Maggiano's Rigatoni "D" My spin on Maggiano's BEST pasta dish! Totally heavenly! Also...for anyone doing low carb-substitute low-carb pasta & you've got a meal that makes you swear you're cheating!!! (the sauce is thin-but if you've noticed, it's thin at Maggiano's too! If you like it thicker, just lower the heat and let the sauce reduce some more) Also-if you want to use a rotisserie chicken, you can...it turns out quite well if you are pressed for time.)

ee 2 tablespoons extra virgin olive oil
10 ounces button mushrooms
3 tablespoons balsamic vinegar
1 yellow onion, chopped
2 teaspoons garlic, pureed
salt and pepper
1 lb chicken breast, cut into 1 to 1 1/2 inch pieces
1/2 quart chicken stock
2 -4 ounces marsala wine (Cribari)
2 ounces white wine
1/2 quart heavy cream
1 lb rigatoni pasta
1 tablespoon fresh basil, chopped (and parsley mix)
2 tablespoons parmesan cheese, grated
2 ounces garlic butter
parmesan cheese, shavings (garnish)
chopped fresh parsley (garnish)

Steps:

  • Heat oil.
  • Caramelize onions.
  • Saute mushrooms with balsamic vinegar.
  • Add onions to the mushrooms.
  • Season with salt and pepper.
  • Add garlic .
  • Add chicken.
  • Add chicken stock, Marsala, and white wine. Cook until reduced by half.
  • Add cream and bring to a boil.
  • Turn down heat and simmer to skim away any impurities.
  • Cook rigatoni al dente.
  • Add drained rigatoni to chicken mixture in pan and finish with basil-parsley mix, parmesan cheese, garlic butter, and salt and pepper.
  • Add more Marsala for flavor as needed.
  • Place in pasta bowl and garnish with parmesan shavings and chopped parsley.

5 tbsp. extra virgin olive oil
4 tablespoons butter or margarine
8 oz. button mushrooms
½ large Spanish yellow onion, chopped
1 ½ tsp garlic puree (garlic in a jar, mashed)
1/4 cup all-purpose flour
1 tsp. salt
½ tsp. fine ground black pepper
4 boneless chicken breast halves without skin, cut into 1-2" thin strips
1 ½ oz white wine (chardonnay or pinot grigio, good quality)
6 oz. Marsala wine (Taylor or Cribari, cheap stuff)
14 oz. of Chicken broth (Swanson etc)
16 oz. of heavy cream or half-and-half
2 tbsp. grated parmesan cheese
½ tbsp fresh basil (buy fresh or don't make this dish)
½ tbsp fresh parsley
8 oz. rigatoni pasta
Small amount of shaved parmesan cheese for topping

Steps:

  • Pound chicken to 1/4" thickness between 2 sheets of plastic wrap. Combine flour, 1/2 tsp. salt, 1/4 tsp. pepper, and basil; mix well. Heat 3 tbsp. oil and 3 tbsp. butter in a heavy non-stick skillet over medium high heat. Dredge chicken in seasoned flour mixture. Cook chicken until lightly browned on first side (about 2 minutes). Turn chicken until lightly bowned on other side, then set aside. In a large (12") high wall skillet, heat oil, mushrooms, Spanish onion, garlic puree, 1/2 tsp. salt, 1/4 tsp. pepper and brown lightly. Cube cooked chicken and add back to the skillet. Add the white wine, Marsala wine and the chicken broth. Bring to a boil then reduce heat and simmer until the liquid is reduced half. (About 15 minutes) Add cream and bring to a boil while stirring, reduce the heat to low and simmer for 5 minutes. Cook the Rigatoni al dente (not fully cooked, about 10-11 minutes) (do not rinse after draining water) Add the well-drained rigatoni to the pan. Finish with parmesan cheese, basil, parsley and 1 tbsp. butter. Stir well then serve with a nice helping of shaved parmesan cheese on top.

3 tablespoons olive oil
2 large cloves garlic, finely chopped
1 small onion, finely chopped
1 can (6-ounce) tomato paste
2 cans (28-ounce) unpeeled crushed tomatoes in puree
1 teaspoon sugar
1 tablespoon coarse salt, plus more to taste
1 teaspoon freshly ground pepper, plus more to taste
1 pound rigatoni
2 pounds sweet Italian sausage, casings removed
1 1/2 pounds whole-milk ricotta cheese
1 pound mozzarella cheese, shredded

Steps:

  • Preheat oven to 350 degrees. In a large saucepan, heat 2 tablespoons oil over medium heat. Add garlic and onion, and cook until onion is translucent, about 4 minutes. Add tomato paste, and cook, stirring, 2 minutes. Stir in tomatoes and sugar. Season with 1 tablespoon salt and 1 teaspoon pepper. Cook until slightly reduced, stirring occasionally, about 15 minutes.
  • Bring a large pot of water to a boil; add salt. Add rigatoni, and cook, stirring occasionally, 9 minutes. Drain in a colander, and rinse under cool water until cool. Set aside.
  • In a medium nonstick skillet, heat remaining 1 tablespoon olive oil over medium heat. Add sausage, and cook, stirring frequently with a wooden spoon to break up any large pieces, until browned and cooked through, about 8 minutes. Drain, and set aside.
  • In a medium bowl, combine ricotta with half of the mozzarella. Stir to combine. Season with a pinch of salt and a pinch of pepper.
  • To assemble, spread 1 cup of the sauce in the bottom of a 9-by-13-inch baking dish. Add half of the rigatoni in an even layer. Spread with 1/2 cup sauce, ricotta mixture, sausage, and 1 cup more sauce. Top with remaining rigatoni, and 1 1/2 cups sauce. Any remaining sauce may be reheated and served on the side or reserved for another use. Sprinkle the remaining mozzarella over the top to cover. Place baking dish on a baking sheet, and transfer to oven. Bake until bubbly, 35 to 40 minutes. Serve hot.

This Rigatoni al Segreto recipe was the most closely guarded secret at Gino's, one of New York City's most famous Italian restaurants. When it closed, the recipe got out. But I think the amount of butter was way too low. So here's my version.

4 tablespoons olive oil
1 cup diced onion
1 teaspoon salt, plus more to taste
2 cloves garlic, crushed (or more to taste)
1 pinch red pepper flakes
1 (28 ounce) can San Marzano (Italian) tomatoes, blended smooth
½ cup water (to rinse out can of tomatoes)
1 (8 ounce) package uncooked rigatoni pasta
½ cup fresh basil leaves, thinly sliced
4 tablespoons cold butter, cubed
1 cup grated Parmigiano-Reggiano cheese, plus more for serving

Steps:

  • Heat olive oil in saucepan over medium-high heat. Add onions, salt. Cook until no longer white and starting to turn translucent, about 5 minutes. Stir in garlic; cook about 1 minute. Add chili flakes and blended tomato sauce. Bring to a simmer; adjust heat to medium to medium-low. Simmer gently, stirring occasionally, for 45 to 60 minutes. Reduce heat to low.
  • Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until tender yet firm to the bite, about 8 minutes (5 minutes from doneness).
  • Add about 2/3 of the basil to the sauce. Stir in butter. When butter melts, add cheese in 3 increments.
  • Drain pasta; transfer to sauce. Stir until rigatoni are evenly coated with sauce. Serve sprinkled with the remaining basil and a dusting of grated cheese.
