JUICY ROASTED CHICKEN
My grandmother's recipe for roasted chicken. We are German and she used to do it this way all the time. I never have had a chicken this juicy before; this little trick works and makes the people eating it go silent. It's funny. We nibble on the celery after.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place chicken in a roasting pan, and season generously inside and out with salt and pepper. Sprinkle inside and out with onion powder. Place 3 tablespoons margarine in the chicken cavity. Arrange dollops of the remaining margarine around the chicken's exterior. Cut the celery into 3 or 4 pieces, and place in the chicken cavity.
- Bake uncovered 1 hour and 15 minutes in the preheated oven, to a minimum internal temperature of 180 degrees F (82 degrees C). Remove from heat, and baste with melted margarine and drippings. Cover with aluminum foil, and allow to rest about 30 minutes before serving.

PERFECT ROAST CHICKEN
Want a roasted chicken that is juicy inside without the use of a baking bag or flour? Then this recipe is perfect. It is quick and easy to prepare. The picture shown does display a chicken that was cooked in a bag, but the chicken was also roasted with vegetables and needed the bag to immerse the vegetables in the chicken flavor. I still guarantee a juicy chicken without the use of a bag each and every time.

- Preheat oven to 350 degrees F (175 degrees C).
- Rinse and pat chicken thoroughly dry with paper towels. Mix margarine, garlic salt, black pepper, thyme, parsley, and rosemary in a bowl and rub the outside of the chicken thoroughly with the margarine mixture. Place any remaining margarine mixture into the cavity of the chicken. Place chicken into a glass baking dish.
- Bake chicken in the preheated oven until browned and the juices run clear, about 2 hours. An instant-read meat thermometer inserted into the thickest part of a thigh, not touching bone, should read at least 160 degrees F (70 degrees C).

ROASTED CHICKEN
This simple roasted chicken gets a ton of flavor from the herb rub trio of chives, tarragon and thyme - and they pair nicely with the hint of orange. Rubbing butter between the skin and breast makes for a self-basting bird: As it roasts and the butter melts, the meat becomes extra tasty. Cooking the chicken breast-side down also protects the meat, keeping it insulated and resulting in more moist and tender breasts.

- In a bowl, mix the salt, sugar, garlic, and all fresh herbs. Rub the chicken with the mixture. Lift the skin on top of the chicken, place the butter between the flesh and skin so it self-bastes as it cooks.
- Preheat oven to 425 degrees F.
- Stuff the chicken cavity chopped oranges. Place the chicken, breast side down, on a rack in a roasting pan. Roast 15 minutes, then reduce heat to 350 degrees F and continue roasting until chicken is cooked (general rule of thumb for cooking chicken is 15 minutes per pound to cook and 10 minutes to rest). Continue to baste with pan drippings through the cooking process. When cooked the juices should run clear and the internal temperature should be 165 degrees F on an instant-read thermometer. Remove chicken from the oven and place on a serving platter. Let rest for 20 minutes before serving.
ROAST CHICKEN RECIPE AT 350 DEGREES
Here is my tried and tested recipe for roasted chicken. You will need:

Steps:
- Pat dry the chicken completely
- Mix herbs like thyme and fennel leave in butter along with salt and pepper
- Sprinkle salt and pepper on the skin
- Mix crushed garlic lemon juice, butter, and herbs. Here you can add any other herbs of your choice like thyme or rosemary.
- Pull the skin with hands and rub the butter mixture between skin and meat with hands. Press fingers in the meat to help the butter and herbs mixture reach deep inside the meat.
- Rub the butter and garlic with herbs mixture all over the chicken inside the skin.
- Fill the pocket of chicken with lemon along with fennel leaves.
- Stuff garlic head inside the chicken cavities. It will maximize the flavor.
- Put the chicken in a tray.
- Drizzle olive oil generously, olive oil is healthy and the layer on skin makes it crispy.
- Put it in a preheated oven for 400 degrees for 15 minutes at first
- Slow the heat to 350 degrees and leave it in the oven for 1 to 1.5 hours or until the skin is brown and crispy
- Use a thermometer to check the temperature inside the meat. Put the temperature in the thick thigh part, and if it is 165, your chicken is ready.
- Serve it with mashed potatoes, lots of veggies, or any other side dish of your choice.
ROAST CHICKEN
Steps:
- Preheat oven to 425 degrees F.
- Wash the chicken in hot water and dry thoroughly. Season the cavity with salt and black pepper and stuff with the onion, lemon, and celery leaves. Rub the chicken lightly with softened butter and season all over with salt and pepper. Tie the drumsticks ends together and set the chicken, breast side up, in an oiled v-shaped rack or on an oiled roasting pan in the oven.
- Roast for 15 minutes at 425 degrees F, then reduce the heat to 350 degrees, baste the chicken, and roast for 15 minutes. Add the chopped onion and carrot to the pan, basting them and the chicken. Continue roasting the chicken until the juices run clear, for a total of 45 minutes plus an additional 7 minutes for each pound. (In other words, a 3 1/2 pound chicken would take a basic 45 minutes plus an additional 25 minutes, for a total 70 minutes or 1 hour and 10 minutes of cooking time.)
- Remove the chicken and spoon the fat out of the roasting pan. Into the pan, stir in the herbs and blend in the broth and, stirring constantly, boil for several minutes on the stovetop to concentrate the flavor. Correct the seasoning and strain the sauce into a warm sauceboat. Carve the chicken and serve with the warm sauce.
