2 teaspoons olive oil
2 large onions, roughly chopped
2 garlic cloves, crushed
1 -2 small red chile, seeded and chopped
500 g sweet potatoes, peeled and roughly chopped
500 g carrots, peeled and roughly chopped
40 ounces vegetable stock (2 British pints)

Steps:

  • Heat the oil in a large saucepan and fry the onions and garlic until soft and golden.
  • Stir in the chilies, sweet potatoes and carrots. Add stock.
  • Cover and bring to a boil. Simmer for 20 minutes or until all veggies are tender.
  • Puree the soup, in batches if necessary, then return to the pan. Season and if necessary, add a bit of water to adjust the consistency.
  • Serve with crusty bread.

2 sweet potatoes, diced
2 (14.5 ounce) cans diced stewed tomatoes with chili seasonings
1 (8 ounce) can tomato sauce
¾ cup diced sweet onion
½ cup chopped celery
½ cup water
1 tablespoon chili powder
1 teaspoon ground cumin
½ teaspoon ground cinnamon
1 pinch salt
1 pinch ground black pepper
1 pinch cayenne pepper
1 pinch garlic powder
1 pinch onion powder
½ pound ground turkey
½ pound ground beef
1 (12 ounce) can black beans, drained and rinsed
1 cup corn

Steps:

  • Place sweet potatoes, stewed tomatoes, tomato sauce, onion, celery, water, chili powder, cumin, cinnamon, salt, black pepper, cayenne pepper, garlic powder, and onion powder in a slow cooker. Cook on high, stirring occasionally, for 5 hours.
  • Heat a large skillet over medium-high heat and stir in ground turkey and ground beef. Cook and stir until meat is crumbly, evenly browned, and no longer pink, 10 to 15 minutes. Drain and discard any excess grease. Add cooked ground turkey, cooked ground beef, black beans, and corn to sweet potato mixture in the slow cooker; cook until flavors have blended, 1 to 2 more hours. Serve warm.

butter or oil (for frying)
1 onion, roughly chopped
1 red chile, finely chopped
1 teaspoon ground coriander
2 garlic cloves, crushed
750 g sweet potatoes, peeled and cut into chunks
500 ml vegetable stock
75 g gruyere cheese, grated
1 pinch paprika (optional)

Steps:

  • Melt a knob of butter in a large pan, add the onion, chilli, coriander and garlic and cook for about 8 minutes until softened. Add the sweet potato and cook for a few more minutes. Add the stock, bring to the boil then simmer for about 10 minutes until the veg is soft.
  • Mash, or blend if you want a smooth soup. Season and serve with a sprinkling of cheese and a pinch of paprika.
