ROASTED CRANBERRY SAUCE WITH ALMOND BRITTLE

Steps:
- Position racks in the upper and lower thirds of the oven; preheat to 425 degrees F. Toss the cranberries with the sugar, wine, olive oil, 1 tablespoon rosemary and 1/2 teaspoon salt in a 9-by-13-inch baking dish. Bake on the lower oven rack, breaking up the berries with a spoon halfway through, until bubbling, 20 to 30 minutes. Let cool 10 minutes. Transfer to a bowl, cover and refrigerate until chilled, at least 2 hours.
- Meanwhile, coat a rimmed baking sheet with cooking spray. Toss the almonds with the maple syrup, remaining 1 teaspoon rosemary and 1/8 teaspoon salt in a small bowl until coated. Spread on the prepared baking sheet and bake on the upper oven rack until golden brown and bubbling, 10 to 12 minutes. Let cool until hardened, about 30 minutes. Finely chop the brittle and sprinkle on the cranberry sauce just before serving.

- Preheat the oven to 350 degrees F.
- Combine the cranberries, sugar, cinnamon, and nutmeg in a small baking dish and cover. Bake for about 55 minutes. Remove the cover and stir to melt any un-dissolved sugar. Return the dish to the oven and bake for about 5 to 10 more minutes, or until the cranberries are soft and surrounded by a syrupy sauce. Remove the dish from the oven and immediately stir in the bourbon, to taste. Let the dish cool to room temperature, then chill for at least hour before serving. The sauce will keep for several weeks in the refrigerator.

- Preheat oven to 450°F Line a baking sheet with parchment paper.
- Julienne orange peel into very thin strips, about 1½" long. Add cranberries, sugar, olive oil, salt, cardamom, cloves, cinnamon and jalapeno. Spread on prepared baking sheet.
- Roast in preheated oven until cranberries burst and release juices, about 15 minute.
- Move cranberries to a bowl, removing and discarding cardamom, cloves and cinnamon sticks. Add 1 tbsp of juice from orange, and 1½ tbsp port. Stir well and allow to sit for at least 1 hour for flavors to combine.

- For cranberries:
- Preheat oven to 425°F. Mix first 7 ingredients on heavy rimmed baking sheet. Roast until edges begin to bubble, about 15 minutes. Remove from oven; maintain oven temperature. Bring wine mixture to boil in small saucepan. Stir into cranberry mixture. Roast until juices bubble and cranberries shrivel, stirring occasionally, 10 to 15 minutes longer. Transfer to medium bowl; cover and chill until cold, about 2 hours. DO AHEAD: Can be made 3 days ahead. Keep chilled.
- For herbed candied walnuts:
- Preheat oven to 425°F. Line rimmed baking sheet with parchment. Stir sugar and wine in small saucepan over medium heat until syrupy, about 3 minutes. Stir in walnuts and herbs. Transfer mixture to sheet, spreading out and separating nuts. Roast until nuts are brown, stirring occasionally, 8 to 10 minutes. Cool. Break up any clumps of nuts. DO AHEAD: Can be made 1 day ahead. Store airtight at room temperature.
- Add nuts to cranberry mixture.

- Preheat oven to 400°F.
- Toss shallots with oil and minced fresh thyme on small rimmed baking sheet. Sprinkle with salt and pepper.
- Bake until golden about 25 minutes (mine went about 30-40 minutes - just watch).
- Drizzle one tablespoon vinegar over shallots toss to coat. Continue roasting until shallots caramelize, stirring occasionally, about 10 minutes. Remove from oven.
- Bring red wine, port, brown sugar, remaining four tablespoons of vinegar and granulated sugar to boil in heavy large saucepan over medium high heat, stirring until sugar dissolves.
- Add cranberries, cook until berries pop, stirring occasionally, about 8 minutes.
- Mix in parsley and shallots.
- Transfer to bowl or casserole dish. Cover and chill overnight.
- Serve cold or at room temperature.
- **This recipe can be made up to a week in advance if kept refrigerated.**.

- Place onion soup mix in the bottom of a slow cooker. Place roast in the slow cooker, and top with cranberry sauce.
- Cover, and cook 8 hours on Low.

- Combine the flour, garlic, salt and pepper; rub over the roast. In a Dutch oven, brown roast in oil. Add the broth, onion, cinnamon and cloves. Cover and simmer for 2-1/2 hours or until the meat is tender. , Meanwhile, combine the cranberries, orange and sugar in a saucepan.
