Cheddar Bacon Cauliflower Casserole image

This cauliflower casserole is loaded with cheddar cheese and bacon. It's a great recipe for family dinners or holidays.

1 medium head cauliflower (cut into florets)
10 -ounce hummus (Sabra classic)
¼ teaspoon salt
¼ teaspoon ground black pepper
½ cup bacon bits
1 and ½ cups cheddar cheese (shredded)
2 tablespoons green onions (sliced)

Steps:

  • Steam cauliflower until tender, about 15 to 20 minutes.
  • Preheat oven to 375°F. Spray a 13×9 baking dish with non-stick cooking spray.
  • Stir together the cauliflower, hummus, salt, pepper, and 1 cup cheese in a large bowl.
  • Pour into your prepared 9x13-inch pan and top with remaining cheese and bacon bits. Bake for 20 - 25 minutes or until hot, bubbly, and cheese has melted.
  • Remove from the oven and allow to cool for 5 minutes. Sprinkle green onions on top and serve.
  • Store any leftovers in an airtight container in the refrigerator for 4 days.

8 slices bacon, chopped and fried crispy
3 cups shredded cheddar cheese
1 tablespoon fresh parsley
salt
2 large cauliflower heads
4 ounces cream cheese
1/4 cup sour cream
1/4 cup heavy cream
1/2 teaspoon pepper

Steps:

  • Mix bacon, 1/2 cup cheese, and parsley in small bowl. Set aside for topping.
  • Heat oven to 350 degrees. Bring 4 quarts water to boil in large pot. Add 1 tbsp salt and cauliflower, cook until tender. Drain and rinse with cold water. Transfer half to cutting board and roughly chop.
  • Melt cream cheese on low heat. Stir in heavy cream and remaining 2 1/2 cups of cheddar, cook until starts to melt.
  • Off heat stir in sour cream, cauliflower, 1/2 tsp salt and pepper. Transfer to a 2 quart baking dish, sprinkle with topping, and bake until brown and bubbly, about 15 minutes.

1 white onion, diced
4 cloves garlic, minced, or more to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Combine cauliflower, onion, and garlic in a bowl. Add olive oil, Parmesan cheese, and Cheddar cheese and stir to coat. Arrange on the prepared baking sheet.
  • Cook in the preheated oven until lightly browned, 35 to 45 minutes.

1 large head cauliflower
1 tablespoon salt, plus more to taste
ground black pepper to taste
1 (10.5 ounce) can condensed cream of mushroom soup
2 cups shredded Cheddar cheese

Steps:

  • Remove leaves and a little of the cauliflower stem so it will stay together but sit flat when upright.
  • Place cauliflower, upside-down, into a large pot; cover with water and add 1 tablespoon salt. Bring to a boil, then lower heat and simmer until cauliflower stems are tender but not falling apart, 30 to 40 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Remove from the heat and carefully remove cauliflower with a large slotted spoon. Place right-side up in a baking dish. Season with salt and pepper and spread condensed soup all over the entire head. Top with Cheddar cheese.
  • Bake in the preheated oven until hot and bubbly, 20 to 30 minutes.

1 medium cauliflower, trimmed and divided into florets
40 g butter
1 onion, finely chopped
4 slices bacon, rind removed & finely chopped
2 tablespoons flour
1 1/2 cups skim milk
1 teaspoon Dijon mustard
1 pinch nutmeg
1 1/2 cups tasty cheese, grated
salt & pepper, to taste
1/3 cup breadcrumbs

Steps:

  • Pre-heat oven to 180.C.
  • Grease a 6 cup baking dish.
  • Cook Cauliflower in boiling salted water for 5 mins or until just tender, drain well & arrange in baking dish.
  • Heat butter in a saucepan over medium heat and cook onion and half the bacon for 4 mins or until softened. Remove pan from heat, add flour and stir with a wooden spoon until combined. Return to heat & cook gently for 2 minutes.
  • Gradually add milk, stirring continuously and bring to a boil. Add mustard, nutmeg, 1 cup cheese and season with salt & pepper. Stir until cheese has melted.
  • Pour sauce over cauliflower & sprinkle with breadcrumbs and remaining cheese. Bake for 15 mins or until golden.
