/4-inch thick; cut into 3-inch rounds. Top with ricotta, diced apple, and a pinch of cinnamon sugar. Brush the edges with beaten egg, fold in half and press to seal. Brush with egg and sprinkle with cinnamon sugar. Poke a hole in each; bake 20 minutes at 400 degrees F.

- 1 Place the flour in a large mixing bowl. Add the butter and stir until it is absorbed. Gradually stir in the eggs and Marsala to form a soft dough. Turn the dough out on a countertop and knead until smooth, about 10 minutes. The dough should be stiff. If it is too dry, work in 1 to 2 tablespoons of water. Wrap the dough in plastic and refrigerate 30 minutes up to overnight. 2 Pass the ricotta through a fine-mesh strainer or blend it in a food processor until smooth. Stir in the sugar, chocolate, and lemon zest. 3 Cut the dough into quarters. Keep the remaining pieces covered with an inverted bowl while you work. On a lightly floured surface, roll out one piece into a 12 × 12-inch square. Brush with 1 tablespoon of the butter. Tightly roll up the dough into a 12-inch rope. Cut the rope crosswise into 12 pieces. Place the pieces on a plate. Cover and refrigerate while you prepare the remaining dough in the same way. You should have 48 pieces of dough. 4 Have ready a small bowl of cold water. Dip both cut sides of one piece of dough lightly in flour. Roll out the piece into a 5- to 6-inch circle. Place about 2 tablespoons of the ricotta filling to one side of the circle. Dip a finger in the water and lightly moisten the edge. Fold in half and seal by pressing the edge firmly with your fingertips. Repeat with the remaining dough and filling. 5 In a deep heavy saucepan, pour enough oil to reach a depth of 2 inches, or if using an electric deep-fryer, follow the manufacturer's directions. Heat the oil to 370°F on a frying thermometer, or until a drop of the batter placed in the oil sizzles and browns in 1 minute. 6 Add as much of the dough pieces to the pan as will fit without crowding. Cook, turning once, until golden brown, about 3 minutes. 7 Remove the pastries with a slotted spoon or skimmer and drain on paper towels. - Preheat oven to 350 degrees F (175 degrees C).
- Combine Cheddar cheese, ricotta cheese, egg, white sugar, and almond extract in a medium bowl. Blend well. Spread one can apple pie filling over the bottom of a greased 9x13 inch pan. Layer with half of the noodles, and then the cheese mixture. Layer again with remaining noodles, and the second can of pie filling.
- Combine flour, 6 tablespoons brown sugar, oats, cinnamon, and nutmeg in a small bowl. Cut in butter until crumbly. Sprinkle over top.
- Bake in preheated oven for 45 minutes. Cool for 15 minutes.
- Meanwhile, prepare garnish by blending sour cream and 1/3 cup brown sugar in small bowl until smooth. Cover, and refrigerate. Serve warm apple lasagna with sour cream garnish.

- Put the lasagne sheets in a large bowl and pour over boiling water to cover. Leave to soak for 5 minutes. Meanwhile, preheat the oven to fan 180C/conventional 200C/gas 6 and lightly oil a shallow baking tray.
- Drain the lasagne sheets in a colander. Take one sheet and put a large spoonful of ricotta in the centre. Scatter over a few rocket leaves, season well, then fold the sheet in half. Press the edges together to form a pocket. Continue to fill all the pasta sheets, then lay them on the baking tray so they overlap slightly.
- Tip the sauce over the pasta pockets, spreading to make sure they are completely covered. Sprinkle over the cheese and bake for 10-12 minutes until hot and bubbly. Serve with a crisp green salad.
