ROADKILL OR CUPBOARD CLEARING CHILI
Roadkill Chili for you TRUE ROAD KILL COOKS - grind up 6 lbs.fresh road-kill. (Note: due to the condition of the road-kill, grinding may not be necessary). Just about anything acceptable (rabbit, possum, chicken, unknown..) stay away from skunks since their odoriferous nous has negative effect on the final result. I live in an area where there's not much highway traffic, and urbanization has scared off all the critters, and neighbors keep their pets indoors, THEREFORE, I HAD TO MODIFY THIS RECIPE! Otherwise known as (for the weaker stomach crowd) CUPBOARD CLEARING CHILI. Adapted from the original recipe of Ted's Original! Texas Road-Kill from "Texas Chili" Homepage.

Steps:
- Brown all meats in a large stock pot.
- Saute peppers,onions,celery,jalapenos,garlic.
- ADD everything else.
- Bring to low boil, 9 bubbles, stirring occasionally, DROP HEAT, and simmer until done and thick, 3 bubbles, about 1 hour. Thin with tomatoe juice.(Sacarmento tomatoe is mmmmmgood)
- ADD at 30 minutes to finish-Pinto Beans, black Beans, diced tomatoes,
- tomato juice.

Savory, smoky, easy-to-make chili. Sometimes I add a can of corn, too. Maybe have some sweet corn bread muffins with honey on the side. You could use black beans, pinto beans, pink beans, or small red beans in place of the kidney beans.

Steps:
- Cook bacon and onion together in a large pot over medium heat until the onion is translucent, about 5 minutes. Add ground beef, garlic and cumin to the pot; cook and stir until the beef is completely browned, 7 to 10 minutes.
- Stir kidney beans, diced tomatoes, water, chili powder, liquid smoke, salt, black pepper, and hot pepper sauce into the beef mixture; bring to a simmer and cook until thick, about 1 hour. Skim excess grease if desired.

- In a large deep skillet or Dutch oven over medium heat, cook beef until no longer pink; drain. In the same skillet, sauté onion until lightly golden. Stir in remaining ingredients except crackers; return beef to skillet. Reduce heat to low; cover and simmer for 30 minutes, stirring occasionally. Serve with crackers. Tip: Crunchy toppings can really add fun and flavor to chili and soup. Some fun and tasty choices...fish-shaped crackers, bacon bits, French fried onions, sunflower seeds and toasted nuts.

- Preheat oven to 375 degrees Fahrenheit. Line one large or two medium rimmed cookie sheets with parchment paper or foil.
- Lop off the top of the spaghetti squash and cut it in half lengthwise. With a spoon, scrape out the seeds. Brush the cut side of each half with 1 tablespoon olive oil. Dust with 1/2 teaspoon salt and 1/8 teaspoon pepper. Place cut-side down on cookie sheet(s) and bake until tender and the squash can easily be pierced with a fork, about 40 minutes. You can also microwave the spaghetti squash if you need dinner on the table faster. Here's how to cook spaghetti squash in the microwave, along with full instructions on prepping and cooking it both ways.
- While the spaghetti squash cooks, make the chili. Drizzle 1 tablespoon olive oil into a large saucepan over medium heat. Add the onions, green peppers, and oregano and cook, stirring occasionally, until tender, about 5 minutes. Add the garlic, chili powder, cumin, and cayenne and cook, stirring constantly, for one minute. Add the tomatoes and beans and stir to combine. Cook until it starts to bubble (be careful, it may splatter because it's so thick) then reduce heat to medium-low and cover. Cook, stirring occasionally, for another 10 minutes, until heated through. Set aside.
- When spaghetti squash are done cooking, flip them over. Sprinkle 1/4 cup of the cheese in the bottom of each half. Fill to the top with chili and top each with remaining cheese. Return to oven and bake until cheese is melted and bubbly, 20-25 minutes.
- Serve with assorted toppings.
