ROASTED DELICATA SQUASH
You don't have to peel delicata squash to make these roasted squash slices. Serve warm as a side dish, or at room temp as a snack with a spicy aioli dipping sauce.

- Place squash halves cut side down on a cutting board. Slice into 3/8-inch slices. Transfer slices to a bowl. Drizzle with olive oil; add salt and cayenne pepper. Toss to coat squash with oil.
- Preheat oven to 450 degrees F. Line a rimmed baking sheet with parchment paper or a silicone mat.
- Arrange squash pieces in a single layer on prepared baking sheet. Place in preheated oven until bottom of slices is browned and squash is tender, 12 to 18 minutes.

Steps:
- Preheat oven to 450 degrees.
- Cut cauliflower and squash to be about the same size for even roasting.
- Toss cauliflower, onion, and squash with basting oil. Arrange in a single layer on baking sheet. Roast on center rack 30 min, or until tender.
- Add spinach to large bowl; add hot cauliflower-squash mixture. Toss to wilt spinach. Season to taste with salt and pepper.
- To prepare ahead: Prepare through end of step 3. Cool slightly, transfer to separate container and refrigerate. When ready to finish dish, preheat oven to 350 degrees. Place on baking sheet and reheat 15-20 minute Continue with step 4.

GOCHUJANG ROASTED DELICATA SQUASH
Gochujang is a delightful Korean hot pepper paste. It's thicker, sweeter, and more umami-packed than something like sriracha or sambal oelek (which won't work as substitutes here). You can use any winter squash you like. Delicata is nice because two of them are the perfect size to fill a half sheet pan and they don't need to be peeled, but a medium butternut squash or equivalent amount of Kabocha, acorn, carnival or similar squash will work here. If your winter basil is looking too sad, you can top it with thinly sliced cilantro or scallions instead.

- Preheat oven to 425°. Line a baking sheet with aluminum foil (optional, but nice for cleanup). In a small bowl, whisk together the oil, gochujang, soy sauce and sesame oil until smooth. Place the sliced squash in a large mixing bowl and toss with the gochujang mixture until evenly coated.
- Place the squash in an even layer on the baking sheet and roast until tender and browning at the edges.
- Transfer to a serving dish and top with basil.

- Cover the quinoa with several inches of cool water and soak 1 hour. After an hour, drain the quinoa through a fine mesh strainer and rinse it well to remove any bitter coating. Place the drained quinoa in a medium saucepan with the 1 1/2 cups water and 1/2 teaspoon salt. Bring to a simmer, then reduce the heat to very low, cover, and let steam until tender and all the water is absorbed, about 15 minutes. Let stand 10 minutes, then fluff with a fork.
- In a small, dry skillet, toast the coriander, cumin, and black pepper over a medium flame until they smell fragrant, 1-2 minutes. Let cool, then grind finely in a spice grinder or mortar and pestle.
- Omit the cauliflower and the spicy chile. Cut 3-4 mild poblanos, halved and seeded, crosswise into wide strips, adding them along with the turmeric and spices. After you've added the squash, simmer the curry until the chiles are cooked enough for your liking but still somewhat firm. The chickpeas are optional.

- Preheat the oven to 400 degrees F (205 degrees C). Position the oven racks to the upper third and lower third positions.
- Line 2 large baking sheet pans with parchment paper or silicone mats. (I used one of my full-sized, 15″x21″ pans to give the cauliflower room to roast properly. Set pans aside.
- Rinse the cauliflower. Cut it into smaller florets (video tutorial). Add the florets into a large bowl and set aside.
- Rinse the delicata squash. Slice off the ends of the squash. Then, slice it in half, lengthwise, so that you have 2 long halves. Using a spoon, scoop out the seeds and strings. Slice the squash halves into 1/3-inch thick half-moon slices. Add them to a medium bowl.

- Prepare the squash by peeling it (not necessary with delicata, but necessary for all others), removing the seeds, and slicing it or cutting it into 1/2-inch cubes. Cut the cauliflower into medium-sized florets. Place squash and cauliflower into the baking dish, mist them with canola oil, and sprinkle with freshly-ground black pepper. Put into the oven.
