CURRY ROASTED SWEET POTATOES



Curry roasted sweet potatoes image

Roasted sweet potatoes flavored with curry spices and roasted until soft, sweet and slighly caramelized is a delicious and easy side dish recipe.

4 sweet potatoes (peeled and cubed )
2 tbsp oil
1 tbsp Garam Masala
1 tsp cinnamon
1 tsp turmeric
1-2 tsp salt

Steps:

  • Preheat the oven to 200°C/400°F.
  • Place the cubed sweet potatoes in a large mixing bowl.
  • Pour over the oil and spices. Transfer to a large sheetpan.
  • Place in the oven and roast for 30-45 minutes, turning half way, until the sweet potatoes are soft and starting to caramelize.
  • Remove from the oven and serve.

Warm spices mixed with sweet potato rounds just makes the perfect E side dish!

Yield 1 medium sweet potato

Number Of Ingredients 5

1 medium sweet potato, cut into rounds (peel if desired)
2 teaspoons parmesan cheese
1 teaspoon ground mustard
1 teaspoon curry powder
pinch of salt and pepper to taste

Steps:

  • Pre-heat oven to 425 degrees.
  • Place sweet potato rounds on baking sheet lined with parchment paper.
  • Lightly spritz the potatoes with olive oil spray.
  • Mix the spices together and sprinkle on both sides of potatoes.
  • Bake for 10 minutes, turn over each potato round and bake for another 5-10 minutes, depending on how crispy you prefer the edges.
