Roasted Peppers Stuffed with Goat Cheese image

4 large red or yellow peppers (roasted (see below) peeled, slit open, seeded, and sliced into three inch strips)
Sea salt (fresh ground pepper)
1/4-1/2 pound mild soft goat cheese
6 basil leaves (4 leaves chopped, 2 leaves reserved or garnish)
1/4 cup pine nuts (toasted)
1/4 cup golden raisins
bread crumbs (optional)
2 tablespoons olive oil
pinch of cayenne

Steps:

  • Roast the peppers using either a barbecue grill, gas cook top or broiler in your oven. Complete tutorials here.
  • Position a rack in the upper third of oven and preheat to 475 degrees.
  • Place the peppers peeled side down on a cutting board and slightly flatten. Sprinkle with sea salt and pepper. Spread with about a tablespoon of goat cheese down the center of each pepper strip. Scatter the cut basil, pine nuts, and golden raisins on top of each pepper. Fold each pepper over to create a package (like a canoe on its side). Press down gently to flatten slightly
  • Place the peppers on a baking sheet (I prepared the peppers directly on the baking sheet). Sprinkle with breadcrumbs and drizzle with a little olive oil over each one. Sprinkle with cayenne.
  • Bake for about 10 minutes, until breadcrumbs turn golden and the goat cheese is bubbly.
  • Using a spatula, arrange the peppers on a small plate and tear the remaining basil leaves over for garnish. Drizzle with a bit more olive oil if desired.

2 each red and yellow peppers
1 (8-ounce) log goat cheese, at room temperature
1 tablespoon crushed red pepper
1 tablespoon pimenton (smoked Spanish paprika)
Kosher salt
2 tablespoons chopped chives

Steps:

  • Preheat a broiler or grill. Place the peppers on the grill and cook them until they are BLACK on the outside. Yeah that's right BURN THEM! When the peppers are black on all sides remove them from the heat and place them in an enclosed environment, either a paper bag or a bowl covered with plastic wrap. Let them sit until they are cool. This can be done a day ahead.
  • Using your fingers scrape all the black off the outside of the peppers. Remove the stem and the seeds as well. This is a messy job, accept it and move on. If needed, you can use a damp paper towel. Rinsing the peppers washes away all of the sweet pepper juices.
  • Once the peppers are clean, cut the peppers into strips that are about 1 inch wide. Place about a teaspoon of goat cheese at one end of each pepper strip. Sprinkle cheese with a pinch of the crushed red pepper, pimenton and salt. Roll up each pepper strip around the cheese and garnish with chopped chives.

4 large red or yellow bell peppers, preferably Holland
2 tablespoons good olive oil
1 tablespoon balsamic vinegar
2 cloves garlic, minced
2 teaspoon kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons drained capers
1 large ciabatta bread, halved horizontally
1 (11-ounce) garlic-and-herb or plain goat cheese (recommended: Montrachet) at room temperature
8 to 10 large basil leaves
3 thin slices red onion
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 500 degrees F.
  • Place the whole peppers on a sheet pan and place in the oven for 30 to 40 minutes, until the skins are completely wrinkled and the peppers are charred, turning them twice during roasting. Remove the pan from the oven and immediately cover it tightly with aluminum foil. Set aside for 30 minutes, or until the peppers are cool enough to handle.
  • Meanwhile, combine the olive oil, balsamic vinegar, garlic, salt, and pepper in a small bowl. Set aside.
  • Remove the stem from each pepper and cut them in quarters. Remove the peels and seeds and place the peppers in a bowl along with any juices that have collected. Discard the stems, peels, and seeds. Pour the oil and vinegar mixture over the peppers. Stir in the capers. Cover with plastic wrap and refrigerate for a few hours to allow the flavors to blend.
  • To assemble the sandwiches, spread the bottom half of the loaf with the goat cheese. Add a layer of peppers and then a layer of basil leaves. Separate the onions into rings and spread out on top. Sprinkle with salt and pepper. Cover with the top half of the ciabatta and cut into individual servings.

Sweet and smoky roasted bell peppers pair perfect with creamy and slightly tangy goat cheese. This is a spread which can also be served as nice and creamy dip. It is my favorite dip for parties or family get-togethers and leftovers are excellent spread for a cold Tuna Sandwich or Grilled Rustic Italic Bread. Why I love it so much? Well, first reason is the taste and second - gorgeous beautiful pink color. This dip stands out even in a platter full of colorful veggies for dipping. I usually make this dip over the weekend because I roast my own peppers rather than buying a jar (picky...). However, I recommend saving most of the time by using store bought peppers (those are equally good) and time to make this dip will reduce to just and just 5 minutes. Also, it stays perfect in refrigerator for up to 2-3 days.

8 tbsp Goat Cheese, at Room Temperature
1 Red Bell Pepper, Roasted
1 tsp Olive Oil
1/4 tsp Salt
1/8 tsp Red Pepper Powder
2 tbsp Butter Milk
1 tbsp Cilantro, chopped

Steps:

  • Brush Red Bell Pepper with 1/2 tsp olive oil and roast it on an open flame till skin is charred. Make sure to turn the Bell Ppper in between to avoid buring the pulp.
  • Place the roasted pepper in a bowl and cover it with cling wrap. Let it sweat for about 5-10 minutes. Peel the skin, seed and slice the peppers. Mix it with 1 tsp olive oil and set aside.
  • In a food processor, add goat cheese, bell pepper, butter milk, salt and red pepper powder. Process it till bell peppers are chopped in small pieces and white goat cheease has taken beautiful reddish pink color from red bell peppers. Mix in chopped Cilantro.
  • Serve this scrumptious Goat Cheese Dip with fresh celery sticks, sliced reddish Or your choice of fresh and grilled vegetables or meat.

4 red bell peppers, seeded roasted and peeled
2 heads roasted garlic, pulp squeezed and skin removed
8 ounces plain soft fresh goat cheese
6 tablespoons virgin olive oil
7 tablespoons chopped fresh basil
3 tablespoons dried oregano
2 tablespoons chopped fresh rosemary
kosher salt
fresh ground pepper

Steps:

  • To roast peppers:.
  • Slice peppers in half, place cut side up on pan and drizzle with 2 tbsp of olive oil, sprinkle with salt.
  • Roast in oven at 375°F until skin blisters. Remove from oven, cool and peel off skin.
  • To make dip:.
  • Place the red peppers, garlic and cheese in a food processor.
  • Pulse until smooth.
  • Add olive oil, chopped basil, oregano, rosemary, salt and pepper and pulse until well blended.
  • Place in a serving bowl; stir to make sure that the dip is homogenized.
  • Cover and refrigerate for 2 hours.

I had seen Ina Garten prepare this sandwich on one of her Barefoot Contessa episodes. It looked to die for, and when I finally had time to try it, my suspicions were confirmed. It is so flavorful and just down right yummy. She also prepared a Fresh Pea soup to pair with it, I can't wait to try that, too.

1 tablespoon balsamic vinegar
2 garlic cloves, minced

1 (11 ounce) garlic and herb goat cheese, at room temperature

2 large yellow bell peppers
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1 lemon, juice of
1 clove garlic, thinly sliced

1 large orange, peeled,sliced

Steps:

  • Heat oven to 375 degrees F (190 degrees C).
  • Arrange peppers on a foil-lined baking sheet and bake until blackened and soft, 25-30 minutes, turning once or twice.
  • Transfer to a bowl, cover with plastic wrap and let stand 10 minutes (this helps steam the peppers in their skins, and makes skin removal easier).
  • Meanwhile, make the marinade: combine oil, vinegar, lemon juice, garlic, leaves from about half the thyme, salt and pepper in a large bowl.
  • While peppers are still hot, slip off the skin and scrape out seeds; remove stems.
  • Cut each pepper into quarters.
  • Add roasted peppers to the marinade and refrigerate for 2-3 hours.
  • To serve, arrange peppers on 4 plates, garnish with olives, oranges and remaining thyme, and crumble goat cheese over and season with additional freshly ground pepper.
